HOT AND SPICY SPAM HASH #5FIX
5-Ingredient Fix Contest Entry. A delicious and easy breakfast or snack to prepare! My boyfriend introduced me to spam two years ago, which I figured I'd always hate. Turns out I love it, and adding Simply Potatoes shredded hash browns to the mix makes it an amazing breakfast!

Steps:
- Dice the onions and bell peppers.
- Get the hash browns into a pan with 3 tablespoons olive oil or canola oil to start browning. Make sure to mix occasionally so they don't burn.
- Cube the spicy spam into small pieces and put in a smaller separate pan to start cooking.
- After 5 minutes add the onions and bell peppers.
- Let that cook for 2-4 minutes.
- Add the spam and vegetables to the hash browns. Let cook together for 2 minutes, add the cheese, salt and pepper to taste, and you're done!

Steps:
- In a large pot, cook potatoes until almost tender, about 10 to 12 minutes.
- Drain and cool.
- In a very large heavy skillet, heat oil over medium-high heat.
- Add onion, and cook, stirring often, until beginning to soften, about 5 minutes.
- Add potatoes, and cook, stirring occasionally until crispy and brown, about 10 minutes.
- Add garlic, bell peppers, rosemary and"sausage.
- "Cook, stirring until peppers soften, about 10 minutes.
- Stir in spinach, and cook until the spinach wilts down.
- Salt and pepper to taste, add chipotle powder if desired.
- Serve hot.

Steps:
- Butter a 9" X 12" baking dish well and press Simply Potatoes Hash Browns along the bottom and up sides of the dish.
- Crack eggs into blender and add canned soup. Blend well.
- Add remaining ingredients and pour over hash browns in prepared baking dish.
- Bake at 350 degrees for 1 hour or until egg mixture has set.
- Cut into squares and serve warm.
- Also travels well for potlucks and other gatherings.

- Heat a 12" skillet on medium heat and cook bacon until crisp. Remove bacon and set aside, reserving drippings. Add potatoes to skillet and cook on medium high heat until crispy and browned. Turn out potatoes into a 9" pie plate and press to form a crust on bottom and sides of plate. Cover and chill 30 minutes. Meanwhile preheat oven to 350 degrees. In a medium mixing bowl, whisk together eggs and milk. Add bacon and cheese and combine well. Pour egg mixture into potato crust and bake 40 minutes or until knife tests clean.
