Swap your regular tea or coffee for this delicious Japanese-style green matcha and vanilla tea. It's simple to make at home and takes just five minutes

½ tsp matcha powder
seeds from half a vanilla pod

Steps:

  • Boil the kettle then pour 100ml of the water into a measuring jug. Pour half the hot water into a small bowl, to warm it, then add the matcha powder and vanilla seeds to the rest of the water in the jug.
  • Whisk the mixture with a bamboo match whisk or mini electric whisk until it's smooth, lump-free and slightly bubbly. Discard the water in the warmed tea bowl, then pour in the prepared matcha tea.

Here's what you need: egg white, granulated sugar, almond flour, powdered sugar, matcha, cream cheese, powdered sugar, milk

1 egg white
¼ cup granulated sugar
¼ cup almond flour
⅓ cup powdered sugar
1 teaspoon matcha
¼ cup cream cheese, room temperature
½ cup powdered sugar
1 teaspoon milk

Steps:

  • In a medium mixing bowl, beat the egg whites with an electric hand mixer on medium speed until soft peaks form. Add ½ of the granulated sugar and with mixer on high, continue to beat until egg whites are stiff peaks. Repeat with last ½ of sugar, beating until whites are shiny and fluffy.
  • Using a fine mesh strainer, sieve the almond flour, powdered sugar, and matcha into the bowl with the egg whites. Discard any large pieces that remain in the strainer. Fold until just combined
  • Preheat oven to 300˚F (150˚C).
  • Fill a piping bag with the macaron mixture and pipe 1½-inch (4 cm) dollops onto a parchment paper-lined baking sheet. Let the cookies rest until they are no longer wet to the touch and a skin forms on top (can be up to 1 hour).
  • When the cookies are dry to the touch, bake at 300˚F (150˚C) for 15 minutes.
  • While resting, make the filling by mixing the cream cheese, powdered sugar and milk in a bowl until smooth. Transfer to a piping bag and set aside until ready to fill.
  • Let rest for 10 minutes, or until cool before filling. Pipe the cream cheese mixture on the macron and sandwich with another one.
  • Enjoy!

This is my new love. I tried a matcha latte at Teaopia tea shop and fell in love with the detox & energy of this Japanese tea. I love that the caffeine in matcha releases slowly into the blood not like caffeine in coffee so you don't get jittery unless you drink a ton without eating anything else, then maybe. Modified from a recipe found on http://www.domatcha.com

Number Of Ingredients 11

3 cups water
1 cup blanched almond
4 cardamom pods
1/4 teaspoon peppercorn
1/2 cinnamon stick
6 whole cloves
1/4 inch fresh ginger, peeled slice
1/3 teaspoon fennel seed
2 teaspoons green tea powder (Must be matcha but F. didn't recognise, I use Matcha Superior from Teaopia)
1 1/2 teaspoons alcohol free vanilla (I buy ours from the health food shop)
1/8 cup local raw honey, to taste

Steps:

  • Blend water and almonds until very smooth.
  • Strain through a fine sieve.
  • Bring almond milk and spices to a boil.
  • Boil for 5 minutes with the lid off, then simmer for 10 minutes covered.
  • Strain into a blender (I use glass). Let the mixture cool down for a few minutes, then add the matcha powder & vanilla and blend. Add raw honey to taste. I probably use more than an 1/8 cup but do it to taste.
  • Enjoy hot or cold. (I prefer it hot though).
