Cinnamon Spice Upside Down Apple Cake image

This delicious upside down apple cake has a decadent brown sugar caramel and apple cinnamon topping and is the perfect way to use up some apples!

1/2 cup melted salted butter
1 cup packed brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon allspice
4 cups thinly sliced apples ( peel and core them first)
1 cup butter (soft & at room temp)
1/2 cup brown sugar (packed)
1 cup white sugar
4 large eggs
1 tablespoon vanilla extract
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup grated apples (peel and core them first, measure the grated apple packed into the measuring cup. )

Steps:

  • Prepare a 13 inch x 9 inch pan by greasing the sides then pouring the melted butter into the bottom.
  • Mix together the brown sugar, cinnamon and allspice.
  • Sprinkle the brown sugar mixture evenly over the melted butter.
  • Arrange the apple slices in an even layer on top of the sugar/butter mixture.
  • Cream your butter and sugars together, then beat in the eggs, one at a time, until thoroughly incorporated and the mixture is light and fluffy. Mix in the vanilla.
  • Whisk together your dry ingredients. Beat into the wet ingredients until combined. Mix in the shredded apples until spread throughout the batter.
  • Gently spread the batter over top of the apple mixture.
  • Bake in a 350 degree oven for 40-50 minutes, until it's golden brown and a knife inserted comes out clean. Remove and let sit for 5 minutes,
  • One you can touch the pan safely, run a knife along the edges of the pan to loosen the edges, then flip onto a large platter or sheet pan.

4-5 honey crisp apples, peeled and sliced thin
5 tbsp sugar
1 tbsp cinnamon
4 eggs
2 cups sugar
1 cup vegetable oil
3 cups all-purpose flour, sifted
1 tbsp baking powder
2 ½ tsp pure vanilla extract
½ cup orange juice (no pulp)

Steps:

  • Combine the sliced apples with the sugar and cinnamon in a large bowl. Mix well to incorporate.
  • Let sit while you make the cake batter.
  • Preheat the oven to 350°F. Prepare a tube pan by greasing it with butter and then dusting it with flour. Tilt the pan around so that the flour coats the entire interior. Shake off any excess flour.
  • Beat the eggs in a large mixing bowl. Add the sugar and whisk until smooth. Whisk in the vegetable oil.
  • Whisk in the sifted flour and baking powder until just combined. Stir in the vanilla and orange juice.
  • Pour half of the batter into the bottom of the tube pan. Spread half of the apple mixture over top the first layer of the batter.
  • Pour the rest of the batter into the pan, and then add the remaining apples over top. Press the apples slightly into the batter. Bake for 1 to 1 ½ hours, or until a toothpick comes out clean (or if you you'd like an extra gooey cake, pull it out of the oven a little earlier).
  • Let the cake cool in the pan slightly. Remove the outer layer of the pan, keeping the "tube" intact. Serve slices warm or at room temperature.

1 cup granulated sugar

2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder

1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)

Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

¼ cup orange juice
1 tablespoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
  • Mix cinnamon, 3/4 cup of sugar, and apples in a bowl; set aside. Combine flour, salt, and baking powder in a bowl. Beat the eggs and 2 cups of sugar with an electric mixer until fluffy. Pour in the flour mixture alternately with the oil. Beat in the orange juice and vanilla until smooth and thoroughly mixed. Pour half of the batter into the prepared pan. Layer half of the apples on top. Pour the remaining batter over, then finish by topping with the rest of the apples.

Steps:

  • Preheat oven to 350 degrees.

1/2 cup butter, softened
2 cups sugar
1/2 teaspoon vanilla extract
2 large eggs, room temperature
2 cups all-purpose flour

6 cups chopped peeled tart apples
BUTTERSCOTCH SAUCE:
1/2 cup packed brown sugar
1/4 cup butter, cubed
1/2 cup heavy whipping cream

Steps:

  • In a large bowl, cream the butter, sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff). Stir in apples until well combined., Spread into a greased 13x9-in. baking dish. Bake at 350° for 40-45 minutes or until top is lightly browned and springs back when lightly touched. 2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup milk
1 cup boiling water
1/2 cup vegetable oil
1 tablespoon vanilla
2 large eggs
1 3/4 cups powdered sugar
3 tablespoons unsalted butter, at room temperature
4 1/2 ounces bittersweet chocolate, melted
1/2 cup sour cream

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray two 9-inch cake pans with nonstick cooking spray.
  • Combine the flour, granulated sugar, cocoa powder, baking soda, baking powder and salt in the bowl of a stand mixer and mix on low until well combined (the mixture will be one uniform color). With the machine running on low, add the milk, boiling water, vegetable oil, vanilla and eggs. Mix on high, scraping down the sides as needed, until well combined and the mixture has air bubbles, about 1 minute.
  • Divide the batter between the prepared cake pans and bake until a knife inserted in the center comes out clean, about 40 minutes. Let cool about 10 minutes in the pans. Run a thin knife around the edge of each cake, then invert the cakes onto a rack and let cool completely, 20 to 30 minutes.
  • Using a serrated knife, cut a small portion from the top of each cake to completely flatten it. Save the trimmings for another use.
  • For the frosting: When ready to assemble the cake, combine the powdered sugar and butter in a food processor and pulse until well combined. Add the chocolate and continue to pulse, scraping down the sides as needed. Add the sour cream and process until very smooth, about 1 minute.
  • Place one cake layer on a platter and spread half of the frosting on top. Flip over the second cake layer, making sure the flattened side is facing the bottom, and place on top of the first cake layer. Spread the remaining frosting to cover only the top of the cake (leave the sides without frosting). Serve.

4 (1 ounce) squares unsweetened chocolate
1 ½ cups butter, melted
1 ¾ cups white sugar
½ cup water
7 eggs
2 cups whipped cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch round pan and line bottom with parchment paper.
  • Chop chocolate squares and place in a large bowl with chocolate chips. Add melted butter. Heat water and 1 1/2 cups sugar in a saucepan until boiling, then pour over chocolate. Stir until smooth.
  • In a separate bowl, whip eggs with remaining 1/4 cup sugar until thick. Fold into chocolate mixture. Pour batter into 10 inch pan.
  • Place 10 inch pan on a cookie sheet in the oven and fill the cookie sheet with water.
  • Bake at 350 degrees F (175 degrees C) for 40 to 50 minutes. Remove from oven. Cool and refrigerate for several hours. Be extremely careful not to burn yourself on the hot water when removing the sheet pan from the oven.
  • Dip the pan in hot water to remove cooled cake. Garnish with whipped cream and serve.

Steps:
