  • Puree berries in processor. Press puree through sieve into small bowl; discard seeds. Spoon 1 tablespoon berry puree and 1 tablespoon crème de cassis into each of 4 champagne flutes. Fill each flute with champagne and serve.

Ice cubes, as needed
1 strip orange rind, pith removed
1 tablespoon Creme de Cassis
6 ounces sparkling white wine (recommended: Cava)
Mini or Champagne grapes or any other fruit, for garnish

Steps:

  • Chill 1 champagne flute that has been filled with ice cubes. Discard the ice before filling the glass with the cocktail.
  • Squeeze the orange rind to allow its oils to rise to the surface. Rim the glass with the rind, and then drop it into the glass.
  • Pour in the Creme de Cassis, and fill the rest of the glass 3/4 of the way with the sparkling white wine. Garnish the drink with the grapes. Cheers!
