SPICED + CRISPY BAKED POTATO WEDGES (OIL-FREE)
These potato wedges are oil-free, yet crispy as can be. First steamed, then tossed in a 6-spice mix and roasted in the oven. They are full of flavour or so more-ish.

Steps:
- Preheat oven to 450F/230C. Bring a pot of water to boil. Chop potatoes into wedges. Place in a steamer basket or large colander and set over pot of boiling water. Cover and steam for 3-5 minutes, or until slightly tender, but not cooked.
- In a bowl make your 6-spice mix: add nutritional yeast, garlic powder, thyme, cinnamon, paprika, and sea salt. Mix to combine. Transfer lightly-steamed potatoes to a large mixing bowl and sprinkle with 6-spice mix. Toss gently until all the potatoes are covered in spice.
- Line a baking tray with parchment paper and arrange potatoes in an even layer. Be sure not to overcrowd potatoes (or they won't get as crispy). You may have to use two baking trays.
- Bake in the oven for 15 minutes, then flip wedges and continue baking for another 10-15 minutes, or until crispy and golden.

These potato wedges taste awesome!! They have just the right amount of spice to be hot, but not overwhelmingly hot. I like that they are baked and not deep fried so it cuts out a lot of the fat, they are super simple to make, and taste great.

- Preheat oven to 425 degrees.
- Combine potatoes and oil in a large bowl or plastic bag, tossing well to coat.
- Combine salt, garlic powder, and red pepper in a small bowl.
- Sprinkle salt mixture over potatoes, tossing well to coat.
- Arrange potatoes in a single layer on 2 baking sheets coated with cooking spray.
- Bake at 425 degrees for 25 minutes. Turn potato wedges over, and rotate pans; baking an additional 20 minutes or until golden brown.

- Preheat the oven to 200C/392F.Wash and scrub the potatoes. Cut each potato into wedges. Cut the potato in half lengthways. Place the flat side down then cut each half in half again then cut the quarters in half. You should have 8 wedges per potato.
- Put the wedges in a large mixing bowl, cover with cold water then leave to soak for at least 30 minutes.After 30 minutes, drain the potato wedges using a colander. Run the cold water tap over the wedges to remove starch. Then dry completely with a clean tea towel. Return the wedges to a clean and dry mixing bowl.

- First, fill a large bowl or pot with enough hot water and cut the potatoes into potato wedges. I cut them relatively thin, so they do not need so much time in the oven. Now leave the potato wedges in the hot water for about 20 min.
- You can preheat the oven to 400 °F (200 °C). After the 20 minutes you can sieve the potatoes and dry with a tea cloth.
