CHOCOLATE DIABETIC FUDGE
I found this recipe for a good fudge without many calories and less sugar to make it for my husband, who is diabetic, and it is very good. Enjoy it.

Steps:
- Combine milk and cocoa in saucepan. Beat well. Add margarine, sugar and salt. Bring to boil.
- Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes.
- Divide mixture into 32 balls and roll in remaining cracker crumbs and chill.
- Nutritional Information: 47 Calories (kcal); 2g Total Fat; (36% calories from fat); 1g Protein; 6g Carbohydrate; 2mg Cholesterol; 65mg Sodium.

DIABETIC CREAM CHEESE FUDGE
Everyone dieting deserves a treat every now and then. But what the rest of the time? Should you be eating cardboard? Nooo says the Redneck! These little bites are great for anyone from the sick to the well, from the low-carb nuts to those who could eat their weight in chocolate and never gain an ounce (btw..we hate you people!). These must be refrigerated overnight (reflected in the passive cook time).

- Beat the cream cheese, Splenda, and vanilla until smooth. Stir in nuts and pour into a prepared 8x8 square pan.
- Cover and refrigerate overnight.
- Cut into small squares and store in an airtight container in the refrigerator.

- Line an 8-inch square baking pan with aluminum foil.
- Place chocolate in a food processor; pulse until finely chopped.
- Pour evaporated milk into a microwave-safe bowl. Stir in sweetener, 1/2 cup at a time, until dissolved. Add vanilla extract. Stir in chopped chocolate.
- Heat mixture in the microwave in 30-second intervals, stirring after each interval, until chocolate is melted and smooth, about 2 minutes total. Stir in walnuts.
- Spread chocolate mixture in the prepared pan. Refrigerate until firm, about 2 hours. Cut into 1 1/2-inch squares.

FABULOUS SUGAR FREE FUDGE
My husband is diabetic and I am pre-diabetic so we are trying to cut all of the sugar out of our diets. I have been trying various sugar free fudge recipes for years and none of them have come close to the real thing. I thought "real" homemade fudge would be something I'd have to give up, until I took some time experimenting and...

Steps:
- 1. Combine the water and dry milk in a medium saucepan. Stir til smooth. Add the Splenda and butter and heat on stove on medium heat stirring constantly. Stir til butter is melted and mixture is warm but not boiling. Remove from heat.
- 2. Stir chocolate chips and vanilla until chips are melted and mixture is smooth and glossy. (1 1/2 Cups of semi-sweet chocolate chips can be substituted if you can't find the Hershey's sugar free ones.)
- 3. Fold in nuts. Pour onto wax paper and refrigerate until firm. (1-2 hours)

- Melt chocolate with cinnamon and sweetener; add milk and water slowly.
- Add gelatin.

- Prepare a square baking pan for nonstick. I suggest using parchment paper that overlaps the pan itself. That will make it easier for you to lift the fudge out of the pan to serve.
- Melt the chocolate using a microwave safe bowl. Start by melting the chocolate on high, stopping to stir every thirty seconds and stirring. After the first minute microwave in ten second increments and stirring until melted.
- Alternatively, you can use a double boiler to melt the chocolate on the stove. Simply place the chocolate chips in the top of the double boiler over barely simmering water. This method keeps the chocolate away from direct heat, which allows it to melt at a low enough temperature to prevent scorching and separating. Do not forget to stir or whisk the melting chocolate.
- Remove the chocolate from the heat and stir in the remaining ingredients. Then evenly distribute the fudge into your prepped pan. Feel free to add optional nuts. Also, using a rubber spatula on its backside is an easy way to press the fudge into the pan.
