BEST PANZEROTTI RECIPE
Easy Panzerotti (or Panzarotti) is an Italian savory turnover like a mini pizza pocket and it's super easy to make at home! A pizza dough crust is filled with all the classic toppings - pepperoni, cheese, and your choice of sauce. These semi-circular pockets are then baked or deep-fried to golden perfection. If this sounds like something you might like (how can it not?), check out this authentic recipe.

Steps:
- Whisk together yeast, sugar and warm water in a small bowl. Let it sit for 5-10 minutes until foamy.
- Mix together flour and salt. Add oil, yeast mixture to the dry ingredients. Mix with a wooden spoon until the dough just begins to come together. Let the dough rise for about 30 minutes or until it doubles in size.
- While the dough is rising, you can make the panzerotti filling.
- In a medium mixing bowl, mix together tomatoes, cheese, oregano, salt, and pepper.
- After the dough is ready, divide it into 6 pieces.
- Press down the ball with your palm. Use a rolling pin to roll each piece into a circle about 6 inches in diameter.
- Add about 2 tablespoons of filling and 3-4 pepperoni to each piece.
- Brush the edges of the dough with water and fold the dough to create a semi-circle.
- Pinch the edges to seal the pocket. Repeat the process for the rest of the dough.
- Pour oil (about 1 inch) into a deep skillet and heat the oil to 350°.
- Once hot, add a few panzerotti pockets to the skillet. Cook for about 3-5 minutes, turning every minute until both sides are golden brown. (Make sure not to overcrowd the pan.)
- Use a slotted spoon to remove panzerotti and transfer to a paper towel-lined plate. Serve and enjoy!

Steps:
- Put an inverted baking sheet or pizza stone on the bottom oven rack; preheat to 475 degrees F. Brush the bottom and side of a 10-inch deep-dish pizza pan or a 9-inch-round cake pan (preferably dark metal) with 2 tablespoons olive oil. Press the dough into the pan.
- Combine the tomato sauce, garlic, oregano, 1/2 teaspoon salt and a few grinds of pepper in a bowl. Spread 1 cup of the sauce over the dough; scatter the onion on top. Transfer the pan to the hot baking sheet; bake until the crust puffs up slightly and starts browning, about 10 minutes.
- Remove the pizza from the oven; top with the cheese, pepperoncini and pepperoni, then top with the remaining sauce. Return to the hot baking sheet and bake until golden and crisp around the edge, about 12 minutes. Let cool 5 minutes. Top with the basil before slicing.
- Toss the greens with the remaining 2 tablespoons olive oil and the pepperoncini brine; season with salt and pepper. Serve with the pizza.

CRISPY DEEP-FRIED PIZZA
Steps:
- Preheat the oil to 365 degrees F. A deep-fryer is best, but if using a stove top method, fill a cast iron Dutch oven or heavy chicken fryer with oil about 4 inches deep.
- Roll dough out and cut it in half. Stir the oregano and basil into the pizza sauce. Slice the pepperoni. Spread half of the pizza sauce on half of each side, of the dough, add the cheese and pepperoni, distributing evenly. Apply a thin line of the water to the edge of the dough and fold each over onto itself and press to seal.
- Check the oil temperature and carefully add the pizza pockets. Cook for 2 minutes, turn over and cook for 1 minute more. Remove to a paper towel lined plate. Transfer the pizza to serving plates and garnish with remaining pizza sauce, Parmesan and fresh basil leaves.
- Combine all the dry ingredients in bowl of food processor or stand mixer. Or if by hand, combine in a medium bowl. Add the warm water to small glass bowl. Sprinkle the yeast over and let it sit for 10 to 15 minutes. Add oil and yeast mixture to dry ingredients and depending on method using, combine until a dough ball forms. For food processor, pulse on dough setting until dough is smooth and elastic. For stand mixer, slow speed until dough is smooth and elastic. For hand method, knead on lightly floured surface until smooth and elastic. Form the dough into a ball. Lightly oil a large bowl, add the dough ball to it, cover tightly with plastic wrap or a well-floured tea towel, and set in a warm place or a 100 degree F oven until doubled, about 1 hour.
- Punch down, and let rest for 5 minutes. Divide the dough in half for 2 large pizzas or into 4 equal pieces for calzones or small individual pizzas. Roll the dough into 1/4-inch thick rounds. Cooks Note: Can be made ahead and also freezes well.
CRISPY PEPPERONI CHIPS
Steps:
- Preheat the oven to 425 degrees F.
- Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes.
- Remove the pan from the oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return the pan to the oven and bake an additional 2 to 4 minutes, until the pepperoni slices are very crispy.
- Serve as a snack anytime or use in place of crackers for dipping or for topping with your favorite cheese! They'll stay fresh and crispy for 1 to 2 days if you store them in an airtight container.

- Clam Chowder. Enjoyed across the Maritimes, clam chowder is classic comfort food and was a favourite aboard the long-running Canadian warship HMCS Haida, commissioned in 1943 and “the fightingest ship in the Royal Canadian Navy.”
- Jiggs Dinner. Whether they call it Jiggs, boiled, cooked or Sunday dinner, this traditional single-dish meal of salt beef, split peas and root veggies (sometimes a roast turkey is added to the mix, too) is a favourite among Newfoundlanders.
- Sweet Mustard Pickles. With as many recipes as there are cooks on the East Coast, this mix of cucumbers, onion, cauliflower and red pepper in tangy mustard brine is served at formal events and holiday gatherings.
- Fish and Potato Bake. Ask a Newfoundlander, and they’ll tell you the word “fish” really means “cod.” The mild, white-fleshed delicacy that spawned a once-thriving industry on Canada’s Atlantic coast has begun to flourish again.
- Donair. Those hailing from Halifax, or Haligonians, know this quintessential street snack tastes best in the wee morning hours. A Maritime spin on the doner kebab, donairs are made from spiced ground beef shaved off a spit, piled onto fresh pita with onions and tomatoes, and smothered in an addictive sauce of garlic powder, sweetened condensed milk and vinegar.
