- Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

FRIED OKRA

Steps:
- In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels.

FRIED OKRA
Steps:
- In a cast-iron skillet or heavy-bottomed pot over medium heat, heat about 2-inches deep of oil to 350 F.
- In a bowl, whisk eggs until frothy.
- In another bowl, combine flour, cornstarch, salt, and pepper. Whisk together until well distributed.
- Dip the okra in the beaten eggs to fully coat.
- Dredge in flour mixture to fully coat.
- In the hot oil, add okra in batches and cook, stirring occasionally, for about 2 to 3 minutes or until golden and crisp.
- With a slotted spoon, remove okra from the pot and drain on a wire rack. Season with additional salt, if desired. Serve with spicy vinegar dip.
TEMPURA FRIED OKRA
Steps:
- Heat the oil in a Dutch oven or deep fryer to 375 degrees F.
- Wash the okra, drain thoroughly and pat dry. Cut off the ends of the okra, and then cut the okra crosswise into 1/2-inch rounds.
- In a medium bowl, combine the flours, baking powder, 1 teaspoon salt, baking soda, 1/2 teaspoon cayenne and 1/4 teaspoon white pepper. In a small bowl, combine the remaining 1/2 teaspoon salt, 1/2 teaspoon cayenne and 1/4 teaspoon white pepper and set aside.
- Place the cornstarch in a small bowl.
- When the oil is hot, add the hot sauce and ice water to the spiced flour. Gently mix; there will be some small lumps.
- Skewer the okra pieces through the middle of the flesh, leaving enough room between each piece of okra so they can fry individually. Repeat with remaining okra. Dredge the skewers through the cornstarch. Place into the tempura batter and then immediately and carefully into the hot oil.
- Fry the okra in batches until browned, 4 to 6 minutes for each batch. Drain on paper towels, sprinkle with the reserved salt and spice mixture and serve immediately with Spicy Ranch Dressing.
- Mince the garlic and then add 1/2 teaspoon kosher salt and mash with the edge of the knife until a paste is formed.
- Add this to a blender with the remaining ingredients. Puree and taste to adjust seasoning.
- Remove and place in a small bowl and refrigerate for 1 hour.
FRIED OKRA
Steps:
- In a medium bowl, stir the cornstarch, baking powder, and flour with a whisk; season with salt and pepper. Next, whisk in the egg and water until smooth. Place the cornstarch mixture inside the refrigerator for 15 to 20 minutes.
- In the meantime, rinse the okra and pat dry with paper towels. Slice the stems off; discard (You may also cut them into bite-size pieces if you wish). After at least 15 minutes, remove the batter from the refrigerator.
- Heat peanut oil in a frying pan (enough for them to float - approximately ½-inch deep) until the end of a wooden spoon produces bubbles or the oil is 350 degrees F.
- Working in small batches, dip okra into the batter. Allow excess to drip off into the bowl. Carefully place individual pieces of okra into the hot oil (do not overcrowd the pan). Cook the okra in the hot oil, until crispy and light golden brown, about 1 to 2 minutes.
- Remove the fried okra from the oil with a spider or slotted spoon and allow them to drain on a couple of paper towels. While still hot, season the okra with additional salt if desired.

SPICY FRIED OKRA
Steps:
- Pat okra dry with paper towels. Place buttermilk and hot sauce in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt and pepper. Dip okra in buttermilk mixture, then roll in cornmeal mixture., In a cast-iron or other heavy skillet, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, until golden brown, 1-1/2 to 2-1/2 minutes on each side. Drain on paper towels. If desired, season with additional salt and pepper.

- Put sliced okra in a bowl.
- Sprinkle with salt, liberally.
- Cover with very cold water.
- Refrigerate for at least 1 hour.
- Drain, rinse, drain again.
- Roll slices in seasoned cornmeal until well coated.
- Fry in hot oil about 1/2" deep until browned and crisp.
- Drain on paper towels, serve hot.
SOUTHERN FRIED OKRA WITH CORNMEAL

Steps:
- Cut Okra stalks down to 1/4th inch pieces. Discard ends.
- Beat 2 eggs in a bowl and place cut pieces of okra directly into egg mixture. Mix well to evenly coat all pieces.
- Let okra set for about 5 minutes while oil is heating up.
- Heat at least 2-3" of oil in a saucepan until 375 degrees.
- In a separate bowl, add corn meal, salt and pepper seasoning and mix well to combine.
- Divide the okra (from the egg mixture) into fourths.
- Add one fourth of the okra to the corn meal mixture and mix well to evenly coat all sides.
- Place cornmeal covered okra into hot oil and fry until browned on both sides, about 3-5 minutes.
- Carefully remove, drain on paper towels and repeat, frying okra in batches and draining. Sprinkle with additional kosher salt as pieces come out of hot oil.
- Serve fried okra immediately while still warm.

- Place 1/2 cup of flour in a large zip top bag. Add a large pinch of salt and pepper.
- Whisk together the eggs and buttermilk in a shallow bowl. Set aside.
- Whisk together flour, cornmeal, paprika, garlic powder, cayenne pepper, salt and pepper in a pie plate.
- Trim the stem end of each okra pod a little.Place okra in the ziptop bag with flour. Shake to coat.Coat the okra in egg mixture and then coat in flour/cornmeal mixture.
- Heat oil or shortening in a Dutch oven until it reaches 360 degrees.
- Working in batches, fry okra until golden on all sides, about 2 to 3 minutes. Place on a paper towel-lined plate.Season lightly with salt and serve.

- In a large bowl, whisk together egg and milk. Place bread crumbs in a second large bowl. Heat oil in a heavy 12-inch skillet over medium-high heat until oil is hot enough to toast a bread crumb in 30 seconds.
- Toss half the okra in the egg mixture until thoroughly coated (use your hands or, if you must, a spoon). Pick up large handfuls (or slotted spoonfuls) of the okra pieces, letting the excess liquid drip back into the bowl. Transfer okra to the bowl with bread crumbs and toss until coated.

JEN'S DEEP FRIED CAJUN OKRA
My family loves okra! Whether it boiled, fried or mixed in a dish, we love it! This dish has a Southern flavor with a mix with a hint of Cajun. They are great dipped in ranch.

- 1. If using whole fresh okra, wash thoroughly, drain, and cut stems off. You can slice them in half length-wise or slice them into 1/2 inch rounds. Frozen cut okra saves time. Place in a bowl and set aside.
- 2. Heat oil in a large, heavy-bottomed skillet or Dutch oven to 350 degrees F. (You may not need to use this much oil; do not fill the pan more than halfway up the sides with oil.) Get a cookie sheet and line with paper towels. Set aside.
- 3. In a medium bowl, combine cornmeal, flour, garlic powder, Cajun seasoning, black pepper, and salt. Mix well.
- 4. In a separate bowl add buttermilk and hot pepper sauce. Whisk together.
- 5. Dip okra in buttermilk and then dredge in cornmeal-flour mixture to coat well.
- 6. Carefully add okra to the HOT oil and cook until golden brown. (It may be necessary to fry the okra in batches.)
- 7. Remove from oil, drain on paper towels, and then serve immediately with favorite dipping sauce.
CRISPY FRIED OKRA RECIPE

- Place un-cut okra pods in a bowl of cold water. Place 1 to 2 cups plain white cornmeal (not self-rising) in a plastic bag. Drain and discard tip and stem end of okra pod.
