DELICIOUS CHEESY CHEESE STRAWS
These are really delicious. Pastry-light and easy to make. Fun to make with kids. Great for parties, but make 5 times more than you think you'll need because your family will eat the first 2 batches.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Process Cheddar cheese, flour, butter, 1/4 cup Parmesan cheese, cayenne pepper, and salt in a food processor until large crumbs form; transfer to a bowl. Stir milk into the cheese mixture until it forms a ball of dough.
- Roll dough out onto a lightly floured work surface to about 1/8-inch thick. Use a pizza cutter or thin knife to trim the edges of the dough to leave a large square with sides measuring 7 to 8 inches. Cut dough into 1/3-inch strips and arrange onto a baking sheet.
- Bake in preheated oven until puffy, about 15 minutes. Sprinkle 2 tablespoons Parmesan cheese over the warm cheese straws.

SIMPLE CHEESE STRAWS
This scrumptious cheese straw recipe makes the perfect nibble for your Christmas cocktail party and they are easy to make so you can get your children involved too.

Steps:
- Preheat the oven to 180°C/fan160°C/gas 4. Lightly grease 2 baking sheets with a little butter. Sift the flour into a large bowl, then rub the butter into the flour using your fingertips until the mixture looks like fine breadcrumbs. Add the grated cheese and mix together.
- Add half the beaten egg and stir into the flour until the mixture starts to come together, then use your hands to work it into a ball.
- Dust a work surface with a little flour and roll out the pastry into a rectangle, about 3mm thick, using a rolling pin. Cut widthways into straws, about 5mm wide.
- Carefully put the straws on the baking sheets, leaving a little space between them. Sprinkle with extra cheese and bake for 12-15 minutes, until golden. Cool for a couple of minutes on the baking sheets, then carefully pick them up with a palette knife and put them on a cooling rack. Eat warm or cool and store in an airtight container.

- heat oven to 220c/fan 200c/gas 7. Unroll a puff pastry, scatter over a couple of handfuls of grated Parmesan, then fold in half. On a lightly floured surface, roll out to the thickness of a £1 coin. Cut into 1cm strips, then twist the strips 3-4 times. Lay on a baking sheet, scatter over more cheese and bake for 12 mins, or until golden. Leave to cool, then keep in an airtight container for up to 2 days. As these cheese straws are very delicate, roll them in kitchen paper before packing into a plastic container.

Steps:
- Preheat oven to 350°F with racks in upper and lower thirds.
- Pulse cheese, flour, butter, salt, and cayenne in a food processor until mixture resembles coarse meal. Add milk and pulse until dough forms a ball.
- Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12- by 10-inch rectangle (1/8 inch thick). Cut dough with a lightly floured pizza wheel or lightly floured sharp knife into 1/3-inch-wide strips. Carefully transfer to 2 ungreased baking sheets, arranging strips 1/4 inch apart. (If strips tear, pinch back together.)
- Bake, switching position of sheets halfway through baking, until pale golden, 15 to 18 minutes. Cool completely on baking sheets on racks, about 15 minutes.
