3-INGREDIENT DARK CHOCOLATE PEPPERMINT BARK
Make this impressive but easy bark for a holiday gathering, gift-giving, or festive snacking.

Steps:
- Line a baking sheet with parchment. Bring a double boiler or a heatproof bowl set over a small pot of water to a low simmer. Place chocolate in bowl and gently stir until completely melted. Remove from heat and stir in peppermint extract.
- Pour chocolate mixture onto prepared baking sheet and spread evenly with a spatula or wooden spoon. Immediately sprinkle with crushed candy canes and press lightly to adhere.
- Freeze until hardened, about 5 minutes. Break into pieces and serve.

- Bark can be made up to 7 days ahead. Wrap tightly and keep chilled.
MILK CHOCOLATE PEPPERMINT BARK
This peppermint bark has a delicious milk chocolate layer on the bottom with white chocolate and bits of candy canes on top.

- Line a 12x18 inch jelly roll pan with aluminum foil.
- Melt the milk chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 5 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Stir in the peppermint extract. Spread the chocolate evenly in the prepared pan; chill until set, about 30 minutes.
- Meanwhile, melt the white chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 5 minutes. Stir in 1/4 cup of the crushed candy canes. Spread the white chocolate mixture evenly over the milk chocolate. Sprinkle the remaining candy cane pieces evenly over the white chocolate layer. Chill until set, about 1 hour. Break into small pieces to serve.

Place all, but about 3/4 cup of chocolate chips in a [heatproof bowl|http://amzn.to/2Ak9ddF] and set the bowl over a pot with simmering water (or use a double boiler) until melted. Remove the bowl from the heat and add 1/3 of the remaining chocolate chips to the hot chocolate, and whisk until the chocolate chips are melted. Repeat this two more times with the remaining chocolate until all of the chocolate is melted. If your chocolate isn’t melting, you can place the bowl back over the hot water for about 10 seconds at a time. Whisk in the peppermint essential oil and the pour the chocolate into the prepared baking dish.
- Let the chocolate sit for 10 minutes at room temperature and then place it in the fridge for about 20 minutes.
- Meanwhile, place the cocoa butter in a [heatproof bowl|http://amzn.to/2Ak9ddF] and set the bowl over a pot of simmering water (or use a double boiler) until melted. Remove from the heat and whisk in the cashew butter, maple syrup, vanilla and peppermint oil. Let the mixture sit for 20 minutes to cool.
- Remove the baking dish from the refrigerator and pour the white chocolate mixture over top of the dark chocolate. Place back in the refrigerator for 20 minutes, then remove and sprinkle the crushed candy canes overtop, gently pressing them into the white chocolate. Refrigerate for another hour. Cut into squares and serve.

- To crush the candies—Unwrap completely (don't forget!) and place in your food processor. Pulse until broken up into small pieces, but don't go so far that they turn into dust! Alternately, place in a sealed plastic bag and use a rolling pin or kitchen mallet to break up the candies (place the bag in a folded kitchen towel to keep bag from breaking and from damaging your countertop!). Set aside. (I do a whole bag/box at a time and save the rest of the peppermint for other recipes!)
- Place your dark chocolate in a microwave safe bowl and microwave in 30 second increments until mostly melted. Do not overcook.
- Add 1 teaspoon of coconut oil and ½ teaspoon of peppermint extract to the chocolate and stir it in completely.
