HEALTHY APPLESAUCE PANCAKES WITH NO SUGAR ADDED

Healthy Applesauce Pancakes With No Sugar Added image

These pancakes freeze very well! Make them small for toddlers to hold or larger for the rest of the family. I like to use flavored (blueberry, strawberry, etc) applesauce without any added sugar. If you use a flavored applesauce, you may omit the vanilla flavoring. The flavors are great so that there is no need for syrup! This recipe is adapted from www.wholesometoddlerfood.com

APPLESAUCE PANCAKES

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 16

3 cups cake flour
3 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
2 1/2 cups milk, plus more if needed
2 cups Applesauce, recipe follows
1 tablespoon vanilla
1/4 teaspoon cinnamon
2 eggs
Butter, for cooking and serving
Maple syrup, warmed, for serving
6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • In a large bowl, combine the cake flour, sugar, baking powder and salt. Stir together and set aside.
  • In a separate bowl, whisk together the milk, Applesauce, vanilla, cinnamon and eggs. Slowly drizzle the wet ingredients into the dry ingredients, stirring gently with a spoon as you go. Once combined, if the mixture needs more moisture, splash in a little more milk. The batter should be pourable.
  • Heat a large skillet or griddle over medium-low to low heat. Smear a little bit of butter over the surface and drop tablespoon-sized amounts of batter onto the pan (more if you want larger pancakes). Wait a minute or so, then flip to the other side. The pancakes should be light golden brown and set in the middle.
  • Top with butter and drizzle with warm maple syrup.
  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

Time 25m

Yield 8 pancakes, 4 serving(s)

Number Of Ingredients 14

1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1/4 teaspoon ginger, ground
1/8 teaspoon clove, ground
1 egg
1 cup applesauce
2 tablespoons vegetable oil
2 tablespoons water
1 teaspoon vanilla extract

Steps:

  • Preheat a large skillet or griddle to medium heat.
  • In a medium mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and spices.
  • In another medium mixing bowl, whisk one egg until frothy. Then add applesauce, vegetable oil, water and vanilla and whisk until combined.
  • Make a well in the center of the dry ingredients and whisk in the wet ingredients all at once.
  • Using a 1/4 cup sized measuring cup, pour batter onto the hot, greased skillet/griddle over medium heat, leaving enough space between each pancake for them to expand. With the bottom of your measuring cup or the back of a spoon, spread out the batter in a circular motion until pancake is an even layer.
  • Cook for 2-4 minutes or until surface begins to bubble and edges appear slightly dry. Turn and cook for another 2 minutes until golden brown.
  • Serve hot with butter and maple syrup (or your choice of syrup).

BIG B'S PANCAKES (DAIRY FREE, DIABETIC FRIENDLY)

Big B's Pancakes (Dairy Free, Diabetic Friendly) image

My late dad was a fabulous cook. My mouth waters when I think about his concoctions. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl. Fortunately it is dairy free so it works well for my dairy allergic son. My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking. The batter can last in the fridge for up to 24 hours. I usually use 2 pans simultaneously to halve the cooking time, so the cooking time specified in this recipe is for the whole batch using 2 pans.

  • Mix all ingredients with an electric beater until smooth batter.
  • Heat a non-stick frying pan on high.
  • Pour enough batter into pan to cover the bottom.

  • Flip or turn and fry on other side for 2-3 minutes until brown.
  • Fill with mince or cheese for a savoury meal, or with cinnamon & sugar for a snack or ice cream & chocolate sauce for dessert.
