CHEWY DATE NUT BARS
You'll need just six ingredients, including a convenient boxed cake mix, to bake up these chewy bars chock-full of walnuts and dates. They are my husband's favorite snack, and he loves to take them to work. I often whip up a batch for bake sales or to share with my co-workers at our local car dealership.

DATE NUT BARS
I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

DATE BAR COOKIES
Steps:
- Preheat oven to 400 degrees F.
- In a nonreactive medium saucepan over low heat, combine dates, granulated sugar, and water. Cook, stirring constantly, until thickened, about 15 minutes. Cool completely. In a large bowl or bowl of an electric mixer, place brown sugar, flour, baking soda, salt, and oats. Mix on low speed until combined. While mixer is running, add butter, 1 piece or 2 at a time. Mix until crumb like, with some lumps of butter no larger than pea size.
- Using your hands, press and flatten half of crumb mixture into a greased 9 by 13-inch pan. Spread cooled filling over crust. Cover with remaining crumb mixture, patting lightly. Bake until lightly browned, 25 to 35 minutes. Cool slightly and cut into bars while still in the pan. Gently remove cut bars from pan. Serve warm or at room temperature. Date bars, stored in an airtight container, refrigerate and freeze well.
EASY DATE NUT BARS
Putting this here so that the recipe for one of my dad's favorite Christmas cookies doesn't get lost. I remember chopping the dates (no packages of chopped dates when I was little!) and the nuts for these as one of the first things I did to help Mom with her Christmas baking.

DATE NUT BARS
FAMILY FAVORITE! Dates are our favorite fruit to put in bars and combined with nuts give a "just right" flavor. I have been making these bars for over 30 years and we have them all year. The powdered sugar topping is a must for enhanced flavor. Great with coffee!

DATE BARS
Steps:
- In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
- Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
- Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.
DATE BAR RECIPE
Steps:
- Place the dates and water in a medium saucepan and bring to a boil over medium heat. Once the water starts to boil, reduce the heat and bring to a simmer, stirring occasionally until the water has thickened and the liquid is absorbed, about 20 minutes.
- Preheat the oven to 350 degrees F. Line a 13 x 9 inch baking dish with parchment paper and lightly grease. Set aside.
- In the bowl of a food processor, pulse together the flour, brown sugar, cinnamon, salt and baking soda until combined. Add the butter and continue to process until the mixture resembles coarse sand. Add in the oats and water and pulse until combined.
- Press half of the oat mixture onto the bottom of the prepared baking dish with a spatula or your hands. Bake for 10 minutes or until lightly browned.
- Spread the date mixture over the partially baked crust and then sprinkle the remainder oat mixture over the dates. Lightly press down. Bake for 30-35 minutes or until the tops of the crust is a light golden brown. Let cool completely and then slice into bars or squares. Enjoy!
OLD FASHIONED DATE NUT BARS
A little different from other recipes I've seen here, because the nuts are in the crust and there's the addition of lemon. They sound great. Wish I knew where the recipe came from! Read all the way through--notes at the end are from the original author.

- Soak the dates in warm water for about 10 minutes to soften them (I recommend even longer if your dates are old or on the harder side). Drain the water and lightly squeeze the dates to release excess moisture.
- Place the dates in a blender or food processor and pulse a few times to break them down some. Add in the nuts and pulse until the nuts are broken into smaller pieces as shown in the photos (a few larger chunks are okay too!).
- In a small baking dish (I used an 8×6″ little dish but a bread pan also works) lined with parchment paper, press the date and nut mixture into the bottom so that it’s even.
- Melt the chocolate in a small bowl by microwaving it in 30 second increments, stirring in between. Pour the chocolate over the date mixture and spread it out evenly.

- Add drained dates and cocoa powder to the food processor. Pulse until well combined and the batter holds together. You may need to stop a few times to scrape down the sides with a rubber spatula. If batter is too dry and crumbly, add water, 1 teaspoon at time, to reach the desired consistency.

If you want to take the skin, rub the hazelnuts with your hands or with a paper towel) Stir in every 15-20 seconds to prevent them burning. Take them from the heat when they give off their aroma. Let them cool.
- As the dates are soft enough, remove the pits. When the hazelnuts are cool, place them into a food processor and pulse for 8-10 seconds to make big and small hazelnut pieces. Remove the chopped hazelnuts into a bowl.

- Line an 8×8 or 9×9 pan with parchment paper, or use a silicone square pan placed on baking sheet, set aside.
- In a food processor add drained/pitted dates and nuts. Process until dates and nuts have broken down, and only small pieces of nuts can be seen (you can see in the pictures above). Mixture should be slightly sticky. If it feels really dry, add 1-2 TBS water and pulse to combine.
- Transfer mixture to prepared pan, pressing evenly into all corners and press down flat. Place pan in freezer for 15-30 minutes to chill bars.
- As the bars have almost finished chilling, prepare the toppings: warm the coconut butter in microwave, about 10 seconds, until smooth, then stir in matcha powder. If your coconut butter is already spreadable you can skip this step. In a medium microwave safe bowl melt dark chocolate and coconut oil together in 20 second increments, stirring in between until fulling melted. Careful not to burn the chocolate.
