Time 15m

Number Of Ingredients 10

4 white sandwich bread slices
120 g fresh mozzarella or buffalo mozzarella ( sliced)
2 eggs
1 tablespoon milk
80 g flour
80 g panko breadcrumbs
250 ml vegetable frying oil
salt & pepper to taste
2 tablespoon bechamel sauce
2 ham slices

Steps:

  • Cut the crust off from the white sandwich bread slices.
  • Brush the bread with béchamel sauce for the Sicilian version, add a slice of ham for the roman way or leave it plain for the Neapolitan. Add 2 thick mozzarella slices (about 1-inch wide) and close the sandwich.
  • Arrange the flour in a bowl or plate, and dredge the mozzarella sandwich in until fully coated.
  • Beat the eggs and milk in another bowl, season to taste with salt and pepper. Coat the sandwich on all sides with the egg-wash until fully covered.
  • Arrange the breadcrumbs on a plate and coat the sandwich to fully seal the mozzarella inside and avoid leaks during frying process. Repeat the breading process if necessary.
  • Heat the oil a in a deep heavy sauce-pan. Add more oil if needed until is enough to deep-fry the sandwich.
  • Heat over medium-high heat until a deep-fry thermometer reads 350°F/ 170°C.
  • Gently fold the sandwich in and deep-fry 2 mins on each side, or until crispy and golden on both sides.
  • Transfer the sandwich on a plate covered with kitchen paper, allow to cool slightly and serve.

Time 55m

Yield 4 serving(s)

Number Of Ingredients 12

4 slices white bread, crusts removed
1/2 cup milk
9 ounces buffalo mozzarella cheese, cut into 4 x 1/2in thick slices
2 eggs, beaten
2 -3 basil leaves
oil, for deep frying
2 tablespoons extra virgin olive oil
1/2 onion, finely chopped
1 lb tomatoes, quartered
1/2 teaspoon dried oregano
1/2 cup white wine
1 bunch fresh basil

Steps:

  • To make the sauce: heat the olive oil in a pan and fry the onion and garlic for 30-60 seconds.
  • Add the tomatoes to the pan, then the oregano and wine and bring to the boil. Reduce the heat and simmer for 15-20 minutes. Allow to cool slightly.
  • Place the sauce in a food processor or blender and season with salt and pepper. Blend for a few seconds, leaving the mixture a little chunky. Add the basil leaves to the sauce.
  • Cut the bread slices into slightly larger discs than the mozzarella slices. Dip one side of the bread slices into the milk and then place a slice of mozzarella on the dry side with some basil leaves. Season the mozzarella with salt and pepper and make a sandwich with the other slice of bread, milk-soaked side on the outside.
  • Season the eggs with salt and pepper. Coat the sandwiches with the beaten egg.
  • Heat the oil in a deep-fat fryer and when hot deep fry the sandwiches for about 3-4 minutes until golden and crisp on the outside. Drain on kitchen paper
  • To serve: reheat the sauce and spoon the hot sauce onto the plate; place 2 mozzarella sandwiches in the middle and serve straight away.

MOZZARELLA IN CARROZZA (FRIED MOZZARELLA SANDWICHES)

Mozzarella in Carrozza (Fried Mozzarella Sandwiches) image

This Italian snack is essentially a mozzarella stick in sandwich form: Mozzarella cheese tucked inside plush bread, crusted with bread crumbs (use panko for extra crunch) and fried. In parts of Italy, you might also find anchovies, 'nduja or prosciutto in it, or marinara sauce or pesto served alongside for dipping. But gooey cheese in every bite? That's guaranteed: According to the food writer Emiko Davies, it's called mozzarella en carrozza, or mozzarella in carriage, because the strands of melted mozzarella that pull from the sandwich resemble the reins of a horse and carriage. For best results, skip the fresh mozzarella and look for low-moisture mozzarella - the kind found sealed in plastic without liquid in your supermarket's dairy section. And try to set out your ingredients just before you begin: It'll help the process go more smoothly.

Time 10m

Yield 4 servings

Number Of Ingredients 7

3 eggs
1 large garlic clove, minced
Kosher salt and black pepper
1 cup bread crumbs (preferably panko)
8 slices white sandwich bread, crusts removed
1 pound low-moisture mozzarella (not fresh mozzarella), chilled and cut into 1/4-inch slices
Olive oil, for frying

Steps:

  • In a shallow bowl, beat the eggs, then beat in the garlic, season with salt and pepper and beat again to combine. In another shallow bowl, add the breadcrumbs, season with salt and pepper and stir to combine.
  • Top 4 slices of white bread with a single mozzarella slice apiece, and trim the cheese as needed to avoid overhang. Top with the remaining 4 slices of white bread and press down gently.
  • Dip both sides and all the edges of a sandwich in the egg to coat fully, followed by the bread crumbs. Place on a large plate and transfer to the refrigerator to firm up while you continue to work, then repeat with the other sandwiches.
  • In a large skillet, heat 1/4-inch olive oil over medium heat. See if the oil is ready by dropping a few bread crumbs in; they should bubble gently. Working in batches as needed, fry each sandwich, turning once with a slotted spatula or a fork, until the outsides and edges are golden brown and the cheese has melted, 1 to 2 minutes per side. Drain on paper towels. Season with salt, halve diagonally, and serve.

MOZZARELLA STICKS WITH CHILLI TOMATO SAUCE

Mozzarella sticks with chilli tomato sauce image

Make these moreish mozzarella sticks in advance for fuss-free party food. Just pop them in the oven as guests arrive and serve with our chilli tomato sauce

Provided by Anna Glover

Categories     Canapes

Time 55m

Number Of Ingredients 13

30g plain flour
1 egg, beaten
100g dried breadcrumbs
pinch of dried oregano
pinch of garlic granules
250g block firm mozzarella (not in water), cut into 1cm-thick finger-length strips
about 500ml vegetable oil, for frying
1 tbsp olive oil
1-2 red chillies, deseeded and finely chopped
2 garlic cloves, sliced
400g can chopped tomatoes
1 tsp red wine vinegar
1 tsp sugar

Steps:

  • Put the flour, egg and breadcrumbs into three separate bowls, seasoning each. Stir the dried oregano and garlic granules into the breadcrumbs.
  • Coat the mozzarella sticks in the flour, dust off any excess, then dip into the beaten egg. Gently shake to remove the excess egg, then turn in the breadcrumbs until well-coated. Transfer to a baking sheet lined with baking parchment and arrange in a single layer, then freeze for 1 hr until completely solid.
  • To make the dipping sauce, heat the oil in a saucepan, and fry the chillies and garlic for 2-3 mins until fragrant. Tip in the tomatoes, vinegar, sugar and some seasoning. Reduce the heat to a simmer and cook for 12-15 mins until thick and saucy. If you prefer a smooth sauce, blitz with a stick blender. Season to taste - you may need to add a little more sugar, vinegar or salt. Leave to cool. Will keep, covered in the fridge, for up to three days, or the freezer for up to three months.
  • Fill a heavy-based saucepan no more than a third full of oil and heat to 180C, or until a cube of bread sizzles when dropped into the oil, and browns in about 30 seconds. Gently lower in the frozen mozzarella sticks - you'll need to do this in two batches to ensure the temperature remains high - and fry for 2-3 mins until the cheesy middle is melted and the outside is crisp and golden. Drain on kitchen paper. Serve straightaway, or leave to cool. Will keep, covered in the fridge, for up to three days, or the freezer for up to three months.
  • To reheat, heat the oven to 220C/200C fan/gas 7 and bake on a tray for 8-10 mins until heated through. Season and serve with warm dipping sauce.

  • Preheat the oven to 400 degrees Fahrenheit. Slice the bread in half lengthwise, then stack it back together and slice it down the middle to form two large sandwiches, or again to make 4 small. Place the sliced bread on a baking sheet with the cut sides facing up. Bake for 5 minutes, or until warmed through and turning lightly golden around the edges.
  • In the meantime, prepare the creamy basil sauce*: In a food processor, blitz the roughly chopped garlic to chop it more finely. Scrape down the sides, then add the mayo, basil, salt and pepper. Blend until smooth, then set aside.
  • To assemble the sandwiches, lightly drizzle balsamic and olive oil over half of the cut sides of bread. Layer some arugula on top, then weigh it down with rounds of mozzarella. Top with the sliced tomato, then sprinkle the tomato lightly with flaky salt.
  • Spread the basil sauce generously over the cut side of the remaining slices of bread. Place them face down over the tomatoes. Enjoy.
