DIVINE CHICKEN WITH GREEN BEANS
These are the BEST green beans you will ever have. This recipe can be altered to your liking. I throw bacon in and omit the chicken for a side dish. Makes wonderful leftovers, but there are never any unless I eat them alone.

- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Add garlic and onion, and reduce the heat to medium. Cook and stir just until fragrant. Mix in the green beans, cover and cook to your desired doneness, at least 5 minutes.
- Uncover, and stir in the cream and cheese just until everything is coated. Remove from the heat and enjoy.

- Blanch the haricots verts in hot water for about 3 to 5 minutes then remove from heat and shock in iced water. Drain and set aside to cool.
- Preheat oven to 325 degrees F.
- In a large skillet saute the chopped onion in butter. Then add the cooled beans and saute for a couple of minutes. Add the canned mushroom soup and mix well.
- Transfer to a buttered casserole dish and top with the diced tomato, French-fried onions, and season with salt and pepper, to taste. Bake in oven for about 10 minutes.

- Preheat the oven to 350 degrees F.
- Drain and rinse the canned green beans, and set aside.
- In a medium saucepan, melt the butter. When it is melted, add the onion and garlic, and stir to combine. Cook for 1 minute.
- Add the flour, and cook for another minute, stirring often.
- Whisk in salt and then the milk, and cook for one more minute until the mixture thickens.
- Remove from the heat, and stir in the sour cream.
- Add the rinsed green beans to the pan, and gently stir to combine.
- Place the green bean mixture in the bottom of the 2.5-quart baking dish (this can be a 9-inch square, a 9-inch round, or other similar-sized oval dishes).
- Add the cracker crumbs and melted butter to a small bowl, and stir to combine.
- Sprinkle the cracker crumbs over the green bean mixture.
- Bake for 30 minutes or until the mixture is hot and the cracker crumbs are golden-brown.
- Serve hot.

- Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
- Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
- Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet over medium heat, brown the ground beef until no pink shows; drain excess fat. Stir in tomato paste, Worcestershire sauce, hot sauce and oregano; set aside.
- In a separate skillet, melt 2 tablespoons butter over medium heat. Saute the chopped onion until translucent. In a medium bowl, combine cottage cheese, cream cheese, sour cream and sauteed onions.
- Place 1/2 of cooked noodles in the bottom of a 2 quart casserole dish. Drizzle with 1/2 of the melted butter. Cover with cheese mixture. Toss remaining noodles with remaining melted butter, and spread over cheese mixture. Cover with meat mixture.

- Combine all the green beans and cream of celery in a mixing bowl, carefully to not smash the beans up.
- In a medium-large skillet, fry up bacon pieces until they are crispy and all the fat has melted off.
- Remove bacon from grease and set aside to drain.
- Once drained and cooled a bit crumble into 1/4 inch pieces.
- In the bacon pan and with the bacon grease, blacken (fry) the green onions, and sautee the yellow onion.
- Remove them from the grease when all the green onions are completely black (not burnt), set aside to drain.
- Preheat the oven to 350 degrees.
- Add aprox. 15 oz French's Fried Onions, the bacon pieces, yellow onion, and green/black onion into the green beans and carefully stir.
- Transfer the mixture from the bowl into a 8x8 baking dish.
- Evenly spread all of the cheese over the top.
- Then top it off with the remaining French Fried onions.
- Cover with aluminium foil and bake for 20 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese starts to get brown bubbles.
- Remove from oven and allow to cool 10-15 minutes before serving.
