SPICE CAKE WITH LEMON SAUCE

Spice Cake with Lemon Sauce image

Provided by Trisha Yearwood

Categories     dessert

Time 1h55m

Yield 8 to 10 servings

Number Of Ingredients 16

Cooking spray
2 sticks (1 cup) unsalted butter, softened
2 cups granulated sugar
1/2 cup light brown sugar
3 cups all-purpose flour
1/4 teaspoon baking soda
1 1/4 teaspoons cinnamon
1 teaspoon cloves
1/2 teaspoon nutmeg
6 large eggs, at room temperature
1 cup sour cream
3 large eggs
2 cups granulated sugar
Juice of 3 lemons
Grated zest of 1 lemon
2 sticks (1 cup) unsalted butter, cut into cubes

Steps:

  • For the spice cake: Preheat the oven to 350 degrees F. Spray the inside of a 10-inch Bundt pan with cooking spray.
  • Cream the butter, granulated sugar and brown sugar with an electric mixer on medium speed until light and fluffy.
  • Sift together the flour, baking soda, cinnamon, cloves and nutmeg.
  • Add the eggs to the creamed butter, one at a time, beating after each addition. Add the sour cream, alternating with the flour mixture, beginning and ending with the flour and beating until no flour is visible -- don't overbeat.
  • Pour the batter into the prepared pan; tap the pan on the counter to remove any air pockets. Bake for 1 hour, until a toothpick inserted into the center of the cake comes out clean. Cool slightly in the pan, 5 to 10 minutes, then turn out onto a rack while still warm.
  • For the lemon sauce: Meanwhile, whisk together the eggs and granulated sugar in the top of a double boiler over medium heat. Stir in the lemon juice, zest and butter. Cook until thickened, whisking often, about 30 minutes.
  • Serve the cake warm or room temperature with the lemon sauce.

  • In small bowl, evenly sprinkle gelatin over 1 1/2 cups buttermilk. Let stand 2 minutes to allow gelatin to absorb liquid and soften slightly.
  • In 3-quart saucepan, heat heavy cream and 1/2 cup sugar to boiling on medium, stirring occasionally. Reduce heat to low; whisk in gelatin mixture. Cook 1 to 2 minutes or until gelatin dissolves, stirring.
  • Pour buttermilk mixture into eight 4-ounce ramekins or 6-ounce custard cups. Place ramekins in jelly-roll pan for easier handling. Cover pan with plastic wrap and refrigerate panna cotta at least 4 hours or overnight, until well chilled and set.
  • Meanwhile, with knife, cut peel and white pith from 2 oranges and discard. Holding oranges, one at a time, over medium bowl or measuring cup to catch juice, cut out segments between membranes.
  • In 1-quart saucepan, heat orange juice, brandy, and remaining 3/4 cup sugar to boiling on medium-high. Reduce heat to medium and cook 10 minutes or until syrup thickens slightly and is reduced to 1 cup, stirring frequently.
  • To unmold panna cotta, run tip of knife around edge of each ramekin. With hand, sharply tap side of each ramekin to break seal; invert each onto a dessert plate.

  • Homemade chocolate sauce. Are you a pretty diehard fan of the classics but you’ve been working towards learning how to make your own homemade versions rather than just picking up a branded bottle off the store shelf?

  • Buttermilk sugar glaze. 12 Tomatoes shows you how to make a simply sweet sugar glaze that would taste good on any number of baked goods, but that we know is just heavenly for making classic glazed donuts.
  • Sweet lemon glaze. Do you love the glaze idea above but you’d prefer a little extra flavour to add to what you’ve made? This lemon version by Recipeler is the perfect alternative for you.
  • Caramel sauce. Do you like a rich, sweet flavour but neither chocolate nor vanilla will do the trick for you? Try this sticky and delicious caramel sauce by Tracey’s Culinary Adventures instead!
  • Vanilla sabayon. Perhaps you’re into textures as well as tastes and you’d like something a little thicker? This delicious sabayon, which is made of egg whites, resembles more of a classic custard.
