For the Crust:
1/2 cup pecans (2 ounces)
1 1/2 cups all-purpose flour, divided
1/4 cup granulated sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
1 tablespoon apple cider vinegar
For the Filling:
3/4 cup maple syrup
3 large eggs plus 2 large egg yolks, lightly beaten
1 cup (packed) dark brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 cup heavy cream, room temperature
2 tablespoons bourbon
1/4 teaspoon ground cinnamon
6 tablespoons (3/4 stick) unsalted butter
For Serving:
1 cup chilled heavy cream
1 tablespoon plain whole-fat Greek yogurt
1 vanilla bean, split lengthwise, or 2 teaspoons vanilla extract
Special equipment:
A 9" deep-dish pie plate

Steps:

  • Make the crust:
  • Preheat oven to 350°F. Toast pecans on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, about 10 minutes; let cool.
  • Pulse pecans and 1 Tbsp. flour in a food processor until finely ground. Add granulated sugar, salt, cinnamon, and remaining 1 cup plus 7 Tbsp. flour and pulse to combine. With the machine running, add butter, vinegar, and 2 Tbsp. cold water in a slow, steady stream and mix just until incorporated.
  • Transfer mixture to a large bowl and press with your hands until a dough forms. Form into a 6" disc, then transfer to pie plate and press into bottom and up sides with a flat-bottomed measuring cup. Crimp edge with a floured fork, if desired, and freeze while you prepare the filling.
  • Make the filling and assemble the pie:
  • Position rack in center of oven and preheat to 350°F. Cook maple syrup in a medium saucepan over medium-high heat until reduced to about 1/2 cup, 8-10 minutes.
  • Whisk eggs, brown sugar, flour, and salt in a large bowl until smooth. Whisk in cream, bourbon, cinnamon, and reduced maple syrup until combined.
  • Heat butter over medium in a small saucepan, swirling pan occasionally, until nutty, dark brown, and most of the foam has subsided, about 5 minutes. Immediately whisk into maple syrup mixture.
  • Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is lightly golden, 10-15 minutes. Remove weights, then cover edge with a pie shield or foil to prevent overbrowning. Continue baking until center is golden brown, 5-10 minutes more.
  • Pour filling into crust and bake pie until edge is set but center is still very jiggly, 40-45 minutes. Transfer to a wire rack and let cool at least 2 hours (the center will set as pie cools).
  • Serve the pie:
  • Combine cream and yogurt in a large bowl. Scrape in vanilla seeds and reserve pod for another use, or add vanilla extract. Using an electric mixer on medium-low speed, beat until soft peaks form. Mound whipped cream in center of pie.

4 large whole eggs
1 cup dark corn syrup, plus 2 tbsp
1/2 cup pure maple syrup
2 tablespoons Bourbon or 2 tablespoons dark rum
1 teaspoon pure vanilla extract
1 1/2 cups pecan halves
2 large egg yolks
2 tablespoons heavy cream
whipped cream

Steps:

  • On a lightly floured surface, roll dough to 1/8-inch thick. Transfer to a 9-inch pie tin, leaving a 1/2-inch overhang. Fold overhang under evenly,. Using a paring knife, carefully cut out leaves from scraps of dough. Gently score leaves with the back of the knife to create veins. Place leaves on a baking sheet. Transfer the lined pie tin and leaves to refrigerator. Chill for at least 30 minutes.
  • Heat oven to 400°F In a medum bowl, whisk together sugar, butter, 4 whole eggs, corn syrup, maple syrup, bourbon and vanilla. Fold in half the pecan halves. Pour filling int pie shell; arrange remaining pecan halves on top of pie.
  • Score outer rim of pie. Beat 1 egg yolk, and brush over hatch marks, adhere leaves to the dough in a decorative pattern. Chill the pie for 30 minutes. Mix 2 tablespoons heavy cream with remaining egg yolk brush the egg glaze over the leaves, and transfer to the oven.
  • Bake 15 minutes, then reduce heat to 350°F Bake until knife tip comes out clean, about 1 hour 15 minutes. Serve warm or at room temperature.

1 teaspoon salt
1 teaspoon white sugar
1 cup butter flavored shortening, chilled
⅓ cup ice water
1 tablespoon distilled white vinegar
1 egg, beaten
1 egg white
4 eggs, beaten
¾ cup white sugar
½ cup real maple syrup
½ cup light corn syrup
½ cup dark corn syrup
2 ½ teaspoons vanilla extract
¼ teaspoon salt
1 ¼ cups chopped pecans
⅓ cup butter, melted
2 teaspoons maple syrup

Steps:

  • Sift together flour, 1 teaspoon salt and 1 teaspoon sugar into mixing bowl. Cut in shortening with a pastry blender until mixture resembles cornmeal. Combine water, vinegar and 1 egg; add liquid one tablespoon at a time, sprinkling over flour mixture and tossing with a fork to form soft dough. Shape into three discs. Wrap with plastic wrap. Refrigerate 3 to 24 hours. (Extra pastry may be frozen for later use.)
  • Preheat oven to 350 degrees F (175 degrees C).
  • Line a 9 inch pie plate with pastry. Brush inside of unbaked pie shell with slightly beaten egg white.
  • Mix 3/4 cup sugar, syrups, vanilla and salt with 4 beaten eggs until blended. Stir in pecans and melted butter. Pour filling into pie shell.
  • Bake for 45 to 55 minutes or until center is set. Remove from oven and brush hot pie top with maple syrup. Cool and store in refrigerator.

1 unbaked pastry shell (9 inches)
2 tablespoons butter
6 medium Golden Delicious apples (about 2 pounds), peeled and cut into eighths
1/2 cup packed brown sugar
2 tablespoons cornstarch
1/3 cup maple syrup
1 can (12 ounces) evaporated milk
1 egg yolk, lightly beaten
1 teaspoon vanilla extract
1/2 cup heavy whipping cream
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. , In a skillet, melt butter. Add apples and brown sugar; cook and stir until apples are tender and coated, 15-20 minutes. Cool to room temperature. Spread evenly into shell. , In a saucepan, combine cornstarch and syrup until smooth; gradually add milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; add vanilla. Cool to room temperature without stirring. Pour over apples. Chill until set, about 2 hours. , In a small bowl, beat cream until it begins to thicken. Gradually add sugar and cinnamon; beat until stiff peaks form. Serve with pie. Store in the refrigerator.

1 teaspoon sugar
1/4 cup vegetable shortening
1/4 cup real butter, cut up
1 teaspoon orange zest
2 tablespoons orange juice

1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 (15 ounce) can solid-pack pumpkin
1 (12 ounce) can evaporated milk
2 eggs
1 1/2 teaspoons orange zest
1 beaten egg yolk
1 teaspoon water
1 cup whipping cream
2 tablespoons sugar
2 tablespoons Bourbon

Steps:

  • For crust, mix flour, sugar and salt in medium bowl.
  • Cut in shortening and butter until crumbly.
  • Stir in orange peel and just enough orange juice to form a dough.
  • Shape it in a ball and refrigerate for an hour.
  • Roll dough out between wax paper and fit it into your deep-dish pie plate.
  • Prick randomly with fork.
  • Refrigerate another 20 minutes while you prepare the filling.
  • For filling, mix sugars, cinnamon, ginger, cloves and salt in mixing bowl.
  • Whisk together pumpkin, milk, eggs and orange peel in a seperate bowl.
  • Whisk dry ingredients into wet ingredients and set aside.
  • Make your egg wash by stirring egg yolk and water together.
  • Brush the entire crust with the egg wash and then pour the filling in.
  • Bake about 35- 45 minutes in preheated 375 oven until filling is set.
  • You may want to use foil to cover the crust if it starts getting too dark.
  • Cool pie on rack.
  • For Bourbon Cream, beat cream, sugar and bourbon until soft peaks form.
  • Serve a spoonful of cream on each piece of pie.
