3 cups all-purpose flour
1 cup whole wheat flour
½ cup wheat, rye, and flax hot cereal mix (such as Red River®)
1 teaspoon salt
½ teaspoon active dry yeast
2 ½ cups warm water

Steps:

  • Whisk all-purpose flour, whole wheat flour, wheat cereal mix, salt, and yeast together in a large bowl. Pour in water; stir until well blended. Cover bowl with plastic wrap and let dough rest at room temperature, 12 to 18 hours.
  • Push dough gently to deflate; form into a ball. Transfer to a bread pan. Let dough rest, 2 to 4 hours.
  • Preheat oven to 425 degrees F (220 degrees C). Make a 1/2-inch cut in the top of the dough.
  • Bake in the preheated oven until crust is well-browned, about 45 minutes.

1 1/4 cups multi-grain hot cereal (seven grain hot cereal)
1 1/2 cups cold water
1 cup 2% low-fat milk (cold)
1/4 cup honey
1/4 cup molasses
4 tablespoons butter
1 (1/4 ounce) package yeast
3 cups flour
1 1/2 cups whole wheat flour
1/3 cup flax seed meal
2 tablespoons flax seeds
1/3 cup salted sunflower seeds (prefer dry roasted)
1/2 cup english walnuts (chopped)
1 tablespoon salt
2 tablespoons vegetable oil

Steps:

  • In a small heavy sauce pan bring 1 1/2 cups water, honey, molasses and butter to a boil.
  • Slowly stir in the 1 1/4 cups of multi grain cereal. Lower heat, cover and simmer for 10 minutes.
  • In a large bowl combine cooked cereal and the 1 cup of cold milk. Allow to cool to approximately 85 degrees.
  • Add the yeast and stir to dissolve. Continue stirring to combine ingredients or use a large mixer to mix well.
  • Mix the flours and salt in a separate bowl. Attach dough hook to mixer and start on low speed.
  • Add flour to cereal mixture one cup at a time.
  • Add flax and sunflower seeds and nuts.
  • Continue mixing until dough cleans the sides of the bowl (you may need to add more flour).
  • Remove from mixer and place on floured surface. Knead for 5 minutes.
  • Clean the mixer bowl, add two tablespoons of vegetable oil to clean bowl and spread around in bowl to cover sides.
  • Place dough in bowl and flip it over so the oily side is on top.
  • Turn on your oven light (this provides the warmth to proof your dough). Place bowl in the oven and close door. Let rise until dough is double in size - about one hour.
  • Remove from oven, place on floured surface, separate into 2 pieces, knead each piece for 5 minutes, form each into a cylinder to fit the loaf pans. Oil loaf pans, place dough in loaf pans and return to oven.
  • Remember to leave the light on, let dough rise for 1 hour or until dough mounds above the pan, then bake for 35-40 minutes at 375 degrees.

3 tablespoons raw unsalted pepitas
3 tablespoons raw unsalted sunflower seeds
1 teaspoon raw sesame seeds
1 teaspoon poppy seeds
2 cups hot water
1 ½ cups 7-grain hot cereal mix
2 tablespoons honey
2 tablespoons vegetable oil
3 ½ cups bread flour
1 ½ teaspoons salt
1 teaspoon instant or rapid-rise yeast
1 large egg, lightly beaten

Steps:

  • In a small bowl, combine pepitas, sunflower seeds, sesame seeds, and poppy seeds. Set aside.
  • In bowl of stand mixer, combine hot water, cereal mix, honey, and oil and let sit for 10 minutes.
  • Add flour, salt, and yeast to cereal mixture. Fit stand mixer with dough hook and knead on low speed until dough is smooth and elastic, about 5 minutes.
  • Remove 2 tablespoons of the seed mix and reserve for the topping, and add the remaining seed mix to the dough, and mix for 1 additional minute.
  • Turn out dough onto lightly floured surface, and knead until seeds are evenly distributed, about 2 minutes.
  • Oil a large bowl, and add the dough to the oiled bowl. Flip the dough over so that both sides of the dough have a small amount of oil on them, and cover the bowl with plastic wrap. Let dough rise at room temperature until doubled in size and fingertip depression in dough springs back slowly, 60 to 90 minutes.
  • Turn dough out onto a lightly floured surface, and punch down. Knead dough a few times, and place on a rimmed baking sheet that's been lined with parchment paper. Shape dough into a round ball, and cover loosely with plastic wrap. Let rise at room temperature until doubled in size, about 1 hour.
  • Adjust oven racks to upper-middle and lowest positions and heat oven to 425 ° F.
  • Using sharp knife, make ¼ inch-deep X in the top of the dough. Brush dough with beaten egg, and sprinkle remaining 2 tablespoons seed mixture evenly over top, pressing some of the seeds onto the sides.
  • Place a loaf pan on lowest oven rack and fill with 1 cup of hot water. Place baking sheet with dough loaf on upper-middle rack and immediately reduce oven to 375° F. Bake until crust is dark brown, about 45 minutes or until an instant read thermometer reads 200° F. Transfer loaf to wire rack and let cool completely.

2 tbsp millet
2 tbsp flax seed
2 tbsp chia seeds
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp sesame seeds
2 cups water
2 tsp yeast
3 tbsp molasses
2 tsp salt
1/2 cup rye flour
1/2 cup whole wheat flour
1 cup bread flour
3 1/2 cups all-purpose unbleached flour

Steps:

  • Place the millet, flax seed, chia seeds, sunflower seeds, pumpkin seeds, and sesame seeds in a pan. Heat the seeds over medium-high heat for about 3-5 minutes or until you can hear the seeds crackling. Make sure to mix occasionally to prevent the seeds from burning on one side.
  • Remove the seeds from the hot pan and place them into a small bowl. Pour 3/4 cup boiling water over the seeds or just enough to cover them. Then cover with plastic wrap and let the seeds cool.
  • In a large mixing bowl, combine 2 cups warm water (110 degrees Fahrenheit) with 3 tbsp molasses.
  • Then evenly sprinkle 2 tsp yeast on top of the water and molasses. Wait until the yeast becomes slightly frothy.
  • Sift 2 tsp salt, 1/2 cup rye flour, 1/2 whole wheat flour, 1 cup bread flour, and 3 1/2 cups all-purpose unbleached flour into a bowl. Then stir the dry ingredients so that all the different flours are well combined.
  • Add the dry ingredients to the wet and combine it with a wooden spoon until well incorporated.
  • . Place the soaked seeds into the dough. If the seeds have any extra water on top, strain before you add it to the dough.
  • Begin working the seeds into the dough with your hands. I found that stretching the dough helps incorporate the seeds best. Once you don't see any more patches of flour, stop kneading the dough.
  • Place the dough into a large bowl (no grease necessary). Sprinkle a small amount of flour on top and cover the dough with a kitchen towel. Then let it sit at room temperature for 1 hour and 30 minutes. (Keep between 68-70 degrees Fahrenheit).
  • 10. After 1 hour and 30 minutes go by, deflate the dough and shape is back into a ball with your hands. Cover with a kitchen towel again and let is sit at room temperature overnight or 8 hours.
  • 11. . After 8 hours have passed, deflate the dough once more and reshape it into a ball and place it back into the bowl. Cover with a kitchen towel and let it sit in a warm place for 2 hours or until it doubles in size. To speed up this step, turn your oven onto the proof cycle and place it in your oven. If you don't have a proof setting on your oven, turn your oven on to 300 degrees Fahrenheit for 2 minutes and turn it off. This should be just enough warmth to let the dough proof.
  • 12. Remove the proofed dough onto a floured surface and divide it into halves.
  • 13. Shape each piece of dough into squares, then fold in each corner of the square towards the center.
  • 14. Shape the dough into a smooth ball and place it into lightly floured 9-inch proofing baskets. Dust the dough with flour and cover with a kitchen towel. Let it proof in a warm place for 1 hour and 30 minutes or until it doubles in size.
  • 15. Place a cast iron or Dutch oven pot (with lid) into the oven and let it heat up to 500 degrees Fahrenheit.
  • 16. Once the oven reaches 500 degrees Fahrenheit remove the pot from the oven. Open the lid and dust the bottom of the pot with flour. Gently flip the proofed dough into the cast iron or Dutch oven pot.
  • 17. (optional) Using a sharp blade make a few decorative slits into the top of the dough.
  • 18. Using a spray bottle, lightly spray the bread dough with 3-4 sprays of warm water. Then place the hot lid on top and bake at 430 degrees Fahrenheit for 20 minutes.
  • Note: Most people place an oven safe bowl filled with water in the oven to achieve that nice bread crust; I find that lightly spraying the bread with warm water is an easier way to achieve the same results.
  • 19. Then remove the lid from the pot and bake for an additional 15-20 minutes at the same temperature.
  • 20. The moment the bread is baked, CAREFULLY remove the bread with a spatula and place it onto the cooling rack. Be very cautious as the cast iron will be extremely hot.

Additionally, local humidity conditions will impact how your dough feels from one batch to another (or seasonally). Feel free to adjust the water or flour as needed, after mixing in the soaker. If the dough feels a bit too dry, try adding a teaspoon of water (more if needed). Too wet? Add more flour, a little at a time (I've added up to 1/4 C more before!). Even if you weigh your ingredients, this is not uncommon. As you gain experience in making sourdough, you'll gain a better understanding of how your dough should look and feel.Total time above does not include the amount of time for fermentation and proofing which takes between 8-14 hours, depending on ambient temperature. 2 Tbs (25g) Red Quinoa (rinsed)
2 Tbs (25g) Flax Seed
2 Tbs (25g) Hulled Sunflower Seeds (unsalted)
3/4 C (155g) Hot Water (about 150F (65C), or soak the grains and seeds overnight in room temperature water)
1/4 C (50g) Sourdough Starter (previously fed, bubbly and active )
1 1/3 C (300g) Warm Water (about 80f (26c))
2 1/2 Tbs (50g) Maple Syrup
3 C (400g) Bread Flour
1/2 C + 1 Tbs (100g) Whole Wheat Bread Flour (or whole wheat flour)
2 tsp (16g) Fine Sea Salt

Steps:

  • In a medium mixing bowl add the cereal, rolled oats, quinoa, flax seeds, sunflower seeds and water. Set aside.
  • Mix the Dough: In the evening, whisk the starter, water and maple syrup together in a large bowl with a fork. Add the flours and salt. First, mix with a fork, the dough will be shaggy. Then mix by hand, mixing, folding and pushing the dough until the flour is fully incorporated and no dry bits are present. It will seem dry at first, but the more you work the dough, the more hydrated it will become. The dough will feel stiff and it will stick to your fingers as you go. Do this for about 3-4 minutes. Use the fork to scrape off the dough on your fingers as much as you can. Cover bowl with a damp tea towel. Set a timer for for 30 minutes and allow the dough to rest for 30 minutes. Now is a good time to feed/refresh your starter.
  • Incorporate the Soaker: After the dough has rested, mix in the soaker. To do this, dump the soaker on top of the dough and begin kneading and folding the dough over and on top of itself, incorporating the ingredients of the soaker. Do this for about 1-2 minutes or until the soaker is evenly distributed in the dough. It will seem like a lot of added bits, but as you work the dough and as the dough develops through fermentation, the soaker will incorporate. The dough will be stiff, wet and sticky. If adjusting water or flour, now is the time to assess the dough and adjust as needed. Set a timer for 30 minutes and allow the dough to rest for 30 minutes.
  • Fold the Dough: After the dough has rested, fold the dough. To do this, grab a portion of the dough while it remains in the bowl, stretch it up and fold it over, pressing your fingertips into the center of the dough. You'll notice the dough is less stiff and more workable at this point. Repeat, until you've worked your way around the dough. This is the first fold, and you can stop here and begin bulk fermentation, but If time permits, and optimally, you'll want to repeat this fold two more times as it improves the final dough's structure and crumb. Allow for about 30-45 minutes each between folds.
  • Bulk (fermentation) Rise: After the last fold, cover the bowl with a damp towel and allow to rise overnight at room temperature. This will take about 8-10 hours at 70F (21C), but in a cooler kitchen the dough can take up to 12-14 hours to rise - this is the norm in my chilly kitchen. The dough is ready when it no longer looks dense, is jiggly when the bowl is shaken, and has about doubled in size.
  • Shape the Dough: In the morning, and with damp fingertips, coax the dough into a floured work-surface. If making two boules (1 pound / 453 grams - each), moisten the cutting end of the bench scraper and cut the dough in half. For one or two boules, with moist fingers, take a portion of the dough, gently stretch it towards you and fold it over towards the center and pressing it down gently. Repeat this process until you work the dough all the way around. Using a bench scraper flip the dough over and let rest for 10 minutes. Meanwhile, line an 8-inch (20cm) bowl with a towel or lightly flour a banneton (or two as needed). Scrape any excess flour away on your work-surface using the bench scraper and using a spray bottle with water, lightly sprits the surface of the work-surface. This will help the dough grip the surface and help create a taught dough. With lightly floured hands and using the bench scraper again as needed to help move the dough (the dough is sticky), cup your left hand around the dough and pull the dough toward you in a circular motion with the bench scraper in the right hand, to tighten its shape and create a taught skin. Use the bench scraper as needed to work the dough as this dough is sticky. Re-flour your hands as needed.Once the surface is taut, give it a good dusting of flour and smooth it over the top. With one swift move, use the bench scraper to scoop the dough up and, place the dough into the bowl/banneton, bottom side up. Sprinkle the bottom of the dough with a dusting of flour.
  • Second (proof) Rise: Cover the bowl with a damp tea towel and let rest for 30 minutes to 45 minutes. The dough is ready when it looks puffy and has risen slightly but has not yet doubled in size. Preheat the oven to 500F (260C). Arrange a rack in the center of the oven, and another just below it. Place a sheet pan on the bottom rack (see UPDATE just below). Cut a sheet of parchment paper to fit the size of your lidded baking vessel leaving enough excess around the sides to transfer the bread to the pot. UPDATE: Burnt Sourdough Bottom: After testing various methods to remedy the too dark bottom problem, as commenters have mentioned on this sourdough recipe (and on other non V&B recipes - this is not uncommon in the sourdough world), I've finally found the simplest solution ever (duh!). Simply place a sheet pan on the oven rack under the rack your baking vessel is setting on. This protects the bottom of the vessel from the most intense heat of the oven.
  • Score: To turn the dough out of the bowl/banneton, place the parchment over the dough and invert the bowl to release. Using the tip of a lame or a razor blade, score the dough about 1/2" (8mm) deep and about 2-3" (5-7cm) long on the top or any way you like. Use the parchment to transfer the dough to the baking pot.
  • Bake: Place your lidded vessel on the center rack and reduce heat to 450F (232C). Bake, lidded, for 20 minutes. Remove the lid and continue to bake for 30 -35 minutes, for one, 2 lb boule. If baking two, 1 lb boules, continue to bake lid off for 15-20 minutes. To check if the bread is ready, check the internal temperature of the loaf. It should read between 190F-205F when done. When finished, transfer to a wire rack. Cool for 1 hour before slicing. Sourdough is best consumed on the same day it's baked, but it lasts for 3-4 days stored at room temperature. Store at room temperature cut sides down.This bread freezes beautifully. Store baked bread in a freezer bag either whole or sliced for up to two weeks. Thaw at room temperature. This bread can go from freezer to toaster to make the most delicious toast!

1/2 cup wild rice
2 1/2 cups warm water (105°F. to 115°F.)
2 tablespoons honey
1 envelope dry yeast
3 cups whole wheat flour
1 cup nonfat dry milk powder
3/4 cup toasted shelled sunflower seeds
1/2 cup toasted wheat germ
1/4 cup vegetable oil
2 teaspoons salt
2 1/2 cups (about) bread flour
1 large egg beaten with 2 tablespoons water

Steps:

  • Cook rice in medium pot of boiling salted water until very tender, about 40 minutes. Drain. Cool completely.
  • Stir warm water and honey in large bowl. Sprinkle yeast over, let stand until foamy, about 8 minutes. Add rice, whole wheat flour, dry milk, 1/2 cup sunflower seeds, wheat germ, oil and salt and stir until well blended. Gradually mix in enough bread flour to form dough. Cover dough and let rest 15 minutes.
  • Turn out dough onto floured surface. Knead until smooth and elastic, adding more bread flour if sticky, about 10 minutes. Oil large bowl. Add dough, turning to coat. Cover bowl with clean kitchen towel. Let dough rise in warm area until doubled, about 1 hour.
  • Line large baking sheet with parchment. Punch down dough. Turn out onto lightly oiled surface. Knead briefly. Divide dough into 2 pieces. Roll each piece between work surface and palms into 12x3-inch loaf. Transfer loaves to oiled baking sheet, spacing evenly. Cover with kitchen towel. Let rise in warm area until almost doubled, about 45 minutes.
  • Preheat oven to 375°F. Brush loaves generously with egg mixture. Sprinkle with 1/4 cup sunflower seeds. Using sharp knife, cut 3 slashes crosswise in surface of each loaf. Bake until golden and tester inserted into center comes out clean, 35 minutes. Transfer loaves to racks; cool.(Can be made 1 day ahead. Wrap in plastic and store at room temperature.)

Sponge:
1 1/2 cups water
1/4 teaspoons yeast
3 cups white, whole wheat flour
Final Dough:
4 tablespoons millet (raw)
4 tablespoons sunflower seeds (raw)
4 tablespoons pepitas ( pumpkin seeds, raw)
Optional: 2 tablespoons poppy seeds
2 tablespoons water
1 teaspoons yeast
1/4 cups honey
1 teaspoons molasses
3 tablespoons cereal (10-grain, such as Bob's Red Mill)
2 tablespoons cooking oil
1 1/2 teaspoons salt
1/2 cup flour (or more as needed for adjustments)
1 tablespoon wheat gluten (vital)

Steps:

  • If you are using instant yeast, stir it into the flour, then add the water and mix. If you are using regular, active dry yeast, mix the 1/4 teaspoon with a few tablespoons of the water until the yeast dissolves, then mix in 3 cups of flour.
  • Either way, stir until the dough forms a very thick batter, cover and let rise for 4 or more hours at room temperature. Learn more about instant vs. active dry yeast here.
  • Place the millet, sunflower seeds and pepitas you are using in a hot, dry skillet and toast 5 - 7 minutes until they begin to pop, stirring often. It is best not to leave the room while performing this procedure, seeds burn very quickly.
  • Remove from heat and cool to room temperature.
  • When your sponge has risen and shows small bubbles all over the surface, stir it down.
  • Dissolve the 1 teaspoon of yeast in about 2 tablespoons of water.
  • In a separate bowl, stir together honey, molasses, and oil. Stir in dissolved yeast and 10-grain cereal. It can also be 7 grain or other cracked grain cereal of your choice.
  • Add sponge, 1/4 cup of flour, salt, and vital wheat gluten. Mix until the dough comes together to form a ball.
  • Knead for 5 to 10 minutes, adding flour until dough is only slightly sticky. Stir or knead in the toasted seeds and the poppy seeds, if using. Adjust dough consistency with flour or a little water as needed.
  • Gather dough into a ball with wet hands and place in a clean, oiled bowl, turning once to coat. Cover bowl and let rise at room temperature until doubled in bulk.
  • Preheat oven to 450°F.
  • Turn out onto lightly floured board and pat into a rectangle. Fold in thirds, then fold the other side, letter style, over the first. Brush off all excess flour. Rock the loaf into a long, torpedo shape and place on a parchment paper-lined pan.
  • Optional: Dust the top with flour or whisk an egg white, brush it on and decorate with more seeds.
  • Cover loaf of bread with plastic wrap and let rise for 30 or so minutes. Slash the top with a sharp razor blade or serrated knife.
  • Bake for 10 minutes using steam , then reduce the temperature to 400°F and bake for 30 to 40 more minutes, or until the internal temperature of the bread is at least 190°F.
  • This bread over- browns easily, due to the honey and, if using, the seeds decorating the loaf. If the bread is browning too, much, reduce oven temperature to 350°F and tent bread with aluminum foil.
  • Let the bread cool on a rack to allow air flow around it, then slice.

  • Measure the dry ingredients. Use dry-ingredient measuring cups (avoid 2 cup measures, which compress the flour) to gently scoop up flour, then sweep the top level with a knife or spatula.
  • Mix with water — kneading is unnecessary. Heat the water to slightly warmer than body temperature (about 100 degrees Fahrenheit). Add to the dry ingredients and mix without kneading, using a spoon, food processor (with dough attachment), or heavy-duty stand mixer (with paddle).
  • Allow to rise. Cover with a lid (not airtight) or cover loosely with plastic wrap. Allow the mixture to rise at room temperature until it begins to collapse (or at least flatten on top), which will take about 2 hours.
  • Quickly shape a loaf. First, prepare a pizza peel by sprinkling it liberally with cornmeal (or lining it with parchment paper or a silicone mat) to prevent your loaf from sticking to it when you slide it into the oven.
  • Form a narrow, oval-shaped loaf and let it rest. Stretch the ball gently to elongate it, and taper the ends by rolling them between your palms and pinching them.
  • Allow the loaf to rest — covered loosely with plastic wrap — on the pizza peel for 90 minutes (40 minutes if you’re using fresh, unrefrigerated dough).
  • Thirty minutes before baking, preheat the oven to 450 degrees, with a baking stone placed on the middle rack. Place an empty broiler tray for holding water on any other rack that won’t interfere with the rising bread.
  • Paint and slash. Just before baking, use a pastry brush to paint the top of the loaf with a little water. Sprinkle with the seed and nut mixture. Slash the loaf with quarter-inch-deep parallel cuts across the top, using a serrated bread knife.
  • Baking with steam. After a 30-minute preheat, you’re ready to bake. With a quick forward jerking motion of the wrist, slide the loaf off the pizza peel and onto the preheated baking stone.
  • Store the remaining dough in your container in the refrigerator and use it over the next couple of weeks. You’ll find that even one day’s storage improves the flavor and texture of your bread.
