1 red onion (, chopped)
1 red capsicum/bell pepper (, washed, deseeded and sliced)
1 yellow/orange capsicum/bell pepper (, washed, deseeded and sliced)
500 g | 1lb boneless (, skinless chicken thigh fillets, cubed or sliced)
1 x 310g | 10oz can corn kernels (, washed and drained)
1 tablespoon vegetable stock powder
1 teaspoon ground cumin
1 teaspoon minced garlic
1 teaspoon sweet paprika
Salt to season ((only if needed to your tastes))
1 can condensed tomato soup or enchilada sauce
2 cups grated light/low fat Mozzarella cheese (, divided)
5 regular sized flour tortillas cut in half to make 10 pieces
1 stem finely chopped shallots/green onions (, chopped)
a handful of fresh chopped cilantro/coriander ((optional), shredded)

Steps:

  • Preheat oven to 200C | 390F.
  • Pan fry onion and capsicums/peppers in on a nonstick pan/skillet until onion becomes transparent. Add the chicken and fry until browned. Pour the tomato soup/sauce over the chicken, reduce heat, cover pan and allow to simmer until chicken begins to soften (about 20 minutes). Add corn, stock powder, cumin, garlic and paprika, and stir through mixture.
  • Once chicken is cooked, begin to layer your enchilada bake!

4-1/2 cups shredded rotisserie chicken
1 can (28 ounces) green enchilada sauce
1-1/4 cups sour cream
9 corn tortillas (6 inches), cut into 1-1/2-inch pieces
4 cups shredded Monterey Jack cheese
Fresh minced parsley, optional

Steps:

  • Preheat oven to 375°. In a greased 13x9-in. baking dish, layer half of each of the following: chicken, enchilada sauce, sour cream, tortillas and cheese. Repeat layers., Bake, covered, 40 minutes. Uncover; bake until bubbly, about 10 minutes longer. Let stand 15 minutes before serving. If desired, sprinkle with parsley. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165° If desired, sprinkle with parsley.

2 cups prepared enchilada sauce
9 corn tortillas (6-inch)
2 cups shredded or chopped cooked chicken
2 cups shredded Mexican cheese blend (about 8 ounces)

Steps:

  • Heat the oven to 350 degrees F. Spread 1/4 cup enchilada sauce in the bottom of a 9-inch pie plate.
  • Pour the remaining enchilada sauce into a shallow dish. Dip 3 tortillas into the enchilada sauce and turn to coat. Line the pie plate with the coated tortillas, overlapping as needed. Top with half the chicken and 1/2 cup cheese. Repeat the layers. Coat the remaining tortillas with the enchilada sauce and place on top. Spread with the remaining enchilada sauce.
  • Bake for 25 minutes or until the filling is hot and bubbling. Top with the remaining cheese and bake until the cheese is melted.

1 2/3 ounces dry enchilada mix
6 ounces canned tomato paste
8 cups water, divided
2 tablespoons canola oil
1 cup onion, chopped
1/2 cup green pepper, chopped
1 garlic clove
1 1/2 cups yellow cornmeal
1 spray nonstick cooking spray
15 ounces canned black beans, drained and rinsed
15 ounces canned corn, drained and rinsed
2 cups cooked boneless skinless chicken breasts, diced
1 1/2 cups fat-free cheddar cheese, shredded

Steps:

  • Preheat oven to 350. Prepare enchilada sauce according to package directions using tomato paste and 3 cups of water. (You will end up with 3 cups of sauce.).
  • Heat oil in a large saucepan over medium heat. Add onion, pepper, and garlic. Cook stirring until translucent, about 5 minutes. Remove 1 cup of onion mixture and place in a large mixing bowl; set aside. Stir 3 cups of water into remaining onion mixture and bring to a boil.
  • Meanwhile, add cornmeal to remaining 2 cups of water in a medium bowl and stir to combine. Gradually, add cornmeal mixture to boiling water-onion mixture. Cook over low heat stirring constantly until cornmeal is thickened, about 4-6 minutes.
  • Coat a 9x13 inch glass baking dish with cooking spray. Spread cornmeal mixture evenly over bottom of dish.
  • Spoon beans, corn, and chicken into reserved onion mixture, combine thoroughly.
  • Spread half of enchilada sauce over cornmeal layer. Top with all of bean mixture and then remaining enchilada sauce. Sprinkle with cheese. bake until heated through and cheese is melted, about 45 minutes. Slice into 8 pieces and serve.
  • Note; This recipe is Saucy. For a firmer consistency, reduce the amount of enchilada sauce by 1/2.).

3/4 cup sour cream
4 tablespoons chopped pickled jalapeno peppers

Steps:

  • Mix first 5 ingredients together.
  • Fill each tortilla with 1/10th of the mix, roll up and place seam side down in baking dish.
  • Sprinkle the two cups of cheese over and bake in moderate oven until brown and well heated through.
  • Nice served with Salsa over the top.

This is my way of making a rich & creamy Green Chili & Corn Enchilada bake...its almost "fundido" style wtih the Queso Asadero. Enjoy!

16 (6 inch) corn tortillas
3/4 cup asadero cheese, shredded (you can substitute with Monterrey Jack if you can't find it)
1/2 cup cheddar cheese, shredded
1/2 cup requeson cheese, you can substitute with Ricotta
2 tablespoons butter, melted
1/4 cup sour cream
1/4 cup cream cheese, softened
1/2 cup red onion, finely minced
2 garlic cloves, finely minced
2 teaspoons Mexican oregano, dried
2 cups chicken, shredded rotisserie or 2 cups self roasted chicken
1 (15 ounce) can corn, drained
1 -2 cup green chili, roasted, seeded, peeled, and sliced lengthwise into thin strips
4 scallions, cleaned, trimmed and sliced
1/4 cup cilantro, roughly chopped
1 lb tomatillo, husks removed and sliced in half
1 large red onion, quartered
1 lb green chili, New Mexico fresh, washed
4 garlic cloves
1/2 teaspoon oregano, dried
1/2 teaspoon cumin, ground
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons honey

Steps:

  • To make the sauce:.
  • Roast tomatillos, onion, green chilis, and garlic together in a 425 degree oven until charred and softened. Remove the skin, seeds, and stems from the green chilis.
  • Place all ingredients in a blender and puree. If needed, season with additional salt/pepper.
  • To make the Enchilada Bake:.
  • In a bowl, combine Chicken, corn, onion, garlic, sour cream, and cream cheese in a bowl with a bit of salt and pepper (to season) and mix well.
  • In a separate bowl, mix together 1/4 cup of Cheddar, 1/2 cup Queso Asadero, butter and Requeson Cheeses with the oregano and a pinch of salt & pepper to season.
  • Spray the bottom and sides of a casserole pan with non-stick cooking spray.
  • Scoop a thin layer of the green sauce on the bottom of the pan and layer the tortillas. I often cut the tortillas to ensure that I get good coverage with little waste.
  • Spread some of the Cheese Mixture and then the chicken/corn mixture on to the first tortilla layer. Add some of the green chilis lengthwise, ensuring that every bite will have some fresh roasted green chili.
  • Cover with a layer of tortillas and more Green Sauce.
  • Repeat the layering until all ingredients are gone and/or the casserole pan is full.
  • Top with a last layer of tortillas, green chili sauce and the reserved cheese.
  • Bake at 350 degrees for about 15-20 minutes until heated, bubbly, and yummy.
  • Serve by cutting into squares and topping with a sprinkle of fresh scallions and cilantro.

This recipe was made from leftovers and has been requested again ALREADY by Malcolm, my husband! Cooked chicken is mixed with smoky, hot chorizo sausage and folded through a chipotle chilli tomato sauce..........sounds too hot?! I then added some sweet corn, sour cream and a jar of mild salsa to calm it down a bit, but please DO use hot salsa if you like a little spice in your life! I topped this with a dollop of sour cream and dressed it with chopped jalapeno peppers, parsley and a little chopped coriander (cilantro) for a perfect cold weather lunch. I devised this recipe especially for the Two for One Leftovers event in the Cooking Photo's Forum. Please adjust the chilli powder to your own requirements. I like spicy food but Malcolm does not, so I topped mine with loads of chopped jalapeno peppers and a sprinkling of chipotle chilli powder!! NB: I used Spanish chorizo sausage, which is cured; if you are using fresh chorizo sausage, it needs to be browned beforehand.(I made this original recipe with leftovers from KissKiss's Recipe #368069. However, ANY cooked chicken will do for this!) NOTE on adding water to salsa: My salsa was VERY thick and adding the water made it much better when baked; if your salsa is a very runny one already, do not add the water!

2 cups chopped cooked chicken
6 inches hot chorizo sausage, cut into chunks
2 cups mild salsa
1/2 cup water (optional)
1/2 teaspoon garlic powder
2 teaspoons dried chipotle powder (more or less to personal taste)
salt and pepper
15 ounces corn kernels, drained (600g)
1/4 cup pimento stuffed green olive, halved
1 cup sour cream (8 ozs)
6 flour tortillas, cut into strips (8-inch)
2 cups grated cheese, to taste
sour cream, to serve
chopped jalapeno pepper, to serve
cilantro or parsley, chopped, to serve

Steps:

  • Pre-heat oven to 175C/350°F Grease an 8" square or an oval baking dish.
  • Mix the cooked chicken and chopped chorizo sausage together, and then set aside.
  • Empty the salsa into a large mixing bowl, add the water (if using), garlic powder, chipotle chilli powder, salt, and pepper to taste. Mix well. Adjust seasonings if necessary.
  • Pour 1/4 of the salsa mixture over the base of the greased baking dish and then layer 1/4 of the flour tortilla strips over the top. Scatter some of the chopped olives and sweet corn over and then add some of the chopped chicken and chorizo. Top with more salsa and continue to layer in this pattern, until the last layer. For the last layer, spoon the sour cream over the top before finishing with the salsa mixture and then scatter the grated/shredded cheese over the top. (Can be frozen at this stage, cover and freeze for up to 2 months.).
  • Cover the casserole with aluminium foil and bake for 35 minutes; take the foil off and finish baking for 5 to 10 minutes longer or until the topping is bubbling and the cheese is melted and golden.
  • Serve immediately with sour cream, jalapeño peppers and chopped cilantro or parsley. I find that a green salad is the perfect accompaniment to this, but rice would also be good.
  • To cook from the freezer: Thaw the casserole in the fridge for 24 hours before removing for 30 minutes, before baking as instructed before.
