A quick and easy salad. So easy it really isn't a recipe. I make this for lunch often. If I could afford to eat shrimp everyday, I might eat this salad everyday. It is also South Beach Diet friendly.

6 ounces cooked shrimp (I use the pre-cooked kind)
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 1/2 teaspoons Splenda sugar substitute or 1 1/2 teaspoons sugar
2 tablespoons extra virgin olive oil
4 cups lettuce (I use red leaf)
1 cup of your favorite salad vegetables, I use celery, cauliflower and a few slices of red onion

Steps:

  • In a large bowl whisk together red wine vinegar , Dijon mustard and Splenda.
  • Then continue to whisk while adding olive oil until dressing is thoroughly mixed.
  • Add lettuce and vegetables of your choice. Toss to coat.
  • Top with cooked shrimp and you're ready to eat.

1 tablespoon vegetable oil
2 garlic cloves, crushed
1 teaspoon ginger, shredded
4 ounces of shrimp
1 tablespoon dijon mustard
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon fresh oregano leaves
salt
2 ounces of salad mix
½ red onion, sliced
½ avocado, sliced
5 cherry tomatoes, halved

Steps:

  • Heat the vegetable oil in a skillet over low heat. Add the garlic, ginger, and shrimp and cook for 4-5 minutes. Set aside.
  • Add the Dijon mustard, olive oil, lemon juice, fresh oregano and some salt to a small bowl. Mix them.
  • Add the lettuce and arugula to a medium-sized bowl and mix them together with the red onion, avocado, cherry tomatoes, shrimp and Dijon mustard mixture.

Canola oil, for brushing
Kosher salt
2 teaspoons coarsely ground black pepper
8 ounces goat cheese, such as Bonne Bouche
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped chives
1 tablespoon finely chopped fresh tarragon
1 teaspoon dried lavender or a mix of fresh and dried
Freshly ground black pepper
1/4 cup mild-variety honey, such as Hamptons Honey Company
3 tablespoons champagne vinegar
2 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper

Steps:

  • For the filet mignon: Remove the filet from the refrigerator 30 minutes before grilling. Heat a charcoal or gas grill to high for direct grilling.
  • For the fine herb goat cheese: Mash together the cheese, parsley, chives, tarragon, lavender and black pepper in a small bowl.
  • For the vinaigrette: Whisk together the honey, vinegar, mustard and salt and pepper to taste in a bowl until combined. Slowly whisk in the olive oil until emulsified.
  • Brush the filet mignon with the canola oil and sprinkle with salt. Press the pepper onto the entire surface.
  • Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 6 minutes per side. Remove from the grill and let rest on a cutting board for 5 minutes before thinly slicing
  • Fill the lettuce leaves with a few thin slices of the filet, a small dollop of the goat cheese and a drizzle of the vinaigrette.

½ onion, chopped
1 tablespoon minced garlic
12 ounces raw shrimp, peeled and deveined
2 medium zucchini, chopped

1 (8 ounce) can bamboo shoots, chopped
2 tablespoons soy sauce
2 teaspoons minced fresh ginger root
¼ cup soy sauce
1 teaspoon Chinese chili sauce

Steps:

  • Clean lettuce and peel off leaves to use as "cups." Set aside.

1 tsp garlic paste (or 1 garlic cloves finely minced)
a few dashes of hot sauce
1 head Boston or Bibb lettuce

Steps:

  • Cut the shrimp into smaller pieces and put them in a bowl. Add the mayo, dijon mustard, lemon juice, chives, fresh dill, minced celery, Old Bay seasoning, garlic and hot sauce. Stir until combined.
  • Place the shrimp salad in the fridge for about an hour. Once ready to serve separate the lettuce leaves and put some of the shrimp salad into each lettuce wrap.
