DATE-FILLED COOKIES
This is a unique family recipe that is originally from my great, great aunt. I have not tried it, but submitted it in response to a request. I'm sorry I don't know the serving size or exactly how long it takes to bake!

Steps:
- Cream butter and 1 cup sugar; add eggs and beat well.
- Add milk.
- Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
- Refrigerate.
- While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.
- Roll out dough; cut in rounds.
- Mound filling in center, place another round on top and seal edges.
- Bake at 375°F on greased cookie sheets until lightly browned.
DATE BAR COOKIES
Steps:
- Preheat oven to 400 degrees F.
- In a nonreactive medium saucepan over low heat, combine dates, granulated sugar, and water. Cook, stirring constantly, until thickened, about 15 minutes. Cool completely. In a large bowl or bowl of an electric mixer, place brown sugar, flour, baking soda, salt, and oats. Mix on low speed until combined. While mixer is running, add butter, 1 piece or 2 at a time. Mix until crumb like, with some lumps of butter no larger than pea size.
- Using your hands, press and flatten half of crumb mixture into a greased 9 by 13-inch pan. Spread cooled filling over crust. Cover with remaining crumb mixture, patting lightly. Bake until lightly browned, 25 to 35 minutes. Cool slightly and cut into bars while still in the pan. Gently remove cut bars from pan. Serve warm or at room temperature. Date bars, stored in an airtight container, refrigerate and freeze well.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. In a small saucepan, combine the dates, 1/4 cup brown sugar, orange zest, cloves, 1/2 teaspoon cinnamon, allspice, lemon juice and water. Cook over medium-high heat, stirring constantly, until dates are soft and the mixture becomes a thick paste, about 10 minutes. Remove from heat and set aside to cool.
- To make the crust and topping, stir together the oats, 1/2 cup brown sugar, flour, baking powder, baking soda, 1/2 teaspoon cinnamon and salt in a medium bowl. Cut in butter using a pastry cutter or your fingers. Mixture should be coarse and crumbly. Stir in 2 tablespoons water until evenly distributed. Press about 2/3 of the mixture into the bottom of the prepared pan. Spread the date mixture evenly over the crust all the way to the edges. Sprinkle the remaining crust mixture over the date layer. Press down lightly.
- Bake for 20 to 25 minutes in the preheated oven, until the top is lightly toasted. Cool completely before cutting into bars.

Steps:
- Combine flour, oats, soda, salt, & brown sugar.
- Cut butter in until it reaches the consistency of coarse meal.
- Press half of mixture across the bottom of an ungreased 12x8x2 baking pan.
- Combine dates, 1 c. sugar, and water in saucepan.
- Cook on low until sugar dissolves, dates soften, and mixture is thick and mushy.
- Spread date mixture over dough in pan.
- Cover with remaining dough.
- Bake at 325 for 40 min or until lightly browned.
- Cut into 1"x2" bars while still warm; remove to wire racks to cool.

- In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.

- In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well. - Preheat oven to 350 degrees F (175 degrees C).
- In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
- Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.
- On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.
- Bake 15 minutes in the preheated oven, or until browned.

- Mix shortening, butter and brown sugar together until light and fluffy.
- Sift together flour, baking soda and salt.
- Mix oats into flour mixture.
- Mix oat mixture into shortening mixture until crumbly.
- Put half of the oat mixture in a 9" x 13" greased and floured pan and press and flatten in pan.
- Date filling:.

GRANDMA'S DATE FILLED COOKIES
These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

- Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
- Mix together the shortening, sugar, and eggs.
- Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
- Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
- Chill dough for at least 1 to 2 hours.
- Roll out dough in thin layers in small batches and cut with round cookie cutter.
- Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
- Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

MA'AMOUL MED (ORANGE AND ESPRESSO DATE COOKIE BARS)
Reem Assil's cookie bar version of ma'amoul-a holiday cookie enjoyed for Eid, Christmas, and Easter-is scented with espresso and orange blossom water.

- To make the dough: In a medium bowl, combine the flours, salt, sugar, mahlab, and yeast. Add the butter to the dry ingredients and mix by hand or in a mixer until it forms a paste. Cover with plastic wrap or a dish towel and set aside to rest for 30 minutes.
- To make the filling: While the flour mixture rests, immerse the dates in hot tap water and allow them to soak for about 10 minutes or until softened. Once they are soft, drain thoroughly and pulse them in the bowl of a food processor along with the butter, espresso powder, cinnamon, orange zest, and cardamom to form a sticky paste. Refrigerate until thoroughly chilled, about 15 minutes.
- After 30 minutes, the dough will have hardened, so use a wooden spoon or other utensil such as a dough cutter to break up the dough a bit. Pour the milk and orange blossom water into the flour mixture and mix until smooth. Let stand at room temperature for another 30 minutes or up to 4 hours.
- Preheat the oven to 300°F. Cut four sheets of parchment paper to fit an 8-by-11-inch sheet tray. Form the dough into a ball and divide it into 2 equal parts.
- Press half the dough onto one of the sheets of parchment. Layer a second piece of parchment on top and, using a rolling pin, roll an even ¼-inch crust to the paper's edges. Remove the top layer of parchment and flip the dough into the sheet tray. Re-use the sheets of parchment and roll out the second ball of dough. Set aside.
- Sandwich the date filling between two new sheets of parchment and roll into an even ¼-inch layer, out to the paper's edges. Remove the top sheet and flip the date layer onto the dough. Remove the remaining parchment. Flip the remaining dough over the date filling and remove the final sheet of parchment.
- Transfer the sheet tray to the oven and bake, rotating the tray once, until the bars are light golden brown on the edges, 30 to 35 minutes. Remove the tray from the oven and, when it is cool enough to touch, cut the bars into 2-by-2-inch squares. Transfer the tray to a wire rack to finish cooling. When the ma'amoul is completely cool, dust with the confectioners' sugar before serving. The bars can be stored in an airtight container in the refrigerator for up to 1 week.
