Provided by Guy Fieri

Categories     side-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 25

2 1/2 cups canola oil
12 to 16 ounces fresh okra
1/2 cup tapioca flour
1/2 cup all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons fine sea salt, divided
1 teaspoon baking soda
1 teaspoon cayenne pepper, divided
1/2 teaspoon ground white pepper, divided
1/4 cup cornstarch
4 to 6 dashes hot pepper sauce
3/4 cup ice cold water
Spicy Ranch Dressing, for serving, recipe follows
1 clove garlic
1 1/2 teaspoons kosher salt, divided
1 cup sour cream
1/4 cup buttermilk
1/4 cup loose packed fresh Italian flat-leaf parsley
1 tablespoon fresh lime juice
1 teaspoon fresh cracked black pepper
1 teaspoon dried dill
1 teaspoon dehydrated onion flakes
2 drops Worcestershire sauce
Pinch cayenne pepper
Pinch ground white pepper

Steps:

  • Heat the oil in a Dutch oven or deep fryer to 375 degrees F.
  • Wash the okra, drain thoroughly and pat dry. Cut off the ends of the okra, and then cut the okra crosswise into 1/2-inch rounds.
  • In a medium bowl, combine the flours, baking powder, 1 teaspoon salt, baking soda, 1/2 teaspoon cayenne and 1/4 teaspoon white pepper. In a small bowl, combine the remaining 1/2 teaspoon salt, 1/2 teaspoon cayenne and 1/4 teaspoon white pepper and set aside.
  • Place the cornstarch in a small bowl.
  • When the oil is hot, add the hot sauce and ice water to the spiced flour. Gently mix; there will be some small lumps.
  • Skewer the okra pieces through the middle of the flesh, leaving enough room between each piece of okra so they can fry individually. Repeat with remaining okra. Dredge the skewers through the cornstarch. Place into the tempura batter and then immediately and carefully into the hot oil.
  • Fry the okra in batches until browned, 4 to 6 minutes for each batch. Drain on paper towels, sprinkle with the reserved salt and spice mixture and serve immediately with Spicy Ranch Dressing.
  • Mince the garlic and then add 1/2 teaspoon kosher salt and mash with the edge of the knife until a paste is formed.
  • Add this to a blender with the remaining ingredients. Puree and taste to adjust seasoning.
  • Remove and place in a small bowl and refrigerate for 1 hour.

FRIED OKRA

Fried Okra image

The okra is dredged in this light cornstarch batter and fried until puffy, golden and brown, and delicious. This is the perfect batter for fried okra!

Provided by David & Debbie Spivey

Categories     Appetizer     Side Dish

Time 45m

Number Of Ingredients 8

2 pounds fresh okra
¾ cup cornstarch
1 teaspoon baking powder
¼ cup all-purpose flour
Kosher salt and freshly cracked black pepper (to taste)
½ cup water
1 egg (slightly beaten)
peanut oil (for frying)

Steps:

  • In a medium bowl, stir the cornstarch, baking powder, and flour with a whisk; season with salt and pepper. Next, whisk in the egg and water until smooth. Place the cornstarch mixture inside the refrigerator for 15 to 20 minutes.
  • In the meantime, rinse the okra and pat dry with paper towels. Slice the stems off; discard (You may also cut them into bite-size pieces if you wish). After at least 15 minutes, remove the batter from the refrigerator.
  • Heat peanut oil in a frying pan (enough for them to float - approximately ½-inch deep) until the end of a wooden spoon produces bubbles or the oil is 350 degrees F.
  • Working in small batches, dip okra into the batter. Allow excess to drip off into the bowl. Carefully place individual pieces of okra into the hot oil (do not overcrowd the pan). Cook the okra in the hot oil, until crispy and light golden brown, about 1 to 2 minutes.
  • Remove the fried okra from the oil with a spider or slotted spoon and allow them to drain on a couple of paper towels. While still hot, season the okra with additional salt if desired.

JEN'S DEEP FRIED CAJUN OKRA

Jen's Deep Fried Cajun Okra image

My family loves okra! Whether it boiled, fried or mixed in a dish, we love it! This dish has a Southern flavor with a mix with a hint of Cajun. They are great dipped in ranch.

Provided by Jennifer J

Categories     Vegetable Appetizers

Time 30m

Number Of Ingredients 10

1-2 lb okra, fresh or frozen (whole or cut)
5 c canola oil, for frying
1 c yellow cornmeal
1/2 c all-purpose flour
2 Tbsp Cajun seasoning
1/2 tsp black pepper
1/2 tsp kosher salt
1 tsp garlic powder
1/2 c buttermilk
4-6 dash(es) hot pepper sauce

Steps:

  • 1. If using whole fresh okra, wash thoroughly, drain, and cut stems off. You can slice them in half length-wise or slice them into 1/2 inch rounds. Frozen cut okra saves time. Place in a bowl and set aside.
  • 2. Heat oil in a large, heavy-bottomed skillet or Dutch oven to 350 degrees F. (You may not need to use this much oil; do not fill the pan more than halfway up the sides with oil.) Get a cookie sheet and line with paper towels. Set aside.
  • 3. In a medium bowl, combine cornmeal, flour, garlic powder, Cajun seasoning, black pepper, and salt. Mix well.
  • 4. In a separate bowl add buttermilk and hot pepper sauce. Whisk together.
  • 5. Dip okra in buttermilk and then dredge in cornmeal-flour mixture to coat well.
  • 6. Carefully add okra to the HOT oil and cook until golden brown. (It may be necessary to fry the okra in batches.)
  • 7. Remove from oil, drain on paper towels, and then serve immediately with favorite dipping sauce.

CRISPY FRIED OKRA RECIPE

Crispy Fried Okra Recipe image

These thin, crunchy, can't-eat-just-one shoestring fries will convert even the most adamant okra haters. That's a good thing because this meal serves eight people. The thinly sliced fresh okra is tossed in a mixture of curry powder, Salt, and cornstarch, the critical ingredient that keeps the breading light and crunchy instead of flour. The okra is then deep-fried till golden brown in a Dutch oven. Don't rush this process and overcrowd the pot; you'll need to do it in numerous batches. Drain the fries on paper towels once they've been cooked and season with Salt. Curried Okra Shoestring Fries go well with ketchup or our tangy and creamy chutney-and-sour cream dipping sauce, which complements the curry powder perfectly.

  • Place un-cut okra pods in a bowl of cold water. Place 1 to 2 cups plain white cornmeal (not self-rising) in a plastic bag. Drain and discard tip and stem end of okra pod. Slice into 1/4-inch slices directly into the cornmeal. Shake bag often to coat each piece well. Depending on the amount of okra you are preparing, start 1/3 to 1/2 cup shortening to melt in a heavy skillet over medium high heat. When all the okra is well coated with cornmeal, place in a sieve and shake gently to remove excess cornmeal.
  • Test the pan for correct heat by placing 1 slice of okra in the hot shortening. If it sizzles, the pan is hot enough. Place the remaining okra into the skillet. Cover the skillet. Allow the okra to fry 3 to 5 minutes. Uncover and turn gently. Cover and continue to fry, checking and turning as needed until okra is quite brown and very crisp. Salt to taste. Place 2 or 3 crumpled paper towels in a serving bowl. Remove okra to towels and allow to drain well.
