Steps:
- Fry up the bacon and crumble in pieces. Cut up the green pepper and onion and cook in the bacon grease until soft. Combine all ingredients together. Let simmer in pan on low for at least an hour.
- Preheat oven to 350 degrees. Fry up the bacon and crumble in pieces. Remove the bacon with a slotted spoon and discard some grease. Add the green pepper and onion and fry until tender.
- Combine bacon, green pepper, and onion, pork and beans, ketchup, brown sugar, and Worcestershire sauce in a 9x13 inch pan. Bake covered for 1 hour. You can also simmer in a large pot on the stove for 1 hour.

- Combine all ingredients except bacon.
- Lay bacon across the top.
- Bake at 325°F for 2 hours.
BAKED BEANS
Steps:
- Preheat the oven to 325 degrees F.
- Put a heavy-bottomed pot (with a lid) over medium-high heat. Add the bacon and cook, stirring often, until the fat renders and bacon begins to crisp, about 6-8 minutes. Add the onion and cook until softened, about 5 minutes more. Stir in the ketchup, tomato puree, brown sugar, vinegar, Worcestershire, salt, pepper, and cayenne and mix well. Bring to a simmer and cook for 5 minutes. Stir in the beans until well coated, cover, and bake in the oven for 1 hour. Remove the lid and continue baking until sauce thickens and the beans begin to brown, about 15 minutes more. Remove from the oven and allow to cool at least 15 minutes before serving.
- Serve warm or at room temperature.

- Adjust oven rack to lower-middle position and heat oven to 325 degrees.
- Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
- Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.
- Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
- Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

- Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
- In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
- Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
- SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

- Cook bacon till crisp.
- Remove bacon, reserving about 3 Tbsp drippings in skillet. Drain and crumble bacon; set aside. Cook chopped onion in reserved drippings till tender.
- Stir in two cans pork and beans in tomato sauce, brown sugar, catsup, Worcestershire sauce, and prepared mustard.
- Turn into a 1 1/2 quart casserole. Bake, uncovered, in a 350 degree oven for 1 1/2 to 1 3/4 hours, or cook in the microwave oven on HI for 10 to 12 minutes.
- Stir 1/2 way through cooking time, Top with bacon.
- Let stand a few minutes before serving.

This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. - Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.

- Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
- Preheat oven to 300 degrees F (150 degrees C).
- Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
- Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
- Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.
