1 stick unsalted butter, plus more for the dish
1 large onion, chopped
1 tablespoon plus 1/4 teaspoon sugar
Kosher salt
12 ounces wide egg noodles
Freshly ground pepper
3 large eggs
2 cups small-curd cottage cheese
2 cups sour cream
2 cups whole milk
Pinch of ground cinnamon
1/2 teaspoon grated orange zest
3 cups cornflakes, coarsely crushed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large skillet over medium heat. Add the onion and 1/4 teaspoon sugar and cook until soft and golden brown, 8 to 10 minutes. Transfer to a large bowl, reserving the skillet.
  • Meanwhile, bring a large pot of salted water to a boil; add the noodles and cook until al dente, about 6 minutes. Drain the noodles and add to the bowl with the onion mixture; season with salt and pepper.
  • Pulse the eggs, cottage cheese, sour cream, milk, cinnamon, orange zest, the remaining 1 tablespoon sugar and 1 teaspoon salt in a food processor until smooth. Add to the noodles and toss, then transfer the mixture to the prepared dish. Melt the remaining 2 tablespoons butter in the skillet over medium heat, add the cornflakes and toss. Sprinkle over the pasta and bake until just set, 35 to 40 minutes. Let rest 10 minutes before serving.

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a 1-quart baking dish with nonstick cooking spray.
  • In a bowl, mix together the eggs with white sugar until thoroughly combined, then stir in the melted butter, whipped cottage cheese, sour cream, salt, and pepper. Lightly mix in the noodles; spoon the kugel into the prepared baking dish. Sprinkle the top with brown sugar.
  • Bake in the preheated oven until the top has browned, about 40 minutes. Cool for 10 minutes before serving.

This is the classic noodle kugel that my mom always made for Shabbat dinner. It is incredibly easy to make and tastes so good!

1 (16 ounce) package egg noodles
½ cup margarine
4 eggs, beaten
1 cup white sugar
1 ½ cups applesauce
1 teaspoon vanilla extract
ground cinnamon, for dusting

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, applesauce, and vanilla extract. Pour noodle mixture into a 9x13 inch baking pan, then sprinkle with cinnamon. Cover baking pan with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

1/4 cup butter, melted

2 cups 4% cottage cheese
2 cups sour cream
2 cups 2% milk
1 package (8 ounces) cream cheese, softened
1-1/4 cups sugar, divided
1 teaspoon vanilla extract
1/8 teaspoon salt
1 tablespoon ground cinnamon

Steps:

  • Cook noodles according to package directions; drain. Toss with butter; set aside. In a large bowl, beat the eggs for 3-4 minutes or until thickened and lemon-colored. Beat in the cottage cheese, sour cream, milk, cream cheese, 1 cup sugar, vanilla and salt until blended. Stir in noodles., Transfer to a greased 13x9-in. baking dish. Combine the cinnamon and remaining sugar; sprinkle over noodle mixture. , Bake, uncovered, at 350° for 55-60 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

12 ounces egg-free ribbon-style noodles (see note)
12.3-ounce container firm or extra-firm silken tofu
8-ounce container vegan cream cheese, at room temperature
1 cup lightly drained crushed pineapple
2/3 cup dark or golden raisins
1 medium apple or pear, peeled, cored, and finely diced
1/4 cup vegan butter, melted
2/3 cup natural granulated sugar
2 teaspoons vanilla extract
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350º F.
  • Cook the noodles according to package directions, then drain.
  • In a large mixing bowl, mash the tofu and cream cheese together until finely crumbled.
  • Stir in the cooked noodles and all the remaining ingredients. Transfer the mixture to an oiled, shallow round or rectangular 2-quart casserole dish.
  • Bake for 30 to 40 minutes, or until the top begins to turn golden. Let stand 15 minutes before serving. This is also good served at room temperature.

2 garlic cloves, minced
2 teaspoons Worcestershire sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried tarragon
2 dashes hot pepper sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup green bell pepper, chopped
1/4 cup scallion, chopped
4 tablespoons butter
paprika (optional)

Steps:

  • Cook noodles until "al dente" (both types together or not, they may reach al dente at different times-read box/package) and rinse with hot water and drain well. Set aside.
  • Meanwhile, in a large bowl combine cottage cheese, sour cream, garlic, Worcestershire sauce, herbs, hot pepper sauce and salt and pepper. Mix together well.
  • In a large skillet, saute onion and green pepper in heated butter for about 5 minutes and add the noodles, stirring until well blended.
  • Add the noodles to the cottage cheese mixture and pour the blend into a buttered 9" X 13" baking dish. Sprinkle with paprika for color if you like.
  • Bake at 350 degrees F. for 45 minutes until hot and bubbly.

1 1/2 cups raisins (or use any dried fruit of choice)
5 large eggs
1 cup sour cream
1/3 cup melted butter
2/3 cup sugar (if your prefer a sweeter kugel then increase amount to taste)
1 -2 teaspoon cinnamon
1/8 teaspoon salt
1 quart full-fat milk (4 cups)

Steps:

  • Butter a 13 x 9-inch baking pan.
  • Spread the UNCOOKED egg noodles and raisins or dried fruit into the pan.
  • In a bowl in whisk the eggs with sour cream until very smooth, then whisk in melted butter, sugar, cinnamon and salt; whisk vigorously until well combined and no sugar granules remain (mix in order stated starting with eggs and sour cream).
  • Whisk in the milk until combined (at this point you may add in more sugar if desired).
  • Pour the mixture over the dry noodles and mix very lightly (your pan will be very full).
  • Allow to sit out for 5-7 minutes.
  • Set oven to 350 degrees F.
  • Bake for about 50-60 minutes or until the kugel is just set in the middle.
  • Serve warm, cold or at room temperature.
