Do you just love filled cookies but hate the fussiness of making them? These are dropped and you don't have to roll them out. The filling is even dropped on top of the drop. Easy and good.

1 cup shortening
2 cups brown sugar
1/2 cup water
3 1/2 cups flour
1/8 teaspoon cinnamon
1 teaspoon baking soda
2 eggs
1 teaspoon salt
1 teaspoon vanilla
2 cups finely chopped dates
3/4 cup sugar
1/2 cup chopped walnuts
3/4 cup water

Steps:

  • Make the filling first by putting the dates, sugar, and water in a saucepan and cook slowly,stirring constantly till thickened; add the nuts and cool.
  • COOKIE BATTER:.
  • Mix shortening, sugar, and eggs thoroughly.
  • Stir in water and vanilla.
  • Add the flour, salt, soda, and cinnamon; mix well.
  • Drop by teaspoons on ungreased sheet.
  • Place a teaspoon of the date filling on top of the dropped dough and then a tiny bit of dough on top of the filling.
  • Bake till lightly browned and done in a 375 degree oven for 8-10 minutes.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup vegetable shortening
1 cup granulated sugar
2 eggs
1 1/2 cups dates, pitted and chopped
1 cup walnuts, chopped

Steps:

  • Preheat the oven to 350ºF.
  • Combine the flour, baking powder, spices and salt.
  • In a large bowl, cream the vegetable shortening and sugar. Beat in the eggs one at a time. Gradually blend in the dry ingredients. Fold in the dates and walnuts.
  • Drop the dough by spoonfuls 2 inches apart onto ungreased baking sheets.
  • Bake for 12 to 15 minutes, until lightly colored. Transfer to wire racks to cool.

1/2 c shortening
3/4 c brown sugar, firmly packed
2 large eggs, room temp
1/4 c milk
1 1/2 c all purpose flour, sifted
1 tsp baking powder
1 c oats, quick cooking
1 c dates, chopped
1 c nuts, chopped

Steps:

  • 1. Cream shortening and sugar. Add eggs and milk; combine well.
  • 2. Sift together the dry ingredients (except oats); add gradually to wet ingredients, mixing well. Add oats, nuts and dates; mix well again.
  • 3. Drop onto a cookie sheet and bake 15 to 20 minutes at 350 degrees.

This is a unique family recipe that is originally from my great, great aunt. I have not tried it, but submitted it in response to a request. I'm sorry I don't know the serving size or exactly how long it takes to bake!

1/2 cup butter
1 cup sugar
2 large eggs
1 tablespoon milk
2 teaspoons baking powder
2 cups flour
1 pinch salt
1 cup chopped dates
1/2 cup water
3 teaspoons flour
1/2 cup sugar
chopped nuts, to taste

Steps:

  • Cream butter and 1 cup sugar; add eggs and beat well.
  • Add milk.
  • Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
  • Refrigerate.
  • While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.
  • Roll out dough; cut in rounds.
  • Mound filling in center, place another round on top and seal edges.
  • Bake at 375°F on greased cookie sheets until lightly browned.

1 1/4 cups lightly packed brown sugar
1 egg
2 teaspoons finely grated orange rind

Steps:

  • Sift flour, baking soda & salt together 3 times. Add dates & walnuts.
  • Cream shortening & then blend in brown sugar, then add egg and beat well.
  • Stir in orange rind to the shortening mixture.
  • Add the flour mixture, combining until well mixed.
  • Drop dough by spoonful, well apart on greased cookie sheet.
  • Bake at 350F for 10 minutes.

1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
1 cup brown sugar
½ cup coconut oil
½ cup butter
1 cup persimmon puree
2 eggs
2 teaspoons vanilla extract
2 cups unsweetened date pieces
1 ¾ cups rolled oats

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, baking soda, and salt together in a bowl.
  • Combine white sugar, brown sugar, coconut oil, and butter in a separate bowl; mix until creamy. Beat in persimmon pulp. Add eggs and vanilla extract; beat until well combined, scraping sides of the bowl occasionally.
  • Stir flour mixture into persimmon mixture by hand until thoroughly combined. Add dates and oats; mix dough well.
  • Drop dough by rounded teaspoonfuls onto an ungreased baking sheet, about 2 inches apart.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes. Cool briefly; transfer to a wire rack to cool completely, about 10 minutes.
