Steps:
- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.
DAD'S PERFECT PASTA SAUCE
This recipe reminds me of my dad. He was a great cook and would make a HUGE batch of this sauce and use it in everything. It does take a little time, but you will understand why once you have had it. Great for using up tomatoes at the end of the growing season, for canning or freezing. Use on lasagna, skettie (as my dad...

- 2. From here you can do as you wish with it. If storing product, let cool completely before transferring to a container to freeze or refrigerate.
DAD'S SPAGHETTI SAUCE WITH COFFEE
Savory sauce with coffee. He would often smoke Italian sausage, and put it in in the last hour. Make plenty ahead of time, gets richer after a day or two.

Stir in the green bell pepper, and cook until the pepper begins to become tender, about 5 more minutes. Set the vegetables aside.
- Place 2 tablespoons of olive oil into a large saucepan over medium heat, and cook and stir the ground beef until the meat is no longer pink, about 10 minutes. Break the meat up into crumbles as it cooks. Mix in the mushrooms, spaghetti sauce, tomato sauce, tomato paste (if you prefer a thicker sauce), and vegetables. Bring the sauce to a boil, and reduce heat to a simmer. Cook, stirring occasionally, until the flavors have blended, about 30 minutes.
- Mix the coffee granules into the hot water, and pour into the sauce; simmer for 30 more minutes.

CREAMY GARLIC PASTA
This is a great fast comfort food dish that my dad got a long time ago out of some gourmet magazine and has given to me. It's simple and cheap, and definitely for garlic lovers! Be prepared to sweat garlic in the gym the next day.

Steps:
- Press all of the garlic with a garlic press.
- Start to heat the water for cooking the spaghetti now. Don't forget the salt!
- Heat the garlic and olive oil on very low in a frying pan for about 10-15 minutes. You know it's ready when other people can smell it from everywhere within your dwelling. DO NOT LET THE GARLIC BROWN. If it starts to sizzle, add some olive oil to cool it down.
- Meanwhile add the spaghetti to the water if it's boiling. Cook to al dente.
- Add the heavy cream to the garlic mixture and turn up the heat to medium. Stir occasionally until the sauce is consistent throughout.
- Add half a handful of the parsley to the sauce and cook for another two minutes.
- Combine the cooked pasta, sauce and parmesan cheese. Stir well and serve!
- Use salt, pepper, parmesan and more parsley for garnish.
