Frikadeller (Danish Meatballs) image

Frikadeller, or Danish Meatballs, are savory meatballs served in a rich, creamy sauce that is comfort food at its finest. Plus, they're super easy to make!

Provided by Erica Walker

Categories     Dinner     Main Course

Time 25m

Number Of Ingredients 19

3/4 lb ground beef
1 lb ground pork
1 onion (large, grated)
1/2 c. breadcrumbs
4 Tbsp flour
2 eggs
1/2 tsp salt
1/4 tsp pepper
1/4 tsp. nutmeg
2-3 cloves of garlic
1/2 tsp. sage leaves
half & half (or milk for consistency (1/4 to 1/2 c.))
butter
3/4 - 2 Tbsp drippings from Frickadeller
tiny butter if needed
3 Tbsp flour
1 c. heavy cream (Milk works too)
1 Tbsp. beef bouillon
salt & pepper

Steps:

  • Combine beef, pork and onion. Add breadcrumbs, flour, eggs, salt, pepper, nutmeg, garlic, and sage leaves (it works best if you mix it with your hands).
  • Slowly add half & half for consistency (you want them to be slightly sticky, you shouldn't be able to form them into a perfect ball). Coat large skillet well with butter. Drop clumps of mixture (a heaping tablespoon-size) onto the skillet.
  • Fry on medium to medium low heat until brown (press the meat down a lightly with a fork so it flattens out a little.. it should look like a fat hamburger.. see picture below), then flip (approx 3-5 minutes per side). Add more butter with each batch.
  • Serve with gravy (see below). **Don't wash the skillet-- you will want the brown bits and drippings for the gravy**
  • Add the flour to the drippings to form a roux (add butter if needed). Slowly add cream (or milk) until mixture reaches gravy consistency. Add beef bouillon, salt & pepper to taste.

This is a very tasty, but unique, meatball recipe perfect for holiday parties. For some reason, men love these! I have found that purchasing pre-made meatballs cuts the prep time significantly and tastes good, too.

SWEDISH MEATBALLS WITH CREAMY DILL SAUCE

Swedish Meatballs with Creamy Dill Sauce image

There are many versions of Swedish meatballs, and this is the way we like ours. They're juicy, tender, and flavorful in a creamy and rich sauce. We enjoy them over mashed potatoes or buttered noodles and served with lingonberry sauce or cranberry sauce.

Number Of Ingredients 21

cooking spray

½ cup finely chopped onion
½ cup finely chopped fresh parsley

  • Remove meatballs from the oven and add to the sauce mixture. Simmer for 3 minutes. Stir in sour cream, dill, and lemon zest. Season with salt and pepper and serve immediately.

DANISH MEATBALLS IN CURRY SAUCE (BOLLER I KARRY)

Danish Meatballs in Curry Sauce (Boller I Karry) image

This is a very traditional dish in Denmark. Don't let the list of ingredients scare you away, the dish goes together quite smoothly and quickly. I have opted for a mix of pork/turkey in the meatballs whereas the original recipe calls for pork only. In Denmark the ground pork is very lean (9-12% fat) but the fat is much higher in Canada, and the meatballs would be too greasy with only pork. However, if you can get lean (12%) ground pork you should use that only. I sometimes even make a mix of 1/3 each of ground pork, turkey and beef which works well, I make a big batch and freeze the rest of the meatballs. The dish is served over rice with a number of toppings that you add at the table (rasins, bananas, shredded coconut, diced cucumber - I personally never serve it with the toppings, but it is noted in the original recipe.

Categories     < 60 Mins

Time 1h

Yield 4 serving(s)

Number Of Ingredients 18

150 g ground lean pork
150 g lean ground turkey
3/4 teaspoon salt
1 shallot, finely chopped
1/2 teaspoon black pepper, freshly ground
1 egg
100 ml milk
4 tablespoons all-purpose flour
water
coarse salt
tops celery (optional)
1 tablespoon butter
1/4 cup shallot, finely chopped
2 teaspoons curry
1 small apple, peeled and shredded
2 1/2 tablespoons all-purpose flour
2 1/2 cups of water from the meatballs
1/2 teaspoon tarragon

Steps:

  • MEATBALLS:.
  • Mix the meats with salt, add scallion, pepper, egg and mix again. Add the milk bit by bit along with the flour. Let the meatballs rest for about 30 min in the fridge (I usually skip this step).
  • Boil approx 6 cups of water with salt added approx 1 tsp in a large pot.If you have it add a few tops of selleri for added flavour.
  • Stir the meatball dough again. Dip a large spoon in the water and take a spoonful of meatball dough and form into a ball. Place the ball in the water. (I usually form all the meatballs first and put on a plate while I wait for the water to boil, no stress and all meatballs can be placed in the water at the same time).
  • The meatballs should measure about the same diameter as when you make the OK sign with thumb and pointy finger :) - approx 2 inch.
  • Lower heat to a simmer when all meatballs are in the pot. Boil/simmer until the meatballs feels hard when pressed with a finger, approx 8-10 minute.
  • Remove from the water.
  • Take approx 3 cups of water the meatballs were cooked in, run it through a sieve and reserve for the sauce.
  • CURRY SAUCE:.
  • Melt the butter at high heat but do not let it brown; add scallion and let them fry for 1 minute
  • Reduce heat to medium and add curry and shredded apple. Stir 1 min and add the flour and stir until completely combined. Add tarragon.
  • Stir in the water from the meatballs a bit by bit (approx 2 1/2 - 3 cups depending on how thick you want your sauce). You can always use chicken broth if you run out of the water from the meatballs.
  • Add salt and pepper to taste if necessary and let the sauce simmer for 5 minute.
  • Add the meatballs to the sauce 5 min before serving and let them warm through in the sauce
  • Serve with rice,.

SWEDISH MEATBALLS WITH DILL SAUCE

Swedish Meatballs with Dill Sauce image

These IKEA-inspired meatballs can be made using beef, pork or veal mince, and for a vegetarian version you could try making it with a range of plant-based "mince" substitutes available nowadays. They are a little tender to handle when frying because they don't contain egg or bread soaked in water to bind them, so be gentle when turning them. Alternatively, you could add 1 egg and 2 slices of bread soaked in 1/2 cup of water to the mixture. For a more robust Scandinavian flavour, add 1 tablespoon horseradish.

Provided by Martyna @ Wholesome Cook

Time 30m

Number Of Ingredients 16

500 g beef or veal mince ((see note above))
1 teaspoon sea salt flakes
1/2 small onion (diced finely)
3 tablespoons chopped flat-leaf parsley leaves
1/2 teaspoon freshly ground black pepper
3 tablespoons olive, coconut or macadamia oil
100 g button mushrooms (sliced finely)
3/4 cup beef stock
1/2 cup cream or lactose-free cream
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sea salt flakes
3 tablespoons chopped dill
2 tablespoons filtered water
1.5 tablespoons arrowroot (tapioca flour)
1 cup raw buckwheat or activated buckwheat (buckinis)
1.5 cups water

Steps:

  • Place beef, salt, onion, parsley and pepper in a large bowl. Using your hands, knead the mixture until well combined. Divide into 20 bite-sized meatballs.
  • Heat oil in a large frying pan set over medium-high heat. Add meatballs and fry for 2 minutes on one side before reducing the heat to medium and turning meatballs to brown on the other side.
  • Add mushrooms and cook for a further minute, before adding stock, cream, pepper and salt.
  • Bring to a boil, reduce heat to low, cover and cook for 10 minutes. Mix water with arrowroot and stir through the sauce to thicken. Turn off heat and stir through dill.
  • Meanwhile, place buckwheat in a saucepan and cover with water. Bring to a boil, then lower heat and cook, stirring occasionally, for 10-15 minutes, or until buckwheat is soft but not mushy. Turn off heat and drain any excess water.
  • To serve, divide buckwheat between serving bowls and top with meatballs and sauce.
