Strawberry-Quinoa Spinach Salad image

We make quinoa with spinach and strawberries year-round, but it's most fun when we go to the farmers market to get the season's first berries. -Sarah Johnson, Indianapolis, Indiana

2 cups water
1 cup quinoa, rinsed
6 cups torn fresh spinach (about 5 ounces)
2 cups sliced fresh strawberries
1/2 cup chopped walnuts, toasted
1/2 cup reduced-fat red wine vinaigrette
1/4 cup shredded Dubliner or Parmesan cheese
1/4 teaspoon freshly ground pepper

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until water is absorbed. Remove from heat; fluff with a fork. Cool slightly., In a large bowl, combine spinach, strawberries, walnuts and quinoa. Drizzle with vinaigrette; toss to coat. Sprinkle with cheese and pepper.

Dash Diet Strawberry and Quinoa Salad With Goat Cheese image

Spruce up your lunch with this sweet and satisfying grain salad. This recipe has a good variety of healthy fats, carbs, and protein with minimal sodium. Use it as an entrée or scale back the portion for a side at dinner. If you want to add a little more protein to the meal, try adding cooked chicken or garbanzo beans.

1 1/2 cups quinoa
3 cups water
1 1/2 cups quartered strawberries
3 cups spinach, stems removed and cut into strips
1/4 cup roasted sunflower seeds
3 ounces crumbled goat cheese
balsamic dressing
1 1/2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey or 1 teaspoon sugar

Steps:

  • Bring 1.5 cups water to a boil, add quinoa and return to a boil. Reduce heat, cover and allow to simmer for 15 minutes or until all water is absorbed. Remove from heat and fluff with a fork. Cool for 10 minutes.
  • Place olive oil, balsamic vinegar, and honey in a small prep bowl and whisk together. Fold into the quinoa.
  • In a large salad bowl, gently toss quinoa, strawberries, spinach, goat cheese, and sunflower seeds together.

  • Add the uncooked quinoa to a saucepan along with 2 cups of water or vegetable stock and turn the heat to medium-high. Once the liquid starts simmering, turn the temperature down to low and place the lid on, cooking for about 15 minutes. Remove the saucepan from heat and allow it to sit for 10-15 minutes before removing to a large salad bowl and allowing it to cool.
  • Once cooled, add the cooked (or crispy) chickpeas, cucumber, bell pepper, fresh strawberries, pepitas, sunflower seeds, candied nuts and goat cheese.
  • by whisking together the dressing ingredients. Pour the dressing over the salad and toss everything to combine. Serve immediately or store in the fridge for later use.

  • To cook quinoa: Rinse quinoa with cold water in mesh strainer. In a medium saucepan, bring 1 ½ cups of water to a boil. Add in quinoa and bring mixture to a boil. Cover, reduce heat to low and let simmer for 15 minutes or until quinoa has absorbed all of the water. Remove from heat and fluff quinoa with fork; place in large bowl and set aside to cool for about 10 minutes. You should have a little over 2 cups of quinoa.
  • To make dressing: place olive oil, lemon juice, garlic, sugar/honey, basil, and salt in blender or food processor. Blend/process for 10-15 seconds; fold into quinoa.
  • Gently fold in strawberries and basil and any other add-ins you'd like such as chickpeas or chicken. Add salt or extra basil to taste. Place salad in refrigerator for few hours to let flavors marinate together. Once ready to serve, garnish salad with goat cheese, sunflower seeds and extra basil. I serve mine over a bed of spinach. Enjoy!
