FILLING:
2 cups chopped dates
1 cup water
1 cup sugar
1 cup chopped nuts
2 teaspoons lemon juice
DOUGH:
1 cup butter, softened
1 cup packed brown sugar
1 cup sugar
3 large eggs, room temperature
1 teaspoon lemon extract
4 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda

Steps:

  • In a saucepan, combine filling ingredients. Cook over medium-low heat, stirring constantly, until mixture becomes stiff, 15-20 minutes. Chill. , For dough, cream butter and sugars in a bowl. Add eggs, one at a time, beating well after each addition. Add extract. Combine flour, salt and baking soda; gradually add to creamed mixture and mix well. Chill for at least 1 hour. , On a lightly floured surface, roll out half of the dough to a 12x9-in. rectangle, about 1/4 in. thick. Spread with half of the filling. Roll up, starting with the long end. Repeat with remaining dough and filling. Wrap in plastic; chill overnight. , Cut rolls into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 375° for 8-10 minutes or until lightly browned. Cool on wire racks.

This recipe comes from "Treasured Recipes Old and New 1975," a community cookbook by the Schuyler-Brown Homemakers Extension in Iowa Falls. It was contributed by Wilma Miller, who credits the recipe to her great-aunt. Ms. Miller wrote that the original recipe called for two pounds of walnuts, but that she prefers it with pecans "and not that many." That makes sense. Mixing in even a pound of nuts requires the arms of a sturdy farm wife. The recipe yields enough for an entire church supper.

2 1/2 cups/350 grams all-purpose flour
1 teaspoon/5 grams salt
1 teaspoon/3 grams cinnamon
1/2 teaspoon/1 1/2 grams ground cloves
8 ounces/2 sticks/227 grams soft unsalted butter
1 1/2 cups/300 grams light brown sugar
3 large eggs, lightly beaten
1 tablespoon/13 grams baking soda
1 pound/450 grams chopped pitted dates
1 pound/450 grams chopped walnuts or pecans
Confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Line one or more baking sheets with parchment. Place flour in a bowl and whisk in the salt, cinnamon and cloves. Set aside.
  • Cream butter and brown sugar together by hand or in an electric mixer. Beat in eggs. The mixture will not be smooth. Dissolve the baking soda in 1 tablespoon hot water and stir it in. Stir in the dates and nuts. The batter will be heavy and not easy to mix. Work in the flour mixture, about a third at a time. If your electric mixer has a dough hook, use it for working in the flour.
  • Scoop heaping teaspoons of batter onto prepared baking sheet or sheets, making craggy mounds about 1 1/2 inches in diameter. Space them about 1 1/2 inches apart; the cookies will not spread very much. (Alternatively, for neater cookies, you can roll the batter into balls between your palms, then lightly press them down with the back of a spoon or the tines of a fork.) Allow to sit at room temperature 30 minutes to 1 hour before baking. Depending on the size of your oven and your baking sheets, you can form the cookies ready to bake on sheets of parchment paper on your countertop, then transfer them to baking sheets in shifts.
  • Bake 15 to 20 minutes, until nicely browned. Let cool, then dust with sifted confectioners' sugar. If you plan to freeze some of the cookies, do not dust them with confectioners' sugar; wait until after they thaw.

2 cups dried dates, chopped
3/4 cup sugar
3/4 cup water
1/2 cup chopped nuts

Steps:

  • Preheat oven to 375°F.
  • To prepare Filling:.
  • Combine dates, water and sugar in a small saucepan. Cook over low heat until thick. Cool; add nuts.
  • To prepare Cookie Dough:.
  • Cream butter, add sugar and beat until light.
  • Beat in eggs one at a time; add vanilla.
  • Sift together flour, salt, soda and cinnamon. Add to creamed mixture alternately with buttermilk.
  • Drop dough by rounded tablespoons onto buttered baking sheet 2" apart. Make a shallow indent in each cookie. Place a scant teaspoon of filling in indent. Cover with 1/2 teaspoon of dough.
  • Bake 10 to 15 minutes or until lightly browned.
  • Remove to wire rack to cool.
  • Store between layers of wax paper in tightly covered container.

15 small raw almonds
1/4 teaspoon ground cinnamon
Pinch of kosher salt

Steps:

  • Spread the coconut on a plate. Put the dates, almonds, cinnamon and salt in a food processor and process until finely chopped.
  • Form rounded 1/2 teaspoonfuls of the mixture into balls with your fingers, then roll in the coconut, pressing to coat.

1 cup chopped walnuts
1 egg, beaten
2 ½ cups crisp rice cereal
2 cups flaked coconut, or to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add sugar, dates, walnuts, and beaten egg. Bring to a boil, stirring occasionally. Boil until dates have softened and melted into the mixture, 3 to 5 minutes. Remove from the heat and stir in rice cereal.
  • Place coconut in a shallow bowl.
  • Scoop rounded teaspoonfuls of dough and drop them into the coconut, rolling and pressing until coated.

3 cups coarsely chopped dates
1/4 cup granulated sugar
1 1/2 cups water
1 cup firmly packed brown sugar
1 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups old-fashioned rolled oats
3/4 cup (1 1/2 sticks) very cold butter, cut into small cubes

Steps:

  • Preheat oven to 400 degrees F.
  • In a nonreactive medium saucepan over low heat, combine dates, granulated sugar, and water. Cook, stirring constantly, until thickened, about 15 minutes. Cool completely. In a large bowl or bowl of an electric mixer, place brown sugar, flour, baking soda, salt, and oats. Mix on low speed until combined. While mixer is running, add butter, 1 piece or 2 at a time. Mix until crumb like, with some lumps of butter no larger than pea size.
  • Using your hands, press and flatten half of crumb mixture into a greased 9 by 13-inch pan. Spread cooled filling over crust. Cover with remaining crumb mixture, patting lightly. Bake until lightly browned, 25 to 35 minutes. Cool slightly and cut into bars while still in the pan. Gently remove cut bars from pan. Serve warm or at room temperature. Date bars, stored in an airtight container, refrigerate and freeze well.

Cookie Dough
1 cup butter - softened
2 cups brown sugar
1 1/2 tsp Orange Zest
1/4 tsp Lemon Zest
2 eggs
2 tbsp milk
3 1/2 cups flour
1 1/2 tsp baking soda
1 1/2 tsp Salt
Filling
2 cups dried dates chopped fine
1/2 cup sugar
1/2 cup water
1 cup chopped walnuts

Steps:

  • Cream together butter and brown sugar. Add orange and lemon rind, eggs and milk. In separate bowl mix together flour, baking soda and salt. Mix into batter until well combined. Divide dough in half and refrigerate. To make filling - In medium sauce pan combine dates, water and sugar. Cook over low heat until thick. Add the walnuts and let cool. Roll out half the dough into a 9 x 12 inch rectangle 1/4 inch thick. Spread half the filling over the dough and roll up along the longer edge into a log. Repeat with other half of dough. Wrap in plastic and refrigerate over night. Preheat oven to 350 degrees. Slice the log into 1/3 inch cookies. Bake on a cookie sheet for 10-15 minutes.

Steps:

  • Cream butter and 1 cup sugar; add eggs and beat well.
  • Add milk.
  • Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
  • Refrigerate.
  • While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.
  • Roll out dough; cut in rounds.
  • Mound filling in center, place another round on top and seal edges.
  • Bake at 375°F on greased cookie sheets until lightly browned.

My mom used to make these every Christmas for us when I was growing up, and they bring back special memories for me, especially around the holidays. We have been eating these for 50 years! These are my all time FAVORITE cookies :) They make a lot of cookies, and the amount really depends on how thick you actually roll the dough, and how thin or thick you cut the cookies. The cooking time is for EACH batch of cookies, and the prep time does not include time to chill dough.

2 1/4 cups dates
1 cup sugar
1 cup water
1 cup nuts
1 cup shortening
2 cups brown sugar
3 eggs, well beaten
4 cups flour

1/2 teaspoon baking soda

Steps:

  • Date Filling:.
  • Combine dates, sugar and water in a pan and cook until thick (about 10 mins.).
  • Add nuts to mixture, mix, and let cool. Set aside.
  • Cookie Dough:.
  • Cream shortening and add brown sugar gradually.
  • Add eggs, and beat well. Add to the other ingredients, and mix.
  • Divide into 2 parts, and make 2 round balls.
  • Chill for 1 hr., or until ready to bake.
  • Preheat oven to 375.
  • Make 4 balls from the 2 lg. balls of dough.
  • Roll out dough to 1/4" thick, and spread date mixture all over the top to the edge of the dough.
  • Roll into logs.
  • Cut into slices 1/4" thick, and place on greased cookie sheet.
  • Bake in 375 oven for 10-12 minutes.
  • Cool on cookie racks and store in a plastic container with lid, or a cookie tin.

1 dash salt

Steps:

  • Preheat oven to 200°F.
  • In a large bowl of an electric mixer, beat egg whites until foamy. With the mixer on high speed, beat in salt; then gradually add sugar, about a tableshppon at a time, beating well after each addition, until whites fold stiff, glossy peaks.
  • Add vanilla and beat for 1 minute. Fold in dates and walnuts.
  • Drop meringue mixture by rounded teaspoonfulls onto well-greased cooking sheets, spacing cookies about 1 inch apart. Bake in a 200°F oven for 1 hour or until outside is dry and set; cookies should not turn brown.
  • Let cool on baking sheets for about 5 minutes, then transfer to racks and let cool completely. Store airtight.

1/2 teaspoon baking soda
1 teaspoon salt

Steps:

  • Sift together the flour, soda, salt and cinnamon. Toss the dates with a small amount of the flour mixture (to prevent sticking) and set aside.
  • ln a large bowl, cream the butter with the sugars until smooth. Add the eggs and vanilla and mix thoroughly.
  • Mix in the dry ingredients and combine thoroughly.
  • Stir in the nuts and dates.
  • With your hands, press and mold the dough into a long, smooth roll about 2 1/2 inches in diameter. Wrap in waxed paper, twisting the ends to hold the roll in shape. Chill until firm - several hours or overnight. (To speed up the chilling process, place in freezer.).
  • Preheat oven to 400 degrees F. (Moderately hot).
  • With a thin, sharp knife cut into thin slices 1/16" to 1/8" thick. Place on ungreased baking sheet, slightly apart.
  • Bake until lightly browned, about 6 to 8 minutes.
