2 cups all-purpose flour
2 cups quick-cooking oats, uncooked
1 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar, firmly packed
3/4 cup butter or 3/4 cup margarine
1 (8 ounce) package dates, pitted & chopped
1 cup sugar
1 cup water

Steps:

  • Combine flour, oats, soda, salt, & brown sugar.
  • Cut butter in until it reaches the consistency of coarse meal.
  • Press half of mixture across the bottom of an ungreased 12x8x2 baking pan.
  • Combine dates, 1 c. sugar, and water in saucepan.
  • Cook on low until sugar dissolves, dates soften, and mixture is thick and mushy.
  • Spread date mixture over dough in pan.
  • Cover with remaining dough.
  • Bake at 325 for 40 min or until lightly browned.
  • Cut into 1"x2" bars while still warm; remove to wire racks to cool.

1/2 cup Crisco shortening
1/4 cup butter (softened)
1 cup packed light brown sugar
1 3/4 cups sifted flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups Quaker Oats
3 cups pitted chopped dates
1/4 cup sugar
1 1/2 cups water

Steps:

  • Mix shortening, butter and brown sugar together until light and fluffy.
  • Sift together flour, baking soda and salt.
  • Mix oats into flour mixture.
  • Mix oat mixture into shortening mixture until crumbly.
  • Put half of the oat mixture in a 9" x 13" greased and floured pan and press and flatten in pan.
  • Date filling:.
  • Place dates, sugar and water in medium saucepan over low heat, stirring constantly until thickened - about 10 minutes. Let cool.
  • Spread date filling onto oat crust.
  • Cover with remaining crumb mixture, press lightly.
  • Bake at 400 degrees for 30 minutes.
  • Let cool and cut into bars.

My MIL's easy, no fail date squares...Make an extra batch of the date jam its good on its own...over bagels or toast. If your date jam is a little thick. Add a little extra water to thin it out, until it is the consistency that you like. Becareful not to make it too thin.

1 cup rolled oats
1 cup sugar, brown
1/2 cup walnuts (optional) or 1/2 cup pecans, chopped (optional)
1/4 teaspoon salt
3/4 cup butter
1 1/2 cups dates, pitted and chopped
1/4 cup sugar, brown
1/2 cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Date Jam
  • Combine dates, sugar, water and vanilla in saucepan and bring to a boil.
  • Simmer 5 minutes, until mixture resembles a thick paste.
  • Cool completely
  • Oatmeal Layer
  • Combine flour, oats, sugar, nuts and salt in mixing bowl.
  • Cut in butter.
  • Reserve 2 cups of this mixture for topping.
  • Press remaining mixture into bottom of greased 9 x 9" pan.
  • Spread cooled date jam over the bottom layer and sprinkle reserved oatmeal mixture evenly over top.
  • Bake 25- 33 minute.
  • Cool completely then cut into squares.

225g butter , plus a little extra for greasing
140g cooking apple , peeled, cored and chopped
140g stoned date , chopped
280g light soft brown sugar
175g plain flour
1 tsp bicarbonate of soda
100g porridge oat

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
  • Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
  • Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
  • Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.

3/4 cups water (6 fl ounces, 180 ml - or orange juice)
3 tbsps butter (40 g)
1- 2 tbsps coconut sugar (or brown sugar, or xylitol)
1/2 tsp cinnamon
1/4 tsp freshly grated nutmeg (or cardamom)
1 tbsps vanilla extract
1 lemon
2 cups rolled oats (180 g )
3/4 cups shredded coconut
1/4 tsp salt
2 tsp baking powder
1/4 tsp freshly grated nutmeg (or cardamom)
1 3/4 cups flour (+ 1 tbsp, 235 g)
1/2 cup sugar (susbtitute with xylitol for refined sugar-free)
50 g coconut sugar
1 tbsp lemon zest
1 cup butter (ice cold )

Steps:

  • Chop the dates up a bit and add them to the pot with water or orange juice, butter, sugar, and spices, a pinch of salt, and bring everything to a boil on medium heat. Zest the lemon and juice it. Grate the lemon zest straight into the measured out sugar you are going to use for the crumble crust. Rub it in using your fingers so that the peel lets go of its oil and the sugar gets all aromatic and lemony.
  • Add lemon juice to the date filling and continue to boil the date filling until nice and thick. Watch if well so that it doesn't burn or stick to the pan. Transfer to a blender or food processor and blend until smooth. Let cool.
  • Preheat the oven to 356 F (180C). Line a (23 x 33 cm) baking tin with baking paper.
  • Add all dry ingredients for the crust to a bowl. Grate the ice-cold butter right into the dry ingredients using a box grater. Rub everything together quickly to form streusel.
  • Add half of the streusel dough to the pan and press down and into the edges to form a crust. Spread date filling on top. Sprinkle remaining streusel on top. Gently press down to compact the top crust a bit. Bake for 45 to 55 minutes or until the streusels are golden brown. Should the topping brown too quickly, cover with some aluminum foil.
  • Let cool down completely before cutting into squares.

1 cup rolled oats
1/2 cup blanched almond flour
1/3 cup peanut butter (drippy and soft)
1/2 cup shredded unsweetened coconut (plus a little more for topping)
1/2 cup + 2 tbsp plant-based milk
2 & 1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 tsp pink Himalayan salt + an extra 2 pinches
1/2 tsp baking soda
1/3 cup mini chocolate chips (plus more for topping )
handful of sliced almonds for topping

Steps:

  • Start by preheating the oven to 350 degrees F and line an 8x8 baking dish with parchment paper.
  • Add all of the ingredients, minus the chocolate chips, to a food processor. Pulse for about 3 minutes, stopping every so often to scrape the mixture off the sides of the bowl and down toward the blade. Make sure everything is well mixed and there are no large pieces of dates remaining. The mixture should be soft, easily spreadable and slightly sticky.
  • Remove the blade and stir in the mini chocolate chips.
  • Add the mixture to the 8x8 baking dish and spread in an even layer with a spatula. Top with extra shredded coconut, mini chocolate chips and sliced almonds.
  • Bake on the middle rack for about 35 minutes, removing from the oven when the sides begin to lightly brown, the top feels firm with a little give and a toothpick inserted comes out clean.
  • Allow the bars to cool in the baking dish for a while (about 15 minutes) before slicing. Enjoy!

1/3 cup of Natural Delights Chopped Medjool Date

Steps:

  • Preheat oven to 350 degrees F and line a large cookie sheet with parchment paper.
  • Whisk together the oats, flour, powder, and soda in a bowl and set aside.
  • In a stand mixer with the paddle attachment, beat the butter and both sugars together until light and fluffy.
  • Add in the dry ingredients and beat until combined with the butter and sugars - dough will be crumbly.
  • With the stand mixer on medium-low, pour in the almond milk. Beat only until a dough has formed - about 45 seconds to 1 minute. Fold in the chopped dates and chocolate.
  • Scoop and roll into 2 tablespoon balls and set in the fridge for 15 minutes.

  • The next morning, uncover the saucepan and stir in banana slices, chopped dates, cinnamon and sea salt. Steps:

  • Place the dates and water in a medium saucepan and bring to a boil over medium heat. Once the water starts to boil, reduce the heat and bring to a simmer, stirring occasionally until the water has thickened and the liquid is absorbed, about 20 minutes.
  • Preheat the oven to 350 degrees F. Line a 13 x 9 inch baking dish with parchment paper and lightly grease. Set aside.
  • In the bowl of a food processor, pulse together the flour, brown sugar, cinnamon, salt and baking soda until combined. Add the butter and continue to process until the mixture resembles coarse sand. Add in the oats and water and pulse until combined.
  • Press half of the oat mixture onto the bottom of the prepared baking dish with a spatula or your hands. Bake for 10 minutes or until lightly browned.

Scant 1 cup sugar
1/3 cup lemon juice

1 3/4 cups unsalted butter, melted

Steps:

  • In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
  • Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize.
