AMISH SHOOFLY CAKE
Steps:
- Preheat oven to 350°.
- Mix brown sugar, flour, and butter with a pastry blender until you have fine crumbs.
- Reserve two cups of the crumbs for the top.
- Combine the boiling water and baking soda, then add the molasses and salt. Mix well.
- Mix the molasses mixture with the remaining crumbs. And pour this into a greased 9x13" baking dish.
- Starting at the edges, scatter the reserved 2 cups of crumbs over the top.
- Bake for about 45 - 50 minutes. Cool and enjoy.

- Cream shortening and sugar gradually, then add molasses and eggs. Mix in sifted ingredients. Stir in hot coffee; batter will be thin.

- Add dry ingredients to mixture. Beat well.
- Put into greased, floured 9x9x2 inch pan,

- The following may also be added to this recipe- rasins, chopped nuts or candied fruit for fruit cake.

- mix all crumb ingredients and save 3/4 cup of crumbs.
- to prepare BATTER.
- pour milk over baking soda, pour this mixture over molasses.
- add all crumbs EXCEPT reserved 3/4 cup and mix well --
- pour into a greased and floured 9" square pan.
- sprinkle reserved 3/4 cup of crumb mixture evenly over batter.
- bake at 3508 for approximately 25 minutes.
