Indulgent deep dish chocolate chip cookie. Buttery, crisp edges and warm, gooey center. Delightful indulgent treat for one person.

2 tablespoons salted butter (, softened)
2 tablespoons brown sugar
1 tablespoon granulated sugar
1 large egg yolk
¼ teaspoon vanilla extract
⅓ cup all-purpose flour
⅛ teaspoon baking soda
⅛ teaspoon salt
¼ cup chocolate chips
2 tablespoons chopped pecans or walnuts

Steps:

  • Heat the oven to 350°F (177°C).
  • Mix together the butter and sugars in a small mixing bowl.
  • Add the egg yolk and the vanilla and continue mixing until combined.
  • Add the flour, baking soda, and salt to the bowl and stir until just combined.
  • Fold in the chocolate chips and chopped nuts.
  • Pour cookie dough into a buttered 10-ounce ramekin or spoon cookie dough onto a cookie sheet.
  • Bake for 22-25 minutes or until the top is golden and the edges of the cookie are set.
  • Remove from the oven and place on a cooling rack to cool for 10 minutes.

You can use your favorite Chocolate Chip Cookie recipe or you could buy some already-made cookie dough to make these deep dish cookies which are baked in 4" ramekins or other small baking dish. Make as many ramekins as you need and then make cookies from the rest. When they are taken out of the oven, let them sit for a few minutes and then top them with a scoop of vanilla ice cream. You could drizzle some hot fudge sauce over the top of the ice cream or dress them up in any way that you want. NOTE: They would not allow me to put in the 4" ramekins but you will need one ramekin for each person. The photo that I submitted is in an oval ramekin and I got them in the dollar store for, you guessed it, $1.00, and they are suitable for the oven.

1 (15 -16 ounce) package refrigerated chocolate chip cookie dough
1 pint vanilla ice cream

Steps:

  • Fill ramekins 1/2" deep with raw cookie dough.
  • Place ramekins on a cookie sheet and put in middle rack of oven.
  • Bake 375 degrees for 12-18 minutes or till top starts to turn golden brown (you want them slightly underdone, but not too doughy).
  • Remove from oven and place each ramekin on a pretty napkin so that you can hold the hot dish as you eat.
  • Top with a scoop of ice cream and enjoy!

  • Put first seven ingredients in a mug and stir with a fork until smooth. Pour into a four inch ramekin or leave in the mug. Drop chocolate chips and fold into mug. If using ramekin, distribute chips evenly over top and slightly press into cookie. Microwave for one minute, enjoy with a cup of unsweetened almond milk -- Yummy!
