STRAWBERRY-LEMON PIE
This pie combines sweet strawberries with a hint of lemon... a fresh, summery combination sure to please everyone.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch pie pan.
- Mix flour, sugar, and salt together in a bowl. Add oil and milk. Stir until a crumbly mixture forms. Press evenly into the prepared pan, finishing with a plain rim or edge.
- Combine milk and gelatin in a saucepan. Stir together over low heat, gradually stirring in sugar, until completely dissolved. Add lemon zest and juice. Remove from heat and cool, 15 to 20 minutes.
- Meanwhile, whip cream in a bowl with an electric mixer at medium speed until stiff peaks form; fold into the cooled gelatin mixture. Spoon into the pie crust and cover with strawberries.
- Bake in the preheated oven until set, 30 to 40 minutes. Remove from the oven and let cool to room temperature, 20 to 30 minutes, before chilling until firm, 2 to 3 hours. Dust lightly with powdered sugar and garnish with mint.

Steps:
- Cook soda and cornstarch to boiling.
- Remove from heat.
- Add jello and stir to dissolve.
- Add strawberries to mixture and stir until all the strawberries are coated.
- Fill pie shell and pour remaining juice over pie.
- Refrigerate until pie is set.

STRAWBERRY CREAM PIE TO DIE FOR
I have been baking this pie since my daughters were very small. They are now 40 and 42. So as you can see, I have been making this pie for a long time. It is always the one they request when we have BBQs in the summertime. I even make it for them in the winter when and if I can find fresh strawberries. I think you will like it also. My grand-daughter said I should name it 'To Die For Strawberry Cream Pie.'

- Preheat oven to 375º Fahrenheit. Grease a pie pan using coconut oil spray.
- Place almond flour, sweetener, baking soda, and sea salt in a food processor. Pulse the processor once or twice to mix.
- Add the butter and vanilla extract to the food processor. Process until the mixture forms a dough.
- Press the dough into the prepared pan. Bake in the preheated oven for 8-10 minutes or until the crust starts to brown. Allow crust to cool completely before adding the filling. (After cooling on the counter for 5-10 minutes, I put it in the refridgerator, uncovered, while I make the pie filling.)
- Add 1/4 cup cold water to a small saucepan. Sprinkle the powdered gelatin over the water and allow to "bloom" for 5 minutes.
- While the gelatin is "blooming", place defrosted strawberries and lemon juice in a blender. Cover blender, then puree the berries. Leave berries in the blender and set aside.
- Once the gelatin has bloomed, add the sweetener to the saucepan. Heat the mixture gently while stirring frequently until gelatin and sweetener has dissolved. While blender is going at its slowest setting, stream the gelatin mixture into the strawberries through the small opening in the blender lid.
- Transfer strawberry mixture to a large mixing bowl. Refrigerate for a few minutes while whipping the cream.
- In a medium mixing bowl, whip the heavy whipping cream to form soft peaks.
- Spoon about 1/3rd of the whipped cream into the strawberry mixture and fold in to lighten.
- Fold in the remaining whipped cream.
- Transfer mixture to chilled pie crust. Cover the pie and refrigerate for at least 5 hours before enjoying.

This is my most favorite pie recipe. We used to pick strawberries in Florida when I was a kid then come home and make at least 2 strawberry pies (which didn't last long needless to say).It is very light with lots of strawberries!

- In a saucepan, combine sugar, cornstarch, and 7-Up; cook until thick.
- Add strawberry jello; blend till smooth.
- Cool.
- Place slice strawberries into pie shell.
- Pour jello mixture over strawberries.

- *I have used diet 7-up to reduce the sugar content of the pie though I've not tried sugar-free jello.

- Mix together dry ingredients in a 6 cup microwave dish or pitcher.
- Add water slowly.
- Add half the berries.
