Bacon Cheeseburger Casserole is a hearty full-of-flavor dish the whole family will love! I take everything you love about a cheeseburger and give it a keto spin!

1 pound Bacon, chopped into 1/2 inch pieces
1 pound Ground beef
1 teaspoon Montreal Steak Seasoning
4 Eggs, beaten
1 cup Heavy cream
2 cups Shredded Cheddar Cheese
1/4 cup White vinegar
1/4 cup Dill Pickle Relish
1/4 cup Granular Sweetener (Click here to see my favorite on Amazon)
1/4 cup Minced white onion
1/2 cup Sugar-free ketchup

Steps:

  • Preheat the oven to 400F and spray the inside of a 9x13 casserole dish with cooking spray.
  • In a large skillet over medium heat, cook the bacon until crisp. Remove from the skillet with a slotted spoon and drain on paper towels. In the same skillet, cook and crumble the ground beef with the montreal steak seasoning.
  • In a large mixing bowl, combine all of the ingredients and then pour into the casserole dish.
  • Place into already preheated oven and bake for 30 minutes, or until cooked through. Serve.

Keto Bacon Cheeseburger Casserole is a quick-prep dinner that I love to make ahead, freeze, and reheat for busy days or meal portioning. Made with inexpensive ground beef, eggs, cheese, and a sauce that tastes exactly like a cheeseburger, it's a convenient burger without the bun!

2 lbs. Ground Beef (preferably grass fed)
1 small Onion, chopped
1 Tbsp. Garlic
8 Eggs
1/4 cup Heavy Cream
Salt
Pepper
4 slices Bacon, cooked and crumbled
1/2 cup Shredded Cheddar
1/4 cup Paleo Ketchup
2 Tbsp. Mustard
2 oz. Cream Cheese
1 Tbsp. Worcestershire Sauce

Steps:

  • Brown and strain your ground beef in a large skillet or cast iron pan.
  • Brown the onions for 2-3 minutes until translucent.
  • Return the ground beef to the skillet with the onions, stir in ketchup, mustard, cream cheese, salt, pepper, garlic, and Worcestershire sauce.
  • Place the ground beef mixture in the bottom of a casserole dish. Sprinkle cooked and crumbled bacon on top.
  • Next, whisk together the eggs, heavy cream, and a bit of salt and pepper.
  • Pour over the ground beef and bacon and sprinkle with shredded cheddar.
  • Bake at 350 for 20 minutes, cut into 8 pieces, and serve.

2 cloves garlic, minced
½ teaspoon onion powder
1 pound cooked bacon, cut into pieces
8 eggs
1 cup heavy whipping cream
½ teaspoon salt
¼ teaspoon ground black pepper
1 (12 ounce) package shredded Cheddar cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef with garlic and onion powder until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Spread beef onto the bottom of a 9x13-inch casserole pan. Stir in bacon pieces.
  • Whisk eggs, heavy cream, salt, and pepper in a medium bowl until well combined. Stir in 8 ounces Cheddar cheese.
  • Pour egg mixture over the beef and bacon. Top with the remaining 4 ounces cheese.
  • Bake in the preheated oven until golden brown on top, 30 to 35 minutes.
