DANISH KRINGLE
This recipe is from my father-in-law's mother who was born and raised in Denmark. It is a wonderful holiday pastry treat that is both beautiful and delicious. Plan to make your dough at least 1 to 2 days in advance--but it's very simple. It takes just a few minutes to prepare and refrigerate. Creating the kringle takes more time, but it is worth it!

Steps:
- In a large bowl, cut 1 cup butter into flour until crumbly, leaving pea-sized chunks. Stir in sour cream, and mix well; dough will be very sticky. Form dough into a ball. Cover tightly, and refrigerate 8 hours, or overnight.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet. Prepare the filling by combining 1 cup butter, brown sugar, and 1 cup chopped walnuts.
- Divide dough into three equal parts; return two parts to the refrigerator to keep cold. Quickly form 1/3 of the dough into a rectangle, and flour lightly. On a heavily floured surface, roll out to approximately 12x17 inches. Position lengthwise on the work surface. Along the long edges of the dough rectangle, use a sharp knife to cut 4 inch long angled lines about 1/2 inch apart. Spoon 1/3 of the filling along the length of the rectangle's uncut center. Alternating from one side of the dough to the other, fold each 1/2 inch wide strip towards the center, crisscrossing the filling in a braid-like fashion. Lightly press together the ends of the strips to seal. Sprinkle with 1/3 of the remaining walnuts. Repeat with remaining ingredients to form 3 braided danishes. Arrange danishes on prepared baking sheet.
- Bake for 30 minutes in the preheated oven, or until golden brown. Cool for approximately 30 minutes. While the danishes are cooling, prepare the icing: mix confectioners sugar and water until smooth. Drizzle in fine streams over warm danishes.

This is yet another of my family's recipes. My mom used to make this every Christmas morning. It was and is a special treat that I hope to carry on with my family. This recipe came from an old Betty Crocker cookbook. Glaze recipe for the puff follows the instructions.

Steps:
- Heat oven to 350ºF.
- Cut 1/2 cup softened butter into 1 cup flour, using pastry blender or crisscrossing 2 knives, until particles are size of coarse crumbs.
- Sprinkle 2 tablespoons water over mixture; mix with fork.
- Gather pastry into ball; divide in half.
- Pat each half into rectangle, 12x3 inches, about 3 inches apart on ungreased cookie sheet.
- Heat remaining 1/2 cup butter and 1 cup water to rolling boil in 2-quart saucepan; remove from heat.
- Quickly stir in almond extract and 1 cup flour.
- Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat.
- Add eggs; beat until smooth. Spread half of the topping over each rectangle.
- Bake about 1 hour or until topping is crisp and brown; remove from pan to wire rack. Cool completely.
- Spread with Creamy Almond Glaze; sprinkle with almonds.
- Creamy Almond Glaze:
- 1 1/2 cups powdered sugar; 2-3 tbsp butter, softened; 1/2 to 1 tsp almond extract; 1-2 tbsp warm water or milk.
- Mix all ingredients until smooth and spreadable and glaze the Danish puff.
KRINGLE
This recipe is posted by request. It is from the cookbook "Delectably Danish" by Julie Jensen McDonald. It was given to her by the owners of O & H bakeryin Racine Wisconsin and featured on the Food network.

Steps:
- Divide butter in half and spread each half on waxed paper to an 8x8 inch square.
- Chill.
- Dissolve yeast in warm water.
- Add lukewarm milk, sugar, salt, lemon extract and egg, mixing well.
- Add flour and mix until smooth.
- Roll dough on well floured board to an 12x8 inch rectangle.
- Place one piece of chilled butter on two thirds of dough.
- Fold uncovered third of dough over the middle third, then fold the remaining third over top.
- Again fold one end over middle third, and fold remaining third over top, making a square of nine layers.
- Wrap in waxed paper and refrigerate 30 minutes.
- Roll dough again to an 8x12 inch rectangle.
- Add chilled butter and fold the same way.
- This makes 18 layers.
- Refrigerate 2 hours.
- Cut dough into 2 equal pieces.
- Lightly roll one piece at a time, until piece is about 20x6 inches.
- Spread center third of dough with butterscotch filling, then add fruit, nuts, raisins and so on-- or top with jam.
- Fold one of the long edges to the middle, moisten other edge and fold over top to cover filling.
- Seal well.
- Put kringle on a greased baking sheet and form into an oval shape, pressing ends of kringle together to form a continuous circle.
- Flatten dough with hands.
- Cover kringle for 1 hour at 70 degrees.
- Bake at 350 degrees for 25-30 minutes or until golden brown.
- Cool, then ice with a mixture of powdered sugar and water.
KRINGLE (DANISH PUFF)

- Cut oleo into flour, add water to make crust.
- Divide into 2 (9x4) pieces on a large cookie sheet.
- Bring water and oleo to a boil, remove from heat, add flavoring.
- Add flour and mix quickly.
- Add eggs, one at a time, beat well after each addition.
- Divide and spread over crust.
- Bake at 350 degrees for 60 minutes.
- Drizzle with glaze.
- Sprinkle with chopped walnuts, if desired.
- Cool completely.
KRINGLA (DANISH PUFF PASTRY)
Another of my mom's specialties - this makes a very flaky pastry that comes apart in your mouth. Not exactly low-fat, but one can't have everything. Light enough for summer, but rich enough for winter.

- Heat oven to 350 degrees. To make the crust, cut the butter into the flour. Sprinkle with water and form into a dough. Shape into two 3" by 12" strips on an ungreased baking sheet.
- To make the topping, heat the butter and water to a full rolling boil in a saucepan. Remove from the heat and stir in flour and almond extract. Return to low heat and stir vigorously until it forms a ball (about 1 minute). Remove from heat and beat in eggs.
- Divide the topping in half and spread over crusts. Bake for 1 hour until brown and crispy.
- While the kringla is baking, make the icing. Sift the powdered sugar. Stir in milk and vanilla until smooth.
- After the pastries have cooled, top with the icing and let it set. When the icing has set, cut into strips.
DANISH KRINGLE
From Aebleskiver and More - A Sampling of Danish Recipes by Lisa Steen Riggs. I have heard this is devilishly hard to make, but well worth it if you can master it. I've never been able to make it. Hope you have better luck! Time required for chilling dough and for dough to rise are not included in prep time.

- For the pastry:.
- Blend the butter and 1/4 cup of the flour together and set aside.
- Dissolve yeast in the lukewarm water; add 1 Tbsp sugar, and let stand for 5 minutes.
- Beat together the egg (reserve 1 Tbsp for topping), cold milk, 2 tbsp sugar, salt, and the yeast mixture.
- Blend in remaining flour to form a stiff dough.
- Chill in refrigerator for about 45 minutes,
- When 45 minutes have passed, on a lightly floured surface, roll out to a 12-inch square.
- Roll the flour/butter mixture between sheets of waxed paper to a 10x4-inch rectangle, remove wax paper, and place the mixture in the center of the dough.
- Fold each side of the dough over the flour/butter mixture; turn slightly and roll out again to a 12-inch square.
- Repeat the folding and rolling process two more times.
- Wrap the dough in waxed paper and chill for 30-60 minutes.
- For the filling:.
- Blend all ingredients together, using enough cream to form a spreadable consistency - not too firm that it crumbles when spread, but not to soupy either.
- Assembly:.
- Preheat your oven to 375 degrees.
- Roll out chilled dough to a 24x12-inch rectangle, then cut lengthwise into two 24x6-inch strips.
- Spread each strip with filling, leaving at least 1/4 inch on all sides.
- Roll as a jelly roll, starting with the 24-inch edge.
- Moisten edges, seal, and stretch to about 30 inches.
- Place on a greased baking sheet.
- Shape into an oval or pretzel shape.
- Flatten to about 1/2-inch thickness.
- Brush with the reserved egg.
- Cover with a moist cloth, and let rise in a warm place for 30 minutes.
- Bake for 25-30 minutes or until golden brown and delicious.
