Steps:
- Place enough peanut oil in a 4 to 5-quart cast iron Dutch oven to come halfway up the side of the pot. Place over medium-high heat and bring to 390 to 400 degrees F.
- Remove the pickles from their brine and cut lengthwise into quarters, like spears. Lay the spears on a sheet pan lined with paper towels and pat them dry.
- Place the buttermilk in 1 shallow dish and mix together the cornmeal and salt in a separate dish. Dip each pickle, 1 at a time, first into the buttermilk, then into the cornmeal and then repeat. Carefully place each spear into the hot oil and cook until golden brown, approximately 2 minutes. You can fry 3 to 4 pickles in the pot at a time. Adjust the heat, if necessary, in order to maintain a constant temperature of 390 to 400 degrees F. Transfer the pickles to a cooling rack set in a half sheet pan and allow to cool for 5 minutes before eating. Season with additional salt, if desired.

Steps:
- Heat Vegetable Oil (as needed) in a deep fryer or large heavy-bottomed pot over medium-high heat to 375 degrees F (190 degrees C).
- Using paper towels pat the Dill Pickle (10) dry and set aside. You want the pickles to be very dry in order to have the batter stick to them properly.
- In a medium bowl whisk together Unbleached All-Purpose Flour (2 cup), Cajun Seasoning (2 teaspoon), Italian Seasoning (2 teaspoon), Garlic Powder (2 teaspoon), Onion Powder (2 teaspoon), Baking Soda (2 teaspoon), Sea Salt (1 teaspoon) and Ground Black Pepper (1 teaspoon).
- In another medium-sized bowl, whisk or beat the Aquafaba (1/2 cup) until foamy.
- Add foamy aquafaba to the dry ingredients and mix. Slowly pour in Carbonated Water (1 1/2 cup) a little bit at a time, while lightly mixing between additions.
- Mix until smooth but do not over mix.
- Working in batches, add dry pickles to the batter, and gently toss to coat. Using a fork, or tongs, gently add pickles to the oil one at a time.
- Fry for 2 mins on each side or until golden brown.
- Remove pickles with tongs or a slotted spoon and drain on a paper towel lined plate. Repeat. Serve with Creamy Dill Sauce or sauce of choice.

- Drain your pickles and pat them as dry as you can. Set them aside. Stir together the ranch dressing and sriracha and set aside.
- Create your breading station. Mix together the flour, garlic, and cayenne in one flat bottomed container and set aside. Whisk together the eggs and water in a second flat bottom container and set aside. Stir together the cornmeal, bread crumbs, and panko in a third flat bottomed container.
- Depending on the size of your pot*, pour 4-6 cups of a safe frying oil into the pot and bring to 375 degrees. Reduce the temperature just a bit when you achieve the temperature so it maintains and doesn't get too hot.
- Take the dried pickles through the breading station. First toss them in the flour until evenly coated and shake off any excess (too much flour will cause the breading to slide off). Dip into the egg wash until evenly coated and let any excess drip off. Finally, transfer to the bread crumb mix. Push each side down into the bread crumbs making sure each side is evenly coated. Shake off any excess.

- Dab pickle slices on paper towels to dry them. Place about ½ cup of Panko bread crumbs in a bowl (add more as needed). (If they get wet, they don’t stick so it’s best to work in small batches.)
- Dip each pickle slice in the wet batter and then gently toss in the bread crumbs, let sit for a minute or so, this will allow the crumbs to stick better.
