DIJON CREAM CHEESE HORS D'OEUVRES WITH DILL AND CAPERS

- 1. Soften cream cheese in a bowl for approximately 15 seconds in the microwave. 2. Mix in Dijon mustard, pepper, sea salt, and dill. Blend well. 3. Using a pastry bag, make spirals of the cheese mixture on the rice crackers. A plastic sandwich bag with a small corner cut off works just as well. 4. Top each cracker with approximately 1/8 tsp of capers, pressing gently into the cheese.

Steps:
- Trim crust and cut bread into 1-inch cubes.
- Melt cheeses and butter in top of double boiler. Remove from heat, cool slightly, and add the egg whites.
- With a fork, dip each bread cube in cheese mixture until well coated. Place on baking sheet, chill overnight or freeze.
- Bake at 350 degrees Fahrenheit for 12-15 minutes until light brown and puffed.
- Serve hot.
CUCUMBER HORS D'OEUVRES
I always get requests for this recipe. It's easy, fast, and people can't figure out the seasonings (ha). Got it from a relative, who got it from a friend, who got it from . . .. Enough for 60 - if you use 2 cucumbers. You'll have extra of the cream cheese mixture.

- Mix salad dressing and cream cheese.
- Spread onto bread.
- Peel and slice cucumber (@1/8inch thick).
- If you want, leave strips of green on the cucumber (looks nice) Place 1 slice of cucumber onto bread.
- Sprinkle with Dill.
