DATE AND APPLE HONEY BRAN MUFFINS
Forget about the old "cardboard" bran muffins you may have had in the past. It's a new day with the sweet flavors of Medjool dates, apples and honey in these tender, moist muffins. The excellent flavors are further enhanced by coconut oil, cinnamon and toasted pecans.

- Preheat oven to 400-degrees F. Grease muffin tins; set aside.
- In a medium mixing bowl, mix the cereal and milk together. Set aside for 10 minutes to allow cereal to absorb the milk.
- Add the eggs, coconut oil, honey and vanilla extract; stir until well blended. Stir in the chopped apple.
- In a large mixing bowl, whisk together the flour, baking powder, cinnamon, baking soda and salt. Add the chopped dates. If the dates are fresh, they will likely be quite sticky. With clean hands, toss the dates with the flour mixture, breaking up the date pieces that are sticking together.
- Add the wet ingredients and the pecans to the dry ingredients. Stir just until combined. Over-mixing will result in tough muffins with tunnels.
- Fill prepared muffin tin(s) 3/4 full. A 3 tablespoon scoop, slightly over filled with batter, works well. Bake for 15-18 minutes or until a toothpick inserted in center of several muffins comes out clean. Watch the muffins carefully during the baking process. Do not over-cook them because it will result in dry, tough muffins. Suggestion: Every oven bakes differently. Check the muffins at the 14 minute mark. If the toothpick comes out very wet with batter, bake muffins for an additional 2 minutes and re-check. However, if the muffins test only a little bit wet, bake for an additional 1 minute and re-check.
- Remove muffins from pan(s) and cool on cooling rack. When cool, either wrap individually in plastic wrap or place several muffins together in plastic bags. Store in refrigerator or freezer.
DATE-NUT BRAN MUFFINS

- In a large bowl, combine the cereals and boiling water; let stand for 5 minutes. In another large bowl, combine the flour, sugar, baking soda and salt. In a small bowl, combine the eggs, buttermilk and oil. Stir cereal and buttermilk mixtures into dry ingredients just until blended. Fold in the dates, raisins and walnuts. , Fill paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a muffin pan with non-stick spray or line with paper muffin liners. Sift together the flour, baking powder, cinnamon and salt; set aside.
- In a medium bowl, cream together the sugar, margarine and egg with an electric mixer until light and fluffy. Mix in bananas, vanilla, cereal and dates. Blend in dry ingredients until just incorporated. Spoon into prepared muffin cups to about 2/3 full.
- Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan over a wire rack for at least 10 minutes before removing muffins from the pan.

- In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

CLOSE TO MIMI'S HONEY BRAN MUFFINS
I have been trying to find a recipe that would be close to the muffins at Mimi's restaurant. This one is the closest I have found and they ARE yummy. Found at Cooks.com. If you don't have buttermilk, just put two teaspoons apple cider vinegar in two cups regular milk and let stand for 15 minutes.

- GLAZE.
- Cream butter with sugars until light and fluffy.
- Beat in honey and water.
- Using a brush, coat bottom and sides of muffin tins.
- MUFFINS.
- Mix fruit, honey and oil until smooth.
- Beat in eggs, then buttermilk and bran.
- Sift flour, baking soda and salt together.
- Add to mixture and beat until just combined.
- Fill tins 3/4 full.
- Bake for 20 - 25 minutes until springy to the touch.
- Cool for 2 minutes then invert on rack to cool completely.
HONEY BRAN MUFFINS
These muffins are made with bran cereal, and sweetened with pineapple juice, brown sugar, and honey. The recipe requires the batter to be refrigerated for at least 3 hours. It can be made the night before, and then baked in the morning. Makes 20 regular muffins, or 12 jumbo muffins.

- In a small bowl, combine pineapple juice and raisins. Set aside.
- In a medium bowl, combine flour, baking soda and salt. Stir in cereal. Set aside.
- In a large mixing bowl, combine brown sugar, oil, honey, and eggs; mix well. Add cereal mixture, and mix well. Fold in the raisin mixture. Batter will be thin; it will thicken as it chills. Cover, and refrigerate for at least 3 hours or overnight.

- Preheat oven to 375°F.
- In a lg bowl combine the whole wheat and all purpose flours, bran, baking powder, baking soda and cinnamon. Stir in the dates.
- In another bowl, beat the egg substitute with sugar and oil until well mixed, then stir in the milk and apple.
- Pour into the flour mixture and stir just enough to moisten, being careful not to overmix.
- Spoon into nonstick or paper-lined medium muffin tins, filling almost to the top.

- Preheat oven to 350 F. Spread the wheat bran out onto a large baking sheet and set in the oven to toast for 6 – 8 minutes, stirring a couple times.
- Meanwhile, put the raisins and prunes in a small saucepan with the 1/4 cup water and butterscotch schnapps or tea. Bring to a boil, then reduce heat and simmer for about 10 minutes or until the liquid is mostly absorbed. Remove from heat. Let cool slightly, then puree the raisins and prunes in a mini food processor until smooth.
