DEEP-DISH CHICKEN PIZZA

1½ teaspoons active dry yeast
1/2 teaspoon caster (superfine) sugar
335 g (11¾ oz/2¼ cups) plain (all-purpose) flour, approximately
1 teaspoon sea salt
2 tablespoons finely grated parmesan cheese
1 tablespoon olive oil

Steps:

  • 1. Combine the yeast, sugar and 250 ml (9 fl oz/1 cup) lukewarm water in a small bowl and leave in a warm place for 10 minutes, or until foamy. 2. Put the flour and salt in a large bowl, then stir in the parmesan, yeast mixture and oil. Turn out onto a lightly floured surface and knead for 5 minutes, or until the dough is smooth and elastic; if the dough is sticky you may need to add a little extra flour, but don't add too much or the dough will be tough. Place the dough in an oiled bowl, then cover and leave in a warm place for 1 hour, until the dough has doubled in size. 3. Meanwhile, preheat the oven to 220°C (425°F/Gas 7). Lightly oil a round 28 cm (11¼ inch) baking tin that is at least 2.5 cm (1 inch) deep. 4. Turn the dough out onto a lightly floured surface and knead briefly until smooth. Roll the dough out until large enough to cover the base and side of the tin; the dough will be fairly thick. Press the sides of the dough into the tin to fit. 5. Mix together the passata and sugar and spread over the dough. Top with the chicken, basil, capsicum, bacon and bocconcini, then bake for 25-30 minutes, or until the dough is golden brown. 6. Sprinkle with extra basil, cut into wedges and serve immediately, drizzled with a little olive oil if desired.

True Chicago-Style Deep-Dish Pizza image

1 teaspoon granulated sugar
1 packet (2 1/4 teaspoons) active dry yeast
18 ounces all-purpose flour (about 3 1/2 cups)
2 teaspoons fine sea salt
1/8 teaspoon cream of tartar
1/2 cup plus 3 tablespoons corn oil, plus additional for oiling the bowl
1 tablespoon melted unsalted butter
12 ounces deli sliced part skim mozzarella
1 pound bulk Italian sausage
8 ounces thinly sliced pepperoni
One 28-ounce can whole San Marzano tomatoes, crushed by hand
Grated Parmesan, for topping and garnish

Steps:

  • Mix sugar, yeast and 11 ounces room temperature water (about 80 degrees) in a bowl and let bloom for 15 minutes. Combine flour, salt and cream of tartar in the bowl of a stand mixer. Once yeast has bloomed, add to dry ingredients along with corn oil. Gently combine with a rubber spatula until a rough ball is formed.
  • Knead on low speed with the dough hook for 90 seconds. Transfer to a lightly oiled bowl and proof until doubled in size, about 6 hours. Punch down and let dough settle for 15 more minutes.
  • Position an oven rack in the middle of the oven and preheat to 450 degrees F.
  • Coat bottom and sides of a 12-inch cake pan or traditional Chicago style pizza pan with melted butter. Using your hands, spread out about three-quarters of the dough across the bottom and up the sides of the pan (save the remainder for another use). Cover entire bottom in mozzarella, all the way up to the edge. Cover half with a thin, even layer of raw sausage. Cover the other half with the pepperoni. Top with a couple handfuls of crushed tomatoes. Spread out with hands to the edge. Sprinkle top evenly with grated Parm.
  • Bake, rotating halfway through, until golden around the edge, about 25 minutes. Let rest for about 5 minutes, then either gently lift pizza out of pan or just cut your slice out of the pan like a pie!

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
2 tablespoons olive oil, divided
1/2 pound sliced fresh mushrooms
1 large sweet red pepper, cut into strips
1 large green pepper, cut into strips
1 medium onion, sliced
1/2 teaspoon Italian seasoning
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1 jar (14 ounces) pizza sauce
2 cups shredded part-skim mozzarella cheese
1 cup grated Parmesan cheese

Steps:

  • Prepare roll mix according to package directions. Meanwhile, in a large skillet over medium heat, cook chicken in 1 tablespoon oil until no longer pink. Remove and keep warm., In the same skillet, saute the mushrooms, peppers, onion and seasonings in remaining oil until vegetables are tender. Return chicken to the pan., Roll dough into a 17x12-in. rectangle. Transfer to a greased 15x10x1-in. baking pan; build up edges slightly. Spread sauce over dough. Top with chicken mixture and cheeses., Wrap and freeze for up to 2 months or bake at 375° for 25-30 minutes or until crust and cheeses are lightly browned. Let stand for 10 minutes before serving., To use frozen pizza: Thaw in the refrigerator. Uncover and bake at 375° for 25-30 minutes or until golden brown. Let stand for 10 minutes before serving.

1 store bought pizza dough
Cornmeal or flour, for dough
2 tablespoons extra-virgin olive oil (2 turns of the pan plus a drizzle)
1 pound ground chicken
3 cloves garlic, chopped
1 small onion, chopped
Salt and pepper
Handful flat-leaf parsley, chopped
Couple pinches crushed red pepper flakes
Couple pinches dried oregano
1 (8-ounce) can tomato sauce
1 cup grated Parmigiano-Reggiano
1 1/2 cups shredded provolone
5 to 6 leaves basil, torn or shredded

Steps:

  • Preheat oven to 425 degrees F.
  • Coat hands and work surface with a little cornmeal or flour. Using your hand or a rolling pin, form a 14-inch round pizza. Place pizza on a baking sheet or pizza stone and poke the top with a few holes. Drizzle a little bit of extra-virgin olive oil down over the dough and place in oven. Bake 10 minutes.
  • Meanwhile, heat a deep skillet over medium-high heat with 2 tablespoons of extra-virgin olive oil. Add meat and break it up with a wooden spoon. To browned meat, add garlic and onions, then season with salt and pepper. Cook together 5 to 6 minutes then add parsley, red pepper flakes, oregano and the tomatoes to the pan. Heat the sauce through.
  • Remove pizza from oven after 10 minutes and top with sauce and cheeses. Return to oven and bake until golden and bubbly, another 10 to12 minutes. Top the pizza with basil, cut and serve.

Chicago Style Deep Dish Pizza Dough, recipe follows
1 green bell pepper, cored and cut into thin rings
2 tablespoons olive oil
1 tablespoon chopped fresh garlic
1 yellow onion, cut into thin rings
1 cup thinly sliced black olives
2 teaspoons chopped fresh basil
1 pound crumbled hot Italian sausage
1 teaspoon chopped fresh oregano
1 cup grated Parmesan
1/4 teaspoon fennel seeds
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
1 (28-ounce) can plum tomatoes, coarsely crushed
1 tablespoon dry red wine
1 teaspoon sugar
1 tablespoon extra-virgin olive oil
1 pound mozzarella cheese, sliced
8 ounces pepperoni, thinly sliced
1 1/2 cups warm water (about 110 degrees F)
1 (1/4-ounce) packages active dry yeast
1 teaspoon sugar
3 1/2 cups all-purpose flour
1/2 cup semolina flour
1/2 cup vegetable oil, plus 2 teaspoons to grease bowl
1 teaspoon salt

Steps:

  • While the dough is rising, make the tomato sauce. In a medium saucepan, heat the oil over medium-high heat. Add the garlic and cook, stirring, for 30 seconds. Add the herbs, seeds, salt, and black and red peppers, and cook, stirring, for 30 seconds. Add the tomatoes, wine and sugar, and bring to a boil. Lower the heat and simmer, stirring occasionally, until thickened, 20 to 30 minutes. Remove from the heat and let cool completely before using.
  • Preheat the oven to 475 degrees F.
  • Oil 2 seasoned 12-inch round deep-dish pizza pans with the extra-virgin olive oil. Press 1 piece of dough into each pan, pressing to the edge and stretching about 1 1/2 inches up the sides. Let rest for 5 minutes.
  • Layer the mozzarella cheese all over the bottom of the pies. Top each with half of the pepperoni, mushrooms, bell pepper rings, onions, black olives and sausage. Ladle the sauce evenly over each pizza and top with Parmesan.
  • Bake until the top is golden and the cheese is bubbly and the crust is golden brown, about 30 minutes. Remove from the oven, slice and serve hot.
  • In a large bowl, combine the water, yeast, and sugar and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour, the semolina, 1/2 cup of the oil, and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky.
  • Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes. Oil a large mixing bowl with the remaining 2 teaspoons oil.
  • Place the dough in the bowl and turn to oil all sides. Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours.
  • Divide into 2 equal portions and use as directed.

DEEP DISH CHICKEN-FETA PIZZA

I've made this pizza twice and have really enjoyed it. It takes a little preparation, but to me it was worth it. I'm not big on pepperoni pizza so my chicken adaption worked well for me. Hopefully it'll work for you as well.

1 envelope active dry yeast
1 cup water
3 cups all-purpose flour
2 teaspoons salt
2 1/2 teaspoons olive oil
1 -2 boneless skinless chicken breast
1 packet italian seasoning, marinade
bottled pizza sauce
mozzarella cheese
reg. feta cheese
parmesan cheese

Steps:

  • For the dough: In a sm bowl, dissolve yeast in warm water.
  • In a separate bowl combine flour and salt.
  • Add yeast mixture and oil and mix thoroughly until dough forms in a ball.
  • Place dough ona well-floured board and kneed until smooth; about ten min.
  • Dust a lg bowl lightly w/ flour and place dough in it.
  • Cover w/ plastic wrap.
  • Let dough rise for about an hr.
  • or until doubled in size.
  • (You may try putting the dough into a warmed oven. If you do this, make sure that the oven is warm and turned off when you put the dough in. Also make sure that you put a little oil in the bowl and roll the dough around in it to prevent it from getting har) Once doubled, punch the dough down and w/ a rolling pin, roll out until about one inch thick.
  • Place the dough in well greased pie pan and fold the edges over.
  • (Or you can cook the it like a regular pizza. I've tried both ways and both have been equally good) For the pizza: Marinate the chicken in the Italian seasonings as the directions on the packet tell you to.
  • (or use your own Italian marinade) Cook the chicken (I use my George Foreman Grill) until no longer pink.
  • Cut the chicken into strips or chuncks.
  • Spread the pizza sauce on the dough and then cover with enough mozz.
  • cheese.
  • Next add the feta cheese; as much as you feel comfortable with.
  • Top with the chicken pieces and sprinkle with a little parm.
  • cheese and dried Italian seasoning (opt.) Pop into the oven at about 400 degrees for around 20-25 min.
  • Check periodically for doneness.
  • Enjoy!

I got this recipe from Jeff Smith, The Frugal Gourmet back in 1987. He made this recipe and ran it by Pizzeria Uno in Chicago and they smiled and nodded "It's almost as good as ours." This is easy, no roll recipe.

2 (1/4 ounce) packages quick-rising yeast
2 cups tepid water (90 degrees)
1/2 cup vegetable oil
4 tablespoons olive oil
1/2 cup cornmeal
5 1/2 cups flour
1/3 lb sliced mozzarella cheese
2 cups canned plum tomatoes, drained and squished
1 teaspoon basil leaves
1 teaspoon oregano
2 garlic cloves, peeled and crushed
3 tablespoons grated parmesan cheese, for topping
3 tablespoons olive oil

Steps:

  • In the bowl of your electric mixer- KitchenAid is perfect for this- dissolve the yeast in the water.
  • Add the oils, cornmeal, and 3 cups of the flour.
  • Beat for 10 minutes with the mixer.
  • Add the dough hook and mix in the additional 2½ cups flour.
  • Knead for several minutes with the machine.
  • It is hard to do this by hand since the dough is very rich and moist.
  • Pour out the dough on a plastic countertop and cover with a very large metal bowl.
  • Allow to rise double in bulk.
  • Punch down and allow to rise again.
  • Punch down a second time and you are ready to make your pizza.
  • Oil round cake pans or deep dish pizza pan.
  • Put a bit of dough in each and push it out to the edges, using your fingers.
  • Put in enough dough so that you can run the crust right up the side of the pan.
  • Try to make it approximately 1/8" thick throughout the pan.
  • The filling for 9 or 10 inch pan:.
  • Place the cheese in tilelike layers on the bottom of the pie.
  • Next put in the tomatoes and the basil, oregano, garlic and salt- reserve the Parmesan cheese for the top.
  • Drizzle the olive oil over the top of the pie and bake.
  • Additional variations: BEFORE you put on the Parmesan cheese and olive oil drizzle you might like to add any or all of the following:.
  • Italian Sausage- hot or mild.
  • Yellow Onions- peeled and sliced or diced.
  • Pepperoni- sliced thin.
  • Mushrooms- sliced.
  • Green Sweet Bell Peppers- cored and sliced thin.
  • Sliced Black Olives.
  • Very Thinly Sliced Ham or Canadian Bacon.
  • Put any or all of these on your pie and then top with the Parmesan and the olive oil.
  • Bake the pie in 475º oven until the top is golden and gooey and the crust a light golden brown.
  • This should take about 35-40 minutes.

  • layer peperoni on paper towels and microwave approximately 1 min 10 seconds depending on your microwave to help remove excess grease.
  • add sauce and cheese and any toppings you want then place pizzas in oven and heat oven to 400 degrees as the temperature rises this will give the pizza dough oven spring and allow the dough to rise creating the deep dish pizza like pizza hut.
  • cook pizza at 400 degrees for approximately 20 to 30 minuets or until.
  • done then slice and eat. have fun and enjoy.

2 1/4 teaspoons instant dry yeast (1 packet)
3 1/2 cups all-purpose flour, plus more for kneading the dough
1/2 cup fine cornmeal
1/2 teaspoon kosher salt
1/4 cup extra-virgin olive oil, plus more for the bowl and pan
4 ounces provolone cheese, sliced
4 ounces mozzarella cheese, sliced

Steps:

  • Pour 1 cup plus 3 tablespoons warm (90-110 degree F) water into a bowl, then stir in the sugar and yeast.

  • Set aside and let rise 10 minutes.
  • Brush crust lightly with olive oil and add toppings.
