EGGNOG FOR DIABETICS
Finally got to try this...it was deeelish, but then again, I've never had "real" eggnog. Mom always makes boiled custard for Christmas and I could literally bathe in that stuff. I love that custard stuff so much I request it year-round. Occasionally, I get some. This is great and I hope other diabetics will give it a try.

Steps:
- In a large bowl, combine vanilla and milk.
- In another bowl, combine the dry pudding mix, sweetener, and nutmeg.
- Whisk the dry mix into the milk mixture until smooth. Refrigerate until serving.
- **NOTE: Diabetic exchange is for one cup: 1 skim milk and 1/2 starch; 17 g. carbs.

DIABETIC EGGNOG KNOCKOFF MUFFINS
It's possible to get low fat eggnog but I have yet to see it in sugar free. I came up with these because I love the taste of eggnog.

Steps:
- In a large bowl, combine flour, baking power, Splenda, nutmeg and cinnamon.
- In a medium bowl, whisk Eggbeaters, milk, oil and rum.
- Pour liquid ingredients over dry, stir just until mixed. Spoon batter evenly into 12 greased, 2 1/2 inch muffin cups.
- In a small container, combine Splenda, nutmeg and cinnamon. Sprinkle evenly over tops of muffins. Bake in a 400F oven for 15-18 minutes or until tester comes out clean.

EGGNOG MUFFINS WITH NUTMEG-STREUSEL TOPPING
My mom passed on this recipe clipped from Midwest Living that she received from a friend. The original recipe recommends serving it warm, but we enjoyed them both warm and at room temperature.

Steps:
- Prepare a muffin tin with paper liners or grease each cup.
- Mix together flour, sugar, baking powder, and nutmeg in one bowl.
- In a second bowl, mix the eggs, eggnog, melted butter, vanilla, and rum extract.
- Pour the wet ingredients into the dry ingredients. Stir until combined and dough is just moistened.
- Fill each cup 2/3 of the way full with the muffin batter.
- Preheat oven to 375°F.
- Prepare streusel topping by combining the flour, sugar, and nutmeg. Cut in the butter until coarse crumbs are formed.
- Sprinkle each cup with streusel.
- Bake 18-20 minutes, or until a pick comes out clean.

EGGNOG MUFFINS
These make a great Christmas or New Years muffin, about the only time you find eggnog in the stores. I put chopped walnuts in mine and my DH said very good.

- Preheat oven to 400*F.
- Makes 12 muffins Combine flour, sugar, baking powder, salt and nutmeg in a large bowl.
- (mix nuts or raisins in) In a smaller bowl, combine remaining ingredients.
- Add liquid to dry ingredients and mix until just moistened.
- Pour batter in lined or greased muffin cups and bake about 15 minutes until toothpick inserted comes out clean.

- Mix 2 cups milk, cornstarch, and Equal in a small saucepan; heat to boiling.
- Boil for 1 minute, stirring constantly.
- Mix about half of the milk mixture into eggs; return egg mixture to remaining milk in saucepan.
- Cook over low heat until slightly thickened, stirring constantly.
- Remove from heat; stir in vanilla and cinnamon.
- Cool to room temperature; refrigerate until chilled.
- Stir 2 cups chilled milk into custard mixture; serve in small glasses.
- Sprinkle with nutmeg.
- Cook time does not include chill time.
- Makes 8 4oz.
