Simple cookie recipe from the label of a mold press (Moule Cheche) bought in Tlemcen, Algeria. Only the ingredients were listed, so I improvised the general directions for mixing cookies.

500 g butter
225 g cornstarch
3 egg yolks
500 g flour
1 teaspoon baking powder
250 g sugar

Steps:

  • In bowl, beat butter, egg yolks and sugar until light and well blended.
  • In separate bowl, sift together cornstarch, flour and baking powder. Gradually, add the dry mixture to the wet mixture, blending well between each addition.
  • Use a pastry tube with a medium-sized start mold to make small circle (wreath type) cookies.
  • Bake in medium hot - hot oven until cookies are lightly browned.

4 eggs, separated
3/4 cup sugar
1/3 cup ground almonds
1 1/2 teaspoons vanilla flavoring
1/2 cup flour
1/3 cup cornstarch

whipped cream

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour well a 9x9x2" cake pan.
  • In a small mixing bowl sift flour and cornstarch together. Set aside.
  • Add 4 egg yolks and sugar in mixing bowl. Beat for 5 minutes or longer. Mixture should be thick and light.
  • Add ground almonds and vanilla, stir.
  • Gradually add the flour and cornstarch, mixing well.
  • Beat egg whites until stiff, add a 1/4 cup of them to mixture and mix well.
  • Fold in the rest of the egg whites, gently.
  • Pour into cake pan.
  • Bake for 45 to 55 minutes or until toothpick come out clean.
  • Cool for 10 minutes, remove from cake pan and turn right side up.
  • To Serve: Cut cake in half. Fill with jam or whipped cream or both.

  • In an electric mixing bowl, mix the sugar, semolina, and butter together. Add in the milk, orange blossoms water, baking powder, yogurt and mix on low speed for 1-2 minutes to obtain a thick batter.
  • Line a nonstick half sheet pan (17.5 inch x 13 inch) with parchment paper. Brush with the tahini paste and then place the batter on it and spread out evenly on the pan with a spatula or your palm. You can wet your palms to help spread it out.
  • Let it sit for about 45 minutes to an hour (until the semolina absorbs the moisture and becomes softer) and then cut out the namoura into square patterns or diamond shape patterns, whatever you prefer.
  • NOTE: You do not have to do the cutting now. You can just add the almonds on top and cut out after the namoura cools down but this helps the sugar syrup get into the cake better after baking as well as make it easier to cut.
