Steps:
- Beat egg yolks until thick and light-yellow colored.
- Beat in almond extract.
- Beat egg whites until stiff.
- Continue beating adding salt and sugar, until whites are glossy and very stiff.
- Fold egg yolks into egg whites.
- Fold in sifted flour and baking powder.
- Drop batter by the tablespoonfuls onto an ungreased cookie sheet forming fingers about 1x3in.
- Bake in a 350F oven for 10 minutes.
- Remove from tray immediately and cool.

LADY FINGERS
This recipe is wonderful. It's been passed through my family for generations. I mainly use them in my homemade Tiramisu, but my grandmother would make them for tea time. Whether you are making them as part of a recipe or planning on having them by themselves, these lady fingers will melt in your mouth.

- Preheat oven to 350 degrees F. Line 2 average sized baking sheets with parchment paper. You must use parchment paper and not use butter or shortening or spray, it will still stick to your pan. Mark parallel lines across the width of the parchment about 4 inches apart.
- In a medium sized mixing bowl, beat egg yolks and sugar on medium-high speed until the mixture is thick, pale yellow and has tripled in volume (about 8 minute). In a separate bowl, beat egg whites until stiff peaks have formed. Carefully fold egg whites, flour, salt and almond extract into the yolk and sugar mixture until everything is completely incorporated and mixture is smooth.
- Fill a large pastry bag with the mixture. Cut tip of pastry bag making the tip 3/4 inch. Pipe fingers about 4 1/2 inches in length onto the baking sheet, using your pre-drawn lines as a guide. Bake in oven for 15 - 18 minutes, or just until firm on the outside and soft in the center. After removing from oven, while still warm, lightly dust your lady fingers with powdered sugar.
- Serving size = 2 lady fingers. One serving = 1 WW point.

My grandmother gave me this recipe. I made it for my husbands family get together. Ever since then I have been asked to make this every time we have a family reunion or holiday.

- Preheat oven to 300 degrees.
- Cream 2 sticks of butter.
- Add 1/4 cup of powdered sugar, 2 cups all purpose flour, 2 tablespoons vanilla extract, and 1 1/3 cups of chopped pecans.
- Roll into a ball or lengthwise about the size of a finger.
- Bake on greased cookie sheet in preheated oven for 20-25 minute.
- Cool for 1 minute then roll in powdered sugar.
- Enjoy!

Steps:
- Preheat oven to 375.
- Using an electric mixer with the whisk attachment, whip the egg whites, salt, and cream of tartar on high speed until soft peaks form.
- Gradually add 1/4 cup sugar and beat until stiff.
- In a separate bowl, beat egg yolks, vanilla and remaining 1/2 cup sugar until thick.
- Stir in flour, cocoa, using a rubber spatula.
- GENTLY fold egg whites into flour mixture.
- Fill a pastry bag with a plain open tip with cookie batter.
- Pipe batter onto a parchment lined cookie sheet, making 3 inch ladyfingers.
- Space cookies 1 inch apart on cookie sheets.
- Bake immediately for 10- 12 minutes, or until lightly browned.
- Remove cookie sheet from oven.
- Cool cookies on parchment paper.
- When cool, use a metal spatula to carefully remove ladyfingers from the parchment.
- Store cooled cookies in an airtight container to retain softness.

- Cream together butter, 1 cup sugar, and vanilla; beat in egg yolk.
- Stir together flour, baking powder, and salt, and add this mixture to other mixture; mix well.
- Stir in 1/3 cup of nuts.
- Pat into a greased 11"x7 1/2"x1 1/2" baking pan.
- Bake at 325F for 15 minutes.
- Cool for 5 minutes.
- Beat egg white until soft peaks form, and gradually add remaining 1/4 cup sugar, beating to stiff peaks.
- Fold in remaining nuts.

Not for weight watchers this one... This recipe elongs to the northern Indian state of Uttar Pradesh, and is eaten with phulkas/chapaties. This vegetable has to be cooked very carefully. Adding water while cooking will spoil the whole vegetable. Choose small okra for this as it is cooked whole.

- Clean, wash and wipe lady fingers absolutely dry. Remove the stem. Cut a slit lenghtwise and keep aside. Remember not to slice it through.
- Mix all the powders and salt.
- Stuff the lady fingers/okra with this masala. Keep aside the left-over masala.
- Heat oil in a kadahi. Add sliced onions and cook for till light brown.
- Add stuffed lady fingers/okra. Cook covered on low heat. Stir only once or twice.
- Add rest of the dry masala when lady finger/okra is almost cooked.
- Cook covered for some more time on very low heat till lady fingers/okra are fully cooked and tender.
- NOTE: DO NOT ADD ANY WATER TO THIS VEGETABLE !

My family love these cookies! We only get to eat them on Christmas though, in spanish we call this cookies 'deditos de nuez'. This recipe it's delicious, has few ingredients and it's very easy to make. Greetings from Mexico. =)

Steps:
- Mix the margarine bars. It's important to use softened margarine otherwise the dough will be too sticky.
- Slowly add the flour, mix until it's almost well combined, let a bit of flour aside to roll the dough later and to add to the cookies sheet if it's needed.
- Add the sugar and mix until well combined.
- Add the pecans and mix well. Roll the dough if needed, it shouldn't be sticky at this point.
- Pre-heat the oven to 180ºC-220ºC.
- Start making the fingers, size depends on preference.
- Bake for 30-40 minutes.
- Let them cool down a bit and roll in the sugar and cinnamon mix while the cookies are still warm.
- Enjoy!
