ASHLEY GREENE'S DERBY PIE
Ashley Greene is a familiar face from the Twilight films and is appearing in Hallmark Movies & Mysteries Christmas on My Mind this December. The Florida native shares her memories of this beloved family holiday dessert below:"The Derby Pie is something my Aunt Ida makes every Christmas specifically for me. I'm not a huge sweets person but there is a decadence the chocolate layer brings, a richness from the pecan, and if you add a pinch of salt it's a perfect salty sweet savory pie. A warm slice with some ice cream is something I look forward to every holiday season."

KENTUCKY BOURBON PIE
Give pecan pie a serious upgrade with our Kentucky Bourbon Pie. Fashioned after George Kern's Derby Pie recipe, the recipe's combination of chocolate, bourbon, and pecans has earned it a spot as one of the South's most beloved desserts. It's stacked with unexpected layers of flavor and texture, from the pecan-chocolate chip mixture sprinkled over the crust to the creamy bourbon filling. Top with whipped cream and chocolate shavings to cool off and complement the pie's richness. From the chocolate to the pecans to the bourbon, this pie exemplifies Southern comfort and hospitality. It will be the new favorite addition to your Kentucky Derby watch party spread, but it can be enjoyed year-round. Bring this pie to Thanksgiving and even Grandma will be asking you for the recipe. You'll want to bookmark this new take on a Southern classic.

If you have too much filling to fit in your crust, leave some of it out. I haven't had this issue, but I know that a couple of readers have mentioned that.

- Preheat the oven to 350 degrees and adjust your baking racks in the oven to the center of the oven. Spray a nine-inch pie pan with cooking spray.
- In a medium-sized mixing bowl, melt the butter by putting it into the microwave for about 30 seconds. If there are lumps left in the butter, stir it with a spoon until the lumps dissolve. Let the melted butter sit out at room temperature for about 5 minutes to cool to room temperature.
- Add the sugar to the butter and stir it well with a spoon. Add the eggs and mix well, beating the eggs. Add the flour and the pecan halves along with the vanilla. Set this mixture aside for now. Move on to making the pie crust to make sure that the mixture is quite cool. The chocolate chips do not need to melt as you stir the filling mixture together.
- Now, move on to making the pie crust. In another medium-sized bowl, stir together the 1 cup flour and the salt. Add the vegetable shortening and use a pastry blender to cut the shortening into the flour mixture. Continue mixing and cutting the shortening until the mixture resembles coarse crumbs and the shortening is evenly distributed in the flour mixture.
