BEER MARINADE FOR STEAK

Beer Marinade for Steak image

I found this on the internet and liked the look of this recipe but I made a few changes to suit my cooking style. It seems Boomette and I tried this around the same time. We at the Lorie-House had this on ribeyes and we agree with Boomette's family that the flavor is lightly sweet but does not make the beefy flavor too sweet. If you know ribeyes, they tend to have a looser texture than say, NY Strip. I did notice a little hint of beer in the looser parts of the steak more than the firmer parts. I think if you like teriyaki, you will enjoy this, and if you like beer, choose a ribeye and if you like beer less, keep with a firmer cut like strip steak. We enjoyed here at home, liked it a LOT but not sure if it qualifies as TDF. We would give this a 4 if we were reviewing this as someone else's recipe on Zaar (really 4.5 but I would round down). Hope you enjoy! Lorie

Juicy & Flavorful Beer Marinated Steak image

How to mix a beer marinade for steak that will infuse the beef with flavor and add juiciness to leaner cuts. Tips for tweaking the ingredients to vary the flavor base.

Provided by CraftBeering

Categories     Cooking with Beer

Time 15m

Number Of Ingredients 12

2 lbs steak*
1/4 cup olive oil
1 tsp mild vinegar (Sherry or rice, optional)
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 shallot
2 cloves garlic
5-6 sprigs fresh thyme
1 tsp paprika
1 tsp Kosher salt
red pepper flakes to taste (optional)
6 oz beer (use Munich helles, Czech pils, German pilsner, American craft lager or Vienna lager)

Steps:

  • Prepare a non-reactive container or freezer bag appropriately sized for the steak(s). Thinly slice shallot, mince or roughly chop the garlic. Pick the thyme leaves (optional).
  • Add all marinade ingredients to container (beer should be last) and whisk until well combined. Add steak and make sure it is well covered with marinade.
  • Marinate for 3 to 24 hours, covered and refrigerated. Occasionally move the steak around to ensure all of its surfaces are adequately accessed by the marinade. Bring to room temperature before cooking.
  • Heat grill (or pan/griddle) to medium-high to high heat. Scrape marinade off the steak surface and discard. Pat dry steak and season lightly with salt and pepper. Grill or sear for about 3-5 minutes per side, flipping once until your desired doneness is reached. (See steak temperatures below).
  • Remove from the grill and rest the steak before slicing/serving. You may lightly cover it with foil while resting.

RIB EYE STEAK IN BOCK BEER MARINADE

Rib Eye Steak in Bock Beer Marinade image

AUS/NZ for ZWT 5 due to the influence the German culture has had on the region and the propensity for grilling! So succulent and tender you may not even need a knife. This steak is one of the top dishes served at Hudson's on the Bend, a popular Austin, TX, restaurant known for its game cooking and big-flavored, robust dishes. "These guys could cook a horseshoe and make it delicious," says CBS news anchor and frequent Hudson's diner Dan Rather in the foreword to their new book." Chef Jeff Blank offers creativity and originality in the kitchen to make him one of the most celebrated chef's in the country. Jeff has owned Hudson's on the Bend Restaurant in Austin since 1984. Prior to that, he owned and operated Wineskin Restaurant in Aspen, Colo. He was praised by the New York Times, Texas Monthly, and Chef's Magazine. In 1996 and 1997, Jeff won the People's Choice Award at the Texas Wine and Food Festival. Hudson's on the Bend was named to the "Top 50 Restaurants in America" list. (Cook time does NOT include marinating time.) Variations: This is also a wonderful marinade for baby-back ribs, portabello mushrooms, chicken . . . you get the idea. Timing: Marinate the steaks in an airtight plastic bag the day before grilling to achieve the optimum flavor. http://hudsonsonthebend.com/main.php.... PS Tamaretta, thank you and YES this marinade is wonderful on portabellos!

Categories     Steak

Time 15m

Yield 6 serving(s)

Number Of Ingredients 11

6 (14 -16 ounce) rib eye steaks
1 (12 ounce) bock beer, I use Shiner Bock
2 tablespoons garlic, chopped
2 tablespoons red onions, diced fine
2 tablespoons Worcestershire sauce
4 dashes Tabasco sauce
2 limes, juice of
1/4 cup brown sugar, packed
1 tablespoon coarse brown mustard (Creole is good)
2 tablespoons olive oil
2 teaspoons salt

Steps:

  • Combine all ingredients except salt. Salt in the marinade draws too much moisture from the meat over an extended time.
  • Pour over steaks and marinate from 4 hours to overnight.
  • Cook the steaks over medium-high heat to your taste- about 4 minutes each side for medium rare to medium, longer for steak that is more done.
  • Of course everything tastes better when it is cooked outside BUT you can broil this inside and it comes out great!
  • Season with salt to taste after cooking.

BEER AND LIME MARINATED STEAK CRUNCHWRAP

Beer and Lime Marinated Steak Crunchwrap image

Beer, lime, garlic marinated skirt steak seared and sliced up thin wrapped inside a big tortilla with all the fixings!

Categories     Entree

Time P1DT35m

Number Of Ingredients 19

FOR THE STEAK:
1-2lb skirt steak
2 tsp ground cumin
1 tsp salt
2 garlic cloves, peeled & smashed
1/2 tsp crushed red pepper flakes
pinch of fresh cilantro
1 lime cut into 8ths
12oz light colored beer/ale
FOR THE CRUNCHWRAP:
2 hatch chiles
pinch of salt and pepper
1/2 cup refried beans
1 cup shredded cheddar and monterey jack
1/2 cup pico de gallo
1 avocado
1/2 cup shredded lettuce
3-4 burrito sized flour tortillas
3-4 small flour tortillas

Steps:

  • The night before, use a meat tenderizer's pointed side to tenderize each side of the skirt steak. Add the steak along with the garlic, cilantro, cumin, salt, and crushed red pepper to a bowl or container with a lid. Squeeze the juice from the lime over the steak and pour the beer over the steak as well. Cover with lid and place in the fridge for 8-12 hours.
  • Remove the steak from the marinade. Gently pat dry with a paper towel. It's ok if you don't pat the whole steak dry. Season each side of the steak with salt and pepper.
  • Heat a cast iron skillet over high heat for 1-2 minutes. Add the steak and hatch chilies to the searing hot pan. Cook for 7-10 minutes on the first side, depending on how well done you want the steak. Flip the chilies and steak and cook for another 5-8 minutes on the second side. Transfer the steak to a plate and tent with foil. Let it rest for 5 minutes before slicing.
  • Transfer the hatch chilies to a plastic bad and seal or tie shut. Let the chilies steam in the bag for 5 minutes. After 5 minutes, remove the chilies. Use a paper towel to rub the charred skin off the peppers. Dice the peppers and remove stems and reeds.
  • In the center of a burrito tortilla, place a spoonful or two of beans, top with steak, chilies, and then cheese. On top of that place lettuce, pico de gallo, and then avocado. Cover that small stack with a small tortilla.
  • Lightly spary a nonstick pan with cooking spray. Heat over medium.
  • Fold up each side of the large burrito tortilla towards the center to form a hexagon. Carefully flip the crunchwrap and place on the hot pan. Heat that side for about 3 minutes to seal the crunchwrap shut.
  • Continue that process with the remaining ingredients and tortillas.

BEER-MARINATED STEAK

Beer-marinated steak image

Wine may be my preferred tipple, but when you are standing over a hot barbecue only beer will do. I enjoy the tangy flavours that beer adds to food. As much as I love pale ales, I find the hop flavours tend to dominate, so use a lager or bitter for this dish. The marinade calls for half a bottle of beer, so reward yourself with a glass.

Provided by Ginny Grant

Categories     Main-course

Time 30m

Yield SERVES

Number Of Ingredients 9

4 cloves garlic, chopped
1 sprig rosemary, leaves chopped
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 tablespoons mustard (as mild or hot as you like)
1/2 cup beer (I used Epic lager)
600g piece rump steak
1 cup beef stock (I used Essential Cuisine)
salt and freshly ground black pepper

Steps:

  • Mix together the garlic, rosemary, tomato paste, Worcestershire sauce, mustard and beer in a non-reactive dish. Snip the skin of the beef at 5cm intervals to stop the steak curling up during cooking. Place in the marinade and refrigerate for 4-6 hours. When ready to cook, remove the beef from the marinade and pat dry. Strain the marinade through a fine sieve and place in a small saucepan with the beef stock. Reduce by half and keep warm. Season the beef with salt and pepper, and grill to your liking. You can also find hundreds of recipes from Cuisine, the World's Best Food Magazine, on http://www.cuisine.co.nz/
