The Dijon mustard provides a slight tang that really kicks these potatoes to the next level! These are a family favorite at our house.

2 tablespoons olive oil
1 tablespoon Dijon mustard
1 clove garlic, minced
¼ teaspoon thyme
¼ teaspoon rosemary
salt and ground black pepper to taste
5 red potatoes, cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  • Stir olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.
  • Roast in preheated oven, turning occasionally, until tender in the middle, 40 to 45 minutes.

1/2 cup dijon-style mustard (such as Grey Poupon)
3 tablespoons olive oil
1 clove garlic, minced (or more to taste)
1 teaspoon italian seasoning
8 medium potatoes, cut into chunks (about 3 pounds)

Steps:

  • Mix first 4 ingredients in a small bowl.
  • Lightly grease 13 x 9 pan or shallow baking sheet.
  • Toss potatoes with mixture.
  • Bake at 425 for about 40 minutes, or until tender, stirring occasionally.

Grilled Mushroom Potato Salad with Dijon Mustard Vinaigrette image

4 large shiitake mushrooms
2 large portobello mushroom, stems removed
1 cup olive oil, divided
Salt and freshly ground pepper
8 large red potatoes, cut into 1-inch cubes, cooked
1 large red onion, finely sliced
2 red peppers, julienned
1/2 cup white wine vinegar
2 tablespoons Dijon mustard
2 cloves garlic, finely chopped
1 tablespoon finely chopped fresh thyme
1/4 cup coarsely chopped fresh flat leaf parsley

Steps:

  • Preheat grill. Brush the mushrooms with 1/4 cup of the olive oil and season with salt and pepper to taste. Grill on both sides until golden brown and cooked through, about 10 minutes. Remove the mushrooms and slice thinly. Place the potatoes in a large bowl and add the mushrooms, onions and red pepper. Whisk together the vinegar, mustard and garlic in a medium bowl until combined. Slowly add the remaining 3/4 cup of olive oil and season with salt and pepper. Pour the vinaigrette over the potato mixture and mix gently to combine. Add the thyme and parsley and season with salt and pepper to taste. Serve at room temperature.

1 medium onion
1 small carrot
250 g mushrooms
1/2 cup vegetable stock
1 tablespoon dark soy sauce
1 tablespoon Dijon mustard
1 tablespoon cornstarch
fresh ground black pepper
4 baked potatoes

Steps:

  • Chop the onion, peel and grate the carrot and slice the mushrooms, halving them across the other way first if they are large.
  • Saute the vegetables in the water or stock, in a large frying pan, until most of the liquid is gone and the vegetables are soft.
  • Mix the remaining ingredients together in a bowl, adding a bit of water if you wish (makes a thinner sauce) and add to the vegetables in the pan. Mix well and cook, stirring, over low heat for about a minute until thickened.
  • Pour over hot, split baked potatoes.
  • Serve with a crisp green salad on the side.

1 pound yukon gold potatoes
Salt
1/2 cup milk
2 tablespoons unsalted butter
Pinch ground nutmeg
1 tablespoon whole grain Dijon mustard
Freshly ground black pepper

Steps:

  • Fill a large saucepan about halfway, with warm water. Bring to a simmer. Peel and slice potatoes, and add them to the simmering water. Add a few pinches of salt, increase the heat, and bring to a boil. Check the potatoes with a knife. If the knife has some resistance, continue simmering the potatoes until the knife comfortably slides through the potatoes. When the potatoes have cooked through about 15 minutes, drain them in a large colander. Add them back to the saucepan. To the saucepan, add the milk and butter, followed by a the nutmeg. Mash potatoes until smooth. Stir in Dijon mustard. Season with more salt and pepper, to taste.
