This gluten-free apple cake swaps flour, refined sugar and butter for ground almonds, agave syrup and olive oil - and it's gorgeous

125ml (½ cup) olive oil
140g (½ cup) maple syrup or agave syrup
2 eggs
130g (1/2 cup) apple sauce (shop-bought or homemade)
185g (2 cups) ground almonds
1 tsp baking powder
1 tsp cinnamon
1 apple , skin-on, cored and diced
tiny splash olive oil
1 tbsp maple syrup
½ tsp cinnamon

Steps:

  • Heat oven to 190C/170C fan/gas 5, and lightly oil a 20cm springform tin and line the base with a circle of baking parchment.
  • In a stand mixer, or using a hand blender, whizz together the oil and maple syrup for 30 secs. Add the eggs and whizz for another 1 min before adding the apple sauce and blending for a further 30 secs. Tip in the ground almonds, baking powder, 1 tsp salt and cinnamon, blend for 30 secs and your batter is done. Pour it into the tin, and bake for around 30-40 mins or until the top is a deep golden brown, the cake is coming away from the sides a little, and a skewer inserted into the centre comes out clean.
  • While it's cooking, make the topping. In a small frying pan, cook the apple gently with the rest of the topping ingredients and ½ tsp salt until the apple is soft and gently caramelised. When the cake is ready, scatter the bronzed apple chunks on top of the cake. You could also make it with chunks of caramelised peach or plum on top, or some cherry compote, or any berries which you have softened in a pan with a little water and maple syrup. Eat warm, as a pudding, with a spoonful of Greek yogurt, or cold with a cup of tea or coffee.

You can replace the apple in this cake with rhubarb, pear or firm peaches. Or leave the fruit out altogether and just sprinkle the cinnamon sugar mix onto the cake before baking, then you will have a very moist tea cake.

175g butter, softened
175g castor sugar
3 eggs
175g self-raising flour
500g Golden Delicious apples
1 tsp ground cinnamon
1 tbsp white sugar

Steps:

  • Preheat oven to 180 degrees. Grease a 22-centimetre round cake tin. Beat butter and sugar with an electric mixer until the mixture is light and fluffy. Beat in eggs, one at a time. Sieve flour into mixture and fold in thoroughly. The mixture will be quite stiff. Peel, core and quarter apples, then slice them thinly. Spread half the mixture in the bottom of the cake tin and cover with half the sliced apple. Cover with the rest of the mixture and arrange the remaining apple in a wheel pattern over the top. Mix cinnamon and white sugar then sprinkle over the apple. Place in the centre of the oven and bake for 35 minutes. To check if it's ready, insert a skewer in the centre; it should come out clean.

1 teaspoon almond extract
1 1/2 cups Original Bisquick™ mix
3 medium baking apples, peeled, cut into eighths
1 teaspoon powdered sugar
1/4 cup sliced almonds, toasted if desired

Steps:

  • Heat oven to 325°F. Spray bottom of 9-inch springform pan with cooking spray.
  • In large bowl, beat butter and granulated sugar with electric mixer on high speed 1 minute. Add eggs and almond extract; beat on medium speed about 10 seconds. Add Bisquick mix; beat on medium speed about 30 seconds or until combined.
  • Spread batter in bottom of pan. Press apple pieces, cut sides down, into batter. Bake 1 hour to 1 hour 10 minutes or until apples are tender and cake is golden brown.
  • Cool 30 minutes at room temperature. Remove side of pan. Sift or sprinkle powdered sugar over top of cake; sprinkle with almonds. Serve warm.

½ cup - Light brown sugar or caster sugar
1/4 cup - Unsalted Butter
½ cup - Milk
2 Eggs
½ tsp - Almond extract

¼ tsp - Salt
2 Medium sized apples peeled (cored and thinly sliced)
1 tbsp - Almond slices

Steps:

  • - If using whole almonds, grind the almonds along with the flour to form a fine powder.
  • - If using almond flour, mix both the flours evenly in a bowl.
  • - In a separate bowl, take the butter and sugar and whisk it until it turns pale and sightly fluffy.
  • - Add in the eggs and whisk until eggs are well combined.
  • - Add half of the flour and using a spatula, mix until all the flour is combined.
  • - Add in the milk and give this mixture another mix.
  • - Now shift in the remaining flour and baking powder, baking soda and salt into the bowl and fold everything gently until a smooth batter forms
  • - Pour the batter in a greased and lined baking pan and spread the sliced apples on top of the batter.
  • - Sprinkle the sliced almonds on top and bake the cake in a preheated oven for 45-55 minutes at 350 degrees until a knife comes out clean from the center.

1 stick (4 ounces) unsalted butter, softened

1 1/4 cups confectioners' sugar, plus more for dusting
1/2 teaspoon pure vanilla extract
2 eggs
4 egg yolks
1/4 cup sour cream

Steps:

  • Preheat oven to 350 degrees F.
  • Grease an 8-inch round cake pan with vegetable spray. An alternative is to butter and flour the cake pan.
  • In a medium bowl, whisk together the cornmeal, cake flour and baking powder and set aside.
  • Using a stand mixer with a paddle attachment, beat the butter and almond paste on high speed until smooth, about 5 minutes. Reduce speed to low and slowly add confectioners' sugar. Mix until thoroughly combined and light and fluffy. Raise speed to high and add the vanilla extract, whole eggs and egg yolks, 1 at a time. Mix until well combined. Reduce speed to medium and add the sour cream and dry ingredients and mix until just incorporated.

Roll each portion into an 18x15-in. rectangle; brush with butter. Sprinkle filling to within 1/2 in. of edges. , Starting with a short side, fold a third of the dough over filling; repeat with other side, making a 15x6-in. rectangle. Pinch seams to seal. Cut each into 15 slices. Twist each slice a few times; pinch ends together, forming a small circle. Place 2 in. apart on greased baking sheets. , Bake at 400° for 12-15 minutes or until golden brown. 1/2 cup ground almonds
1/4 cup sugar
1/2 cup cold butter

1 egg, lightly beaten
TOPPING:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour

4 cups thinly sliced peeled tart apples

  • In a small bowl, combine flour, almonds and sugar; cut in butter until crumbly. Add extract. Shape dough into a ball; place between two sheets of waxed paper. Roll out into a 10-in. circle. Transfer to a greased 9-in. springform pan; gently press dough against the bottom and up the sides of pan. Refrigerate for 30 minutes. , In a small bowl, beat the cream cheese, sugar and cream of tartar until smooth. Add egg; beat on low just until combined. 1 egg yolk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg yolk in measuring cup and add enough milk to make 2/3 cup total liquid. 1 teaspoon salt
1 cup butter
1 egg yolk
⅔ cup cold water
1 cup cornflakes cereal
10 apples - peeled, cored and sliced
¾ cup white sugar
2 teaspoons ground cinnamon
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon almond extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a cup, beat egg yolk, stir the cold water into the yolk. Gradually stir the egg mixture into the flour mixture until dough can be packed into a ball. On a clean dry surface, roll out 1/2 of the dough large enough to cover the bottom and sides of a 9x13 inch pan. Lay the dough in the pan.
  • Place the cornflakes over the dough in the pan. Arrange apple slices over the top of the corn flake layer. Sprinkle the sugar and cinnamon over the apples. Roll out the second half of the dough to cover the entire pan. Lay over the filling and pinch the edges of the two crusts together. Beat the egg white until foamy, and brush onto the top crust.
  • Bake for 45 to 50 minutes in the preheated oven, until golden brown. Drizzle with glaze while still warm.
  • To make the glaze: In a small bowl, beat the confectioners' sugar with the milk and almond extract until smooth.

A former neighbor of mine & I were trying out recipes from some newly acquired military community cookbooks we had "won" together on Ebay. My neighbor found this recipe in one called "Recipes on Parade:Desserts" and since we both had a copy of the cookbook, we both tried it out - and loved the recipe. You would serve this scooped into a bowl, garnished with a little shredded cheddar and whipped cream, or as my neighbor preferred, some vanilla ice cream. This tastes best warm. This is called a "cake" but is not a typical slicing cake.

This cake is truly delicious and has been a firm favourite in our family for years. Great for special occasions when you have people over. It keeps well for at least a week in an airtight tin.

125 g butter
170 g sugar
2 eggs
100 g almonds, ground
80 g self-raising flour
125 ml whole milk
1 teaspoon vanilla essence
1/2 teaspoon baking powder
12 soft dessert prunes
100 g walnuts, chopped
5 tablespoons sugar
2 green apples, cored and peeled
25 g butter, cut into small cubes
1 teaspoon cinnamon

Steps:

  • Preheat oven to 375F / 190°C.
  • Cream together 125g butter and 170g sugar.
  • Add well beaten aggs, almonds, self-raising flour, milk, vanilla and baking powder.
  • Alternatively, place all these ingredients in a food processor for 10 seconds. Run a spatula around the bowl and process for a further 5 seconds.
  • Either way, place the batter into a well greased 23 cm torte tin.
  • Stone prunes and coarsely chop and place on batter.
  • Mix walnuts with 2T sugar and spoon over the batter.
  • Thinly slice apples and place over the top of the walnuts.
  • Bake the cake for 40 minutes.
  • Carefully remove the cake from the oven by pulling out the rack it is sitting on.
  • Quickly sprinkle over the apples 3T sugar, cubed butter and cinnamon.
  • Slide the cake back into the oven and bake for a further 15 to 20 minutes or until a skewer comes out clean from the centre of the cake.
  • Serve the cake with whipped cream.

1 kilogram (2 pounds) Granny Smith apples
90 grams (3 ounces) butter
sugar to taste
2 cups (4 ounces) fresh breadcrumbs
3 tablespoons sugar
1/2 cup (4 fluid ounces) cream, whipped
red currant jelly (or jam)

Steps:

  • Peel, core and thinly slice the apples. Put into a stainless steel or enamel pan with a little water. Cover and cook gently until soft, then purée. Stir in 1 tablespoon of butter and enough sugar to taste. Melt remaining butter in a frying pan, add breadcrumbs and sugar and stir until golden. Allow to cool.
  • Just before serving, arrange alternate layers of apple purée and crumbs in a serving dish or individual bowls. Finish with a sprinkling of crumbs, decorate with whipped cream and red currant jelly.
