EASY BEEF NACHO CHEESE DIP

While it may not always look appetizing, this dip is always gone when we make it for parties or family events. Everyone asks for the recipe and can't believe how easy it is. Sometimes we substitute ground turkey for the ground beef and no one can tell the difference.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) package Velveeta cheese
1 (16 ounce) jar medium chunky salsa (or salsa of your choice)

Steps:

  • Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
  • Chunk the Velveeta and add to crockpot.
  • Pour in jar of salsa and add the prepared meat.
  • Let melt together in the crockpot, stirring occasionally.
  • At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
  • We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

1 tablespoon garlic, minced
1 tablespoon sugar (optional)
2 (15 ounce) jars nacho cheese dip (Tostados)
1 (15 ounce) jar chunky salsa (tostados)
1 cup beer (not light)
2 cups Mexican blend cheese
1 teaspoon Tabasco sauce

Steps:

  • Brown beef and drain.
  • Add remaining ingredients and simmer on low until hot.
  • or keep warm on low in crock pot.
  • Serve with corn chips.
  • Note: This will get thin if cooked too long. Just let it cool off.
  • and it will thicken back up.

1/2 cup beer
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
16 ounces refried beans
1/2 cup salsa, hot and chunky
16 ounces Velveeta cheese, 1/2 inch pieces
1/4 cup fresh cilantro, chopped
tortilla chips

Steps:

  • Combine beer, cumin, dried oregano and garlic powder in heavy medium sauce-pan. Bring to simmer. Add beans and salsa; stir until heated through.
  • Add Velveeta cheese; stir until cheese melts, about 3 minutes. Stir in cilantro. Transfer to bowl. Serve warm with tortilla chips.

1/4 pound bulk spicy pork or Mexican-style sausage
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 pound American cheese, cubed
3/4 cup salsa
Tortilla chips or raw vegetables

Steps:

  • In a 1-1/2-qt. microwave-safe container, cook sausage, green pepper and onion on high for 1-2 minutes or until sausage is fully cooked; drain. Add the cheese and salsa. Cover and microwave on high for 1-2 minutes, stirring frequently until cheese is melted and mixture is smooth. Serve with tortilla chips or vegetables.

Lately, she's been telling me tales of smothering everything with this vegan cheese sauce -- crackers, veggies, chips, pasta -- you name it. So, it is here for safekeeping. Can't wait to get started!

2 cups mashed potatoes (requires about 2 - 2 1/2 medium potatoes, peeled and boiled)
3/4 cup carrot (I used 2 large peeled, chopped and boiled carrots cut in 1 inch pieces)
1/2 cup nutritional yeast flakes
1/3 cup extra virgin olive oil
1/3 cup water
1 tablespoon lemon juice
1 1/2 teaspoons salt
1/2 teaspoon onion powder
1/4 teaspoon granulated garlic

Steps:

  • Boil your potatoes and carrots until they are fork tender, then measure them into your blender. Make sure your potatoes are mashed/packed into your measuring cups. The carrots can be loosely measured.
  • Place all ingredients in your blender. I use Vita-mix.
  • Blend on high for about 30 seconds, or until mixture is completely smooth.
  • Serve immediately with chips or crackers or toast, pasta or veggies, or whatever you please. Refrigerate leftovers in an airtight container for up to 1 week. Reheat leftovers on low on the stove (stirring constantly) or in the microwave for 30 seconds to 1 minute.

This is as simple as it gets. You can make it as spicy or as mild as you like. It is perfect to take to holiday get-togethers. Just put it in your crockpot, grab a bag of nachos and you are good to go. My friend makes it every time her DH has a poker party and it goes like hotcakes. I have NO idea what a serving size would be or how much it serves.

1 (16 ounce) jar salsa (hot, medium or mild, your choice)
1 (2 lb) package Velveeta cheese

Steps:

  • Brown ground beef.
  • Put everything in crockpot and melt together, stirring occasionally.
  • Once the cheese is melted, turn crockpot on low.
  • Keep an eye on the mixture, if you leave it to cook all day long it may burn- it all depends on your crockpot.
