Finally got to try this...it was deeelish, but then again, I've never had "real" eggnog. Mom always makes boiled custard for Christmas and I could literally bathe in that stuff. I love that custard stuff so much I request it year-round. Occasionally, I get some. This is great and I hope other diabetics will give it a try.

1 teaspoon vanilla
1 (1 1/2 ounce) box sugar-free instant vanilla pudding mix
3 1/4 tablespoons Splenda sugar substitute
1/4 teaspoon nutmeg

Steps:

  • In a large bowl, combine vanilla and milk.
  • In another bowl, combine the dry pudding mix, sweetener, and nutmeg.
  • Whisk the dry mix into the milk mixture until smooth. Refrigerate until serving.

1/4 cup butter
3/4 cup sugar
2 large eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon eggnog flavoring or 1 teaspoon vanilla
1 1/4 cups eggnog or 1 1/4 cups half-and-half
1/2 cup sugar
1/2 cup unbleached all-purpose flour
1/2 teaspoon nutmeg
1/8 teaspoon eggnog, flavor (optional)
3 tablespoons butter, melted

Steps:

  • Preheat the oven to 425°F Line a muffin tin with 12 paper or silicone muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins nicely.
  • In a medium-sized mixing bowl, cream together the butter and sugar till smooth. Add the eggs, beating for several minutes and scraping the bowl, till the mixture is smooth and light colored. Beat in the baking powder, nutmeg, salt, and eggnog flavor or vanilla.
  • Stir the flour into the butter mixture alternately with the eggnog or half and half, beginning and ending with the flour and making sure everything is thoroughly combined. Spoon the batter evenly into the prepared muffin cups.
  • Stir together all of the topping ingredients JUST till crumbly. Stir gently, and don't overmix; you don't want to turn this crumbly topping into a solid mass. Sprinkle the topping over the muffins.
  • Bake the muffins for 20 minutes, or until they're a pale golden brown. Remove them from the oven, and serve warm, or at room temperature.

2 cups skim milk
2 tablespoons cornstarch
12 packets Equal sugar substitute
2 eggs, beaten
2 teaspoons vanilla
1/4 teaspoon ground cinnamon
2 cups skim milk, chilled
1/8 teaspoon ground nutmeg

Steps:

  • Mix 2 cups milk, cornstarch, and Equal in a small saucepan; heat to boiling.
  • Boil for 1 minute, stirring constantly.
  • Mix about half of the milk mixture into eggs; return egg mixture to remaining milk in saucepan.
  • Cook over low heat until slightly thickened, stirring constantly.
  • Remove from heat; stir in vanilla and cinnamon.
  • Cool to room temperature; refrigerate until chilled.
  • Stir 2 cups chilled milk into custard mixture; serve in small glasses.
  • Sprinkle with nutmeg.
  • Cook time does not include chill time.
  • Makes 8 4oz.

6 large eggs, plus
2 egg yolks
10 tablespoons sugar
1/4 teaspoon salt
4 cups whole milk
1/2 cup dark rum or 1/2 cup spiced rum (my favorite)
1 tablespoon vanilla extract
1/2 teaspoon grated nutmeg, plus extra for garnish
1/2 cup heavy cream, whipped to soft peaks (after chilled)

Steps:

  • Whisk eggs, yolks, sugar, and salt in heavy sauce pan (off heat).
  • Stir in milk, 1/2 cup at a time, blending well after each addition.
  • Heat slowly over lowest possible heat until custard registers 160 degrees on instant read thermometer, thickens, and coats back of spoon.
  • 25-30 minutes.
  • Pour custard through sieve into a large bowl.
  • stir in liquor, vanilla, grated nutmeg.
  • cover with plastic and refrigerate until well chilled.
  • Just before serving whip cream in medium bowl to very soft peaks and gently fold into custard mixture until incorporated.
  • Serve in chilled cups and garnish with nutmeg.
