MICHELLE'S DAD'S PARTY MEATBALLS
I got this recipe at my wedding shower and it is a great hit. DH isn't allowed to bring anything else to his potlucks at work and everyone looks for them at church potlucks too! Really easy, but really good! We prefer all beef meatballs, but that is just personal preference. Pepper jelly is good if you like a bit spicy. I often use all the little bits of jelly left in the fridge to equal 12oz. DH likes to use apricot jelly the best. If you have any leftover, they are great over noodles.

Steps:
- Put meatballs into crockpot and cover with barbecue sauce and jelly.
- Cook on high for 1-2 hours.
- Stir meatballs and top with drained pineapple. Cook on low for 4-6 hours longer before serving.

MY DAD'S FAMOUS MEATBALLS
I grew up on these meatballs. My dad use to make them all the time and now I do for my family and friends and everyone loves them. We make a lot so we can have spaghetti one night and the meatball subs the next! To be honest I made the measurements as best I could but it goes by your own judgment. Once the eggs and bread crumbs are mixed you just shake the spices over the meat to cover evenly.

Steps:
- Place the ground beef ( 7% fat is best ) in a large mixing bowl.
- Preheat oven to 375°F.
- Then place eggs and bread crumbs in and mix well with your hands.
- Then put in all spices. The best thing to do is sprinkle them over the mixture evenly. I made the measurements the best I could, but I have never really measured before. I only went by my own judgment.
- Using a broiling pan so that the grease drips down inside of it, roll your meatballs according to size.
- Bake for about 20 minutes, turning the meatballs half way through.

DAD'S SWEDISH MEATBALLS
My father used to make these tender meatballs every year for Christmas when I was a kid. Now I carry on the tradition, and everyone still loves them.

- In a large bowl, combine the first seven ingredients. Crumble beef and pork over mixture and mix well. Shape into 1-1/2-in. balls. In a large skillet, cook meatballs in butter in batches until a thermometer reads 160°. Remove and keep warm., In a small bowl, combine the sauce ingredients until blended. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with meatballs.

THE BEST MEATBALLS
I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

- Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
- Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
- Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

- Pre heat Deep fryer to 375 degrees. Put the mixed flour and cornmeal (dry) into a meatloaf pan. In a small food processor, blend Jalapeno, pickle wedges and bell pepper until they resemble relish. Mix all together thoroughly in a large bowl.
- Roll mixture into 1oz balls and roll balls in dry flour/cornmeal mix until completely coated. Put in fry basket (sides NOT touching), deep fry for 5 minutes.
- The dry coating keeps the juices sealed inside and makes these meatballs a delightful snack or appetizer.

- Meatballs
- Cook millet in a dry medium skillet over medium heat, stirring occasionally, until fragrant and lightly toasted, about 3 minutes. Transfer to a small bowl and let cool.
- Meanwhile, mix beef, garlic, coriander, pepper, and 1 1/2 tsp. salt in a medium bowl with your hands just to combine; be careful not to overwork.
- Working one at a time, roll meat mixture loosely between your palms into 1 3/4" balls (you should have about 18) and place on a rimmed baking sheet. Roll each ball in toasted millet, pressing and packing firmly into meat with your palms. Repeat process as needed until completely coated. Chill meatballs at least 20 minutes and up to 2 hours (this will help the millet adhere during frying).
- Sauce and assembly:
- Pour oil into a large heavy pot fitted with a deep-fry thermometer to come 1 1/2" up sides; heat over medium until thermometer hits 350°F.
- Meanwhile, combine tahini and garlic in a medium bowl. Gradually add 6 Tbsp. water, then lemon juice, whisking constantly until sauce is smooth and pourable. Season with salt.
- Using a slotted spoon, gently lower meatballs into oil and fry undisturbed 2 1/2 minutes (millet will be light golden). Transfer to a baking sheet lined with paper towels; season lightly with salt. Serve meatballs with tahini sauce.
