These patties are great dipped in ketchup, mustard, or hot sauce. They are also great as a sandwich.

Steps:
- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

NEVER FAIL TUNA PATTIES (SALMON WORKS TOO)
I've made these for so long that I'm not sure of the recipe origin. They never fail, are easy to make & always good. They also work well & impress as a starter if served with crisp veggies, tartar sauce or a light mayo sauce thinned-with-milk & flavored with lime juice, dill & chives. Makes 4 patties of entree size or 6-8 of starter size. *Edited to Add* -- My spec thx to Chef JillAZ for reviewing this recipe for the Freezer Tag Game in the OAMC Forum & for the info she provided. Steps:
- Combine 1st 5 ingredients in a mixing bowl.
- Add corn flakes til you no longer see any liquid in the mixture, but more is usually better.
- Divide into 4 equal portions on a cutting board.
- Shape patties & flatten to 3/4 in thickness.
- Use spatula to transfer carefully to non-stick skillet & saute over med-low heat in olive oil til golden brown & crisp on both sides.
- Note #1: A variety of dry bonding ingredients can be used. I use crushed corn flakes or Pepperide Farm dressing mix. I don't care for the mushy texture of the end-product or the difficulty holding the patties together when potato is used.
- Note #2: For OAMC per JillAZ ~ *To freeze* (uncooked patties) prepare recipe thru Prep Step #4. Place patties in a freezer bag w/layers of parchment paper in between. Seal, label & freeze. *To serve* ~ Thaw in fridge or microwave & cook as directed. ~~ Cooked patties can also be frozen wrapped in plastic wrap & placed in a freezer bag. Thaw in fridge or microwave & reheat on stovetop or in oven.
DEE'S TUNA PATTIES
Steps:
- Put vegetable oil in a medium-large frying pan. In a mixing bowl, put in already strained tuna fish, eggs, and bread crumbs. Mix together well with fork.
- Then use your hands to squeeze it into a large ball, until it is a little more solid, and not falling apart. Then take medium sized handfuls of tuna, packing it together again, but this time round and flat.
- Place in frying pan. Keep repeating steps until all of the mixture is gone. Turn heat on low-medium. Flip patties when you see they're starting to brown a little on the bottom. They are finished when the opposite is lightly browned also.
- Serve with noodle side dish and a vegetable. Pour little capfuls of lemon juice on top of patties until you've reached your desired amount.

CRISPY TUNA CAKES WITH LEMON CHILI MAYO
All the flavor of crab cakes at a fraction of the price. These crispy patties are made with canned tuna and a few basic seasonings you probably already have in your fridge and pantry. Prep these in advance then cook them just before serving or pull them together from scratch for a super quick dinner any night of the week. These tuna cakes are perfect served with mixed greens or your favorite veggie side or tuck them into burger buns for a warm and savory twist on an old-fashioned tuna sandwich.

- For the tuna cakes: Place the drained tuna in a large bowl. Add the bread or breadcrumbs, mustard, mayonnaise, lemon zest and juice, onion, parsley, garlic, seafood seasoning, salt and eggs. Toss until evenly combined. Let sit 5 to 10 minutes to let the ingredients absorb the liquid.
- Meanwhile, make the lemon chili mayo: Whisk together the mayonnaise, lemon zest and juice, chili powder and cayenne in a small bowl. Set aside.
- Heat 2 tablespoons of olive oil in a 10- to 12-inch heavy-bottomed nonstick or cast-iron skillet over medium heat.
- Scoop out about 1/3 cup of the tuna mixture at a time and pat into a round patty shape in your hands, then immediately place it in the skillet. Repeat, working in batches so that you're cooking 3 to 4 tuna cakes at a time, spaced 1 to 2 inches apart. Cook until crisp on the bottom, about 2 minutes, then flip and cook until crisp on the sides and fully cooked through, 2 to 3 minutes.
- Serve the tuna cakes hot with your favorite side, a drizzle of the lemon chili mayo and lemon wedges, if desired.
TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.
TUNA FISH-CHEESE PATTIES
Tuna patties are milder than salmon. And the flavor of the other ingredients shine through the tuna. Serve them on a plate with pan-fried potatoes and sliced tomatoes and avocados. Or in a toasted pita with lettuce, thin sliced tomatoes and a touch of mayo. Don't forget a handful of potato chips.

- Into a small bowl, tear-up the bread and soak in 2 tbsp milk for a couple minutes. Set aside.
- In a mixing bowl, thoroughly mix all ingredients together (except oil and Panko).
- If the mixture feels too wet, add Panko a tbsp at a time, until you can form soft balls.
- Heat 2 tbsp olive oil in a frying pan.
- Form tuna mixture into patties and fry for 5 minutes until golden brown.
- Carefully flip the patties. Add more oil if necessary and brown the other side for 5 minutes.
- Drain on paper towels and serve after a 4 or 5 minute rest.

TUNA PATTIES WITH RANCH DRESSING
I got this recipe from a Starkist tuna recipe booklet and it's so good. I think the Ranch dressing and cheese make them extra good.

- Set aside 3/4 cup of the breadcrumbs.
- Combine all ingredients, except oil and reserved breadcrumbs.
- Form 8 patties, coating each side with the reserved bread crumbs.
- Heat appx.
- 1 tbl.
- oil in nonstick skillet over medium heat.
- Cook 4 patties for 4-5 minutes on each side.
- You may need to add additional oil when you're frying them.
- Add more oil and cook remaining 4 tuna patties.
- Serve immediately.

- Combine the tuna, bread crumbs, celery and mayo in a large bowl. Blend in the chili paste, lemon juice, and celery salt. Mix everything well.
- Form 4-8 patties, depending on how large you want them. Fry lightly in a sprayed skillet over medium heat about 5-8 minutes, flipping once. Patties are done once they are well-browned.
