Steps:
- 1. To make raspberry filling; In a small saucepan combine gelatin powder and water. Let it swell for 10 minutes. Meantime, in a small saucepan over medium heat, add ingredients, bring to a simmer and cook for 5 minutes. Using an immersion blender, purée raspberry mixture until smooth and sieve mixture over a bowl to remove seeds.
- 2. Dissolve gelatin on low heat and pour over raspberry mixture; stir to combine. Pour the mixture in a 8-inch cake pan lined with plastic wrap, cover with plastic and transfer to the freezer for 2 hours then to the refrigerator for 2 additional hours.
- 3. To make batter; Preheat oven to 350ºF degrees and lightly grease and flour two 9-inch pans. In a mixing bowl, combine flour, baking soda and baking powder; whisk until well mixed. Add cocoa powder and sea salt; whisk and set aside.
- 4. In a bowl of stand mixer combine butter, sugar and vanilla extract; process until mixed. Add eggs one at a time and process until well combined between each addition. Add ½ dry ingredients and half buttermilk; process until just combined. Add the remaining flour mixture, buttermilk and coffee; process until all blended but don't over mix.
- 5. Divide batter into prepared pans and transfer to preheated oven; bake for 40 minutes or until a cake tester inserted in the center comes out clean with just a few crumbs to it.
- 6. Cool in pans for 15 minutes before turning out onto a wire rack to cool completely. When cooled, using a bread knife, level both cake the bottom one with an indent to it for the raspberry jelly.
- 7. To make ganache; In a small saucepan combine gelatin with water and let it sit for 10 minutes. Place chocolate in a medium bowl; set aside.
- 8. In another small saucepan over medium heat, combine sugar, water, cocoa powder and milk. Stir and bring mixture just to a boil; remove from heat.
- 9. Place gelatin/water mixture on low heat and stir until dissolve. Pour gelatin over chocolate and let sit for 5 minutes. Using an immersion blender, process until smooth. Transfer chocolate mixture in a sieve over a bowl and cool to 90 to 95ºF before pouring over the cake.
- 10. To assemble; place 1 cake (with indent in the middle) on a plate sitting over an outside down bowl place in a baking sheet lined with wax paper so the ganache can drip. Place the cool raspberry filling before placing the other cake on top.
- 11. Pour ganache over the cake. With an angled spatula, clean the bottom edges. With fingers, place grated chocolate in the indent between the two cakes and transfer to the fridge for 2 hours. Garnish with fresh raspberries sprinkled with powdered sugar.

DOUBLE CHOCOLATE RASPBERRY CAKE
I make this cake in the dead of winter..its perfect comfort food when the snow is deep and wind is howling outside.

- 1. Preheat oven to 350 with rack at center
- 2. Grease and flour a 12 C bundt pan or use cooking spray with flour Sprinkle the chopped pecans and chocolate chips in the bottom of the pan
- 3. Place the cake mix, pudding mix, sugar, water, oil and eggs in a mixing bowl and blend on low for 1 minute. Scrape down the sides of the bowl and blend at medium for 2 minutes more. The batter will be thick.
- 4. Remove 1 1/4 C of batter and place in a small bowl. Stir in the chocolate syrup and the rasberry jam until well incorporated. Set aside.
- 5. Pour the rest of the batter carefully into the bundt pan and smooth it. Pour the raspberry batter on top and use a butter knife to cut it into the batter below. Smooth the top.
- 6. Carefully tap the pan a couple of times on the counter to force any air bubbles to the surface of the batter
- 7. Put the bundt in the oven and bake for 55 to 60 minutes. Test the cake with wooden skewer..should come out clean
- 8. Run a sharp knife around the upper edge and cool for about 10 minutes. Invert on a wire rack, tap the pan, and slide the cake out onto another wire rack. Let cool completely before glazing.
- 9. Make the Glaze:
- 10. Melt the butter in a small sauce pan over low heat.
- 11. Add cocoa powder and heavy cream, whisk until the mixture thickens..do not boil it.
- 12. Turn off the heat and add the powdered sugar and vanilla..keep whisking until the glaze is smoth and shiny.
- 13. Pour over cake, let cool. Then enjoy!
DOUBLE CHOCOLATE RASPBERRY MOUSSE POPS
A creamy, dreamy dessert perfect for your Valentine (even if that means you eat them all yourself, I won't tell). These mousse pops are made with whipped cream and melted chocolate, then covered in a white chocolate and raspberry puree ganache for a decadent, yet airy treat. Sure to satisfy any sweet tooth. For extra cute points you can use colored candy melts to turn them into BT21 X Line Friend's heart shaped character, TATA :).

- Note: Before beginning, you will want to gather the following supplies: silicone heart cake pop mold, toothpicks, red and yellow candy coloring, wax paper, 1 piping bag or large ziplock bag.
- Place a mixing bowl and whisk attachment in the freezer.
- Put the chocolate chips in a heat safe bowl, and microwave in 30 sec intervals at 50% power, stirring between each interval until smooth and fully melted (it won't take long, so be careful to not over heat the chocolate). Stir in the cubed butter until completely combined. Set aside to cool slightly while working on the other mousse components.
- Whisk the egg yolks in a separate bowl until frothy (about 2 min), and then slowly whisk into the chocolate mixture. If the chocolate mixture is very warm still you will have to temper it by adding a little to the eggs and stirring before adding the rest of the eggs to the chocolate mixture (so it doesn't scramble the eggs).
- Add the sugar, vanilla, and cream to the bowl of your mixer and mix slowly starting on low and working your way up to high for about 3-5 minutes, or until stiff peaks just begin to form.
- Gently fold the whipped cream into the chocolate mixture and transfer to a piping bag. Pipe into each heart cavity, filling to the top, and use a butter knife or icing spatula to scrape off any extra mousse. Insert a popsicle stick, and transfer the molds to the freezer to set (at least 4 hours or overnight). At this time you will also want to place the raspberries in the fridge to thaw overnight.
- To make the raspberry puree, place the thawed raspberries, sugar, and lemon juice in a medium saucepan. Cook the berry mixture on medium low for 10-15 minutes, or until the berries begin to break down.
- Pour the berries through a strainer to remove the seeds. Use a spatula to gently press the berries against the strainer to squeeze out all of the juice, and also swipe the spatula along the bottom of the strainer. Transfer the puree to the refrigerator to chill and thicken. Discard the seeds or use them for a homemade jam.
- Once the pops are set you can shape them to give them more of TATA's asymmetric look. Remove the mousse pops carefully from the molds, and place them on a baking sheet lined with wax paper. Use a sharp knife to carefully trim down the left side of the heart. Return the pops to the freezer while making the ganache.
- Now for the fun part! To make the glaze, place the white chocolate chips in a heat proof bowl and set aside. Place the cream and corn syrup into a second heatproof bowl and microwave for 30 seconds. Pour the hot cream over the chocolate, and allow it to sit for 1-2 minutes before stirring. Continue to heat the chocolate and cream, in the microwave, in 30-second intervals at 50% power, stirring after each set, until the chocolate is fully melted.
- Stir in the fruit puree. The white chocolate chips have a slightly yellow tint that will make the ganache look purple, so to bring it back to TATA's signature bright red add a little red candy coloring until it begins to look red again. The color will develop as it sits, so add just a little at a time (too much will make the ganache taste bitter). You can also add a tiny bit of yellow to brighten it up, if needed. Transfer to a glass measuring cup and re heat for another 30 seconds, so that the ganache is easily pourable.
- Place the mousse pops on a cooling rack over a rimmed baking sheet, and pour the ganache over them completely covering the tops and sides. Transfer the pops back to the freezer (you can use a toothpick to clean up the edges).
- To make TATA's face, place the yellow and dark cocoa candy melts into 2 separate heat proof bowls, and heat them in the microwave in 30 second intervals at 50% power (stirring between each interval until smooth). Use a toothpick dipped in the yellow melts to draw 6 oval shapes onto wax paper for the mouths, and then dip a toothpick into the dark cocoa melts and draw 3 lines each, for the mouth (right in the middle of the yellow), eyebrows, and 2 small circles for the eyes of each mousse pop. Allow the chocolate to set.
- Just before serving, add the faces (I find it easiest to transfer using a toothpick), and enjoy! The mousse pops can either be eaten right from the freezer, or set out for about 10 minutes for a softer texture. Cover and store any leftover pops in the freezer.

HERSHEY'S CHOCOLATE RASPBERRY DESSERT
I cut this recipe out of a magazine. I've never made it, but it looks and sounds amazing! There is a note on the recipe that says you can substitute 1/4 cup raspberry preserves and 1 teaspoon of water for the raspberry-flavored liqueur. It also gives the option of making a Double Raspberry Chocolate Dessert by substituting Hershey's Raspberry Chips for the Semi-Sweet Chocolate Chips. ***Prep time does not include several hours of chilling. And since I have never made this dessert, I had to guess at the prep and cook times.

- Heat oven to 350 degrees. Grease a 13x9x2-inch baking pan.
- Combine flour, sugar, 1/2 cup butter, baking powder and eggs in large bowl; beat until smooth. Add syrup; blend thoroughly. Pour batter into prepared pan.
- Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

- Be sure to cover and refrigerate leftovers.

- Preheat oven to 350 degrees F. Lightly coat 12 muffin cups with cooking spray.
- In a medium bowl, stir together flour, cocoa powder, baking soda, baking powder, and salt. In a small bowl, combine granulated sugar and brown sugar. Set aside.
- In a medium mixing bowl beat butter with an electric mixer for 1 minute. Gradually add sugar mixture and mix until light and fluffy. Add egg and mix well then add in vanilla.
- Alternate adding flour mixture and buttermilk to butter mixture until well combined.
- Divide half of the batter among the prepared muffin cups using approximately 1 rounded tablespoon in the bottom of each muffin well. Add 4 -5 berries to the centre of each muffin, and spoon the remaining batter over berries in muffin cups.
- Bake for 18 to 20 minutes or until a toothpick inserted near the centre comes out clean (turning after 10 minutes to evenly cook). Cool in pans for 5 minutes. Gently remove cupcakes from pans and cool completely on wire racks.
- Prepare Chocolate Glaze (directions below).
- In a small saucepan over low heat, melt butter then add cocoa and 2 tablespoons of water. Cook, stirring constantly, until mixture thickens. DO NOT BOIL. Remove from heat and add in vanilla. Gradually add icing sugar and beat with wire whisk until smooth. Add additional water, 1/2 teaspoon at a time until glaze is of desired consistency, just thin enough to drizzle. This makes about 3/4 cup of glaze, enough for 12 cupcakes.
- Place cupcakes UPSIDE DOWN on a parchment-lined baking sheet. Drizzle glaze over cakes and chill about 20 minutes or until icing is set. If desired, place cakes on individual dessert plates prior to drizzling with the glaze. Garnish cakes with additional raspberries. Makes 12 cupcakes.
- An alternative presentation would be to forego the glaze completely and dust cupcakes with icing sugar just prior to serving.

- Preheat oven to 350°F.
- Combine cake mix, pudding, eggs, 1/2 cup of the rum, water and oil in a large mixing bowl.
- Using an electric mixer, beat at low speed until moistened.
- Beat at medium speed for 2 minutes.
- Stir in 1 cup of chocolate pieces.
- Pour batter into a greased 12-cup Bundt pan.
- Bake 50 to 60 minutes or until cake tests done.
- Cool in pan for 15 minutes.
- Remove from pan and cool on a wire rack.
- Heat raspberry preserves and remaining 1/2 cup of rum.

- Repeat until all the glaze has been absorbed.
- Combine remaining 1 cup of chocolate pieces and shortening.
- Microwave on high for 1 minute or until melted. Stir until smooth.
- Spoon chocolate icing over cake. Let stand 10 minutes.
- Combine vanilla baking bar and 1 tsp water.
- Microwave on high for 30 seconds or until melted.
- Drizzle on top of icing.
