This Broccoli Ramen Salad is savory, sweet, and has the perfect amount of crunch! It's simple to make and has an addictive dressing. It'll be on repeat all summer!

2 (12 ounce) bags broccoli slaw
3 (3.5 ounce) packages ramen noodles ((flavor packets discarded))
3/4 cup roasted cashews
1/2 cup dried cranberries
1/3 cup chopped scallions
1/2 cup olive oil
1/2 teaspoon toasted sesame oil ((see note))
3 tablespoons rice vinegar
1/2 tablespoon soy sauce
1 tablespoon (packed) brown sugar

Steps:

  • Add the dressing ingredients to a jar and shake it well until the sugar dissolves.
  • Using your hands, break the ramen noodles up into smaller pieces. It's ok if some pieces are bigger than others.
  • Add the broccoli slaw, ramen noodles, roasted cashews, dried cranberries, and scallions to a large salad bowl.
  • Give the dressing another shake and pour it over the salad. Toss to coat. I like to give the salad at least 15-20 minutes to let the noodles soften up a bit, but it's up to you how crunchy you want them. You can eat it right away or let them soften up even longer.

2 (3 oz.) packages beef flavor Ramen Noodles
1 (8 oz.) packages broccoli slaw
1 c. sliced almonds
1 c. sunflower seeds
1 bunch green onions, chopped
3/4 c. vegetable or canola oil
1/2 c. granulated sugar
1/3 c. white vinegar
1 tsp. sesame oil

Steps:

  • Crush Ramen Noodles with your hands and place in the bottom of a large bowl. Add slaw; sprinkled with almonds, sunflower seeds, and green onions.
  • In a separate bowl, mix together the flavor packets from the Ramen Noodles with oil, sugar, vinegar, and sesame oil to make the dressing.
  • Pour dressing over slaw mixture; DO NOT STIR.
  • Cover and chill for 24 hours.
  • Toss salad together in bowl when ready to serve.

  • brown walnuts and ramen noodles with 1 tblspoon butter and let cool.
  • combine broccoli, lettuce, and cranraisins with walnuts and ramen noodles and toss in a bowl.
  • combine oil, vinegar, sugar, and soy sauce in a jar and shake vigorously and then toss with salad just before serving.

¼ cup butter
2 (3 ounce) packages Oriental-flavor ramen noodle soup, seasoning packet reserved
½ cup slivered almonds
¼ cup sesame seeds
1 (16 ounce) package broccoli coleslaw mix
½ cup chopped green onion
½ cup salad oil
¼ cup apple cider vinegar
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt butter in a microwave-safe bowl in the microwave. Crush the ramen noodles into small pieces; stir the crushed noodles, almonds, and sesame seeds into the butter. Spread the mixture onto a baking sheet.
  • Bake in the preheated oven until golden brown and crunchy, 8 to 10 minutes; allow to cool completely.
  • Toss together the coleslaw mix and the green onion in a large bowl.
  • Whisk together the salad oil, vinegar, sugar, soy sauce, and reserved seasoning packets in a separate bowl; stir the noodle mixture into the dressing. Pour the dressing over the coleslaw mix and toss to coat.

1 (3 ounce) package uncooked ramen noodles, crushed
1 cup chopped walnuts
1 cup vegetable oil
1 cup white sugar
½ cup red wine vinegar
3 teaspoons soy sauce

2 heads romaine lettuce, chopped
1 bunch broccoli, coarsely chopped

1 red pepper, chopped
1 yellow pepper, chopped
4 scallions, chopped
3/4 cup slivered almonds
3/4 cup sunflower seeds

1/3 cup balsamic vinegar
1/2 cup sugar
1/2 cup oil

Steps:

  • Combine the slaw, peppers, scallions, and nuts in a large bowl.
  • Mix together vinegar, oil, sugar, and the seasoning packet from the ramen mix.

2 heads romaine lettuce
1/2 head broccoli
5 -6 green onions (scallions)
2 packets ramen noodles (any flavor)
1 cup walnut pieces
1/2 cup butter
1 cup vegetable oil
1/2 cup red wine vinegar
1/2 cup sugar
3 -4 tablespoons soy sauce

Steps:

  • Wash romaine and cut into bite size pieces.
  • Roll up in a clean dry towel and refrigerate for several hours.
  • (This makes the lettuce super crisp) Slice the green onion into thin rings.
  • Chop the broccoli, stems and flowers, into small pieces.
  • Break the ramen noodles up into small pieces.
  • (I leave it in the bag and whack it with a kitchen mallet.) Remove flavor envelope from ramen packet and throw away.
  • Melt butter in a large deep skillet.
  • Add ramen noodles and walnuts and stir and cook over medium heat until light brown.
  • Be sure to watch carefully and stir constantly- they will burn easily.
  • Turn out onto a double thickness of paper towels and cool.
  • Put romaine into a LARGE bowl and add broccoli, onions, ramen noodles and walnuts.
  • Toss.
  • Mix dressing ingredients together and add to salad.
  • You make not want to use it all- I don't but some people like"wetter" salads than I do.
  • Use your own taste as a guideline.

1/2 cup slivered almonds
1/2 cup sunflower kernels
2 packages (14 ounces each) coleslaw mix
